I've changed my Nana's original Southern carrot slaw recipe to be a little healthier, but it's still quick, easy, and delicious! Sometimes, instead of grating my carrots, after I peel them, I continue to use the peeler to make long strands.

5 large carrots, peeled and grated
½ cup raisins
¼ cup sweetened flake coconut
1 (20 ounce) can pineapple tidbits, drained
½ cup miniature marshmallows
½ cup fat-free plain yogurt
ground cinnamon to taste

Steps:

  • Mix the carrots, raisins, coconut, pineapple tidbits, mini marshmallows, yogurt, and cinnamon in a salad bowl, and refrigerate for at least 1 hour to blend the flavors. Serve cold.

1/3 cup orange juice
2 tablespoons red wine vinegar
2 tablespoons canola oil or 2 tablespoons olive oil
3/4 teaspoon kosher salt
1/4 teaspoon cumin
1/4 teaspoon fresh ground black pepper
8 cups carrots, julienned cut
3/4 cup golden raisin
2 scallions, thinly sliced
1/3 cup fresh parsley, chopped (flat leaf)

Steps:

  • Whisk together orange juice,vinegar,oil,salt,cumin,and pepper in a small bowl to make dressing.
  • In a large bowl combine carrots,raisens,scallions,and parsley.Add dressing, toss well. let sit at room temperature tossing occasionally for at least 30 minutes befor serving.
  • Enjoy.
