2 tablespoons olive oil
1 tablespoon butter
1 onion (diced)
1 teaspoon minced garlic
1/2 pound (225g) cooked chicken or turkey, diced
1/2 pound (225g) cooked pulled pork
1 1/2 cups (270g) frozen lima beans (or butter beans)
1 cup (225g) sweet corn kernels (fresh or frozen)
1 2/3 cups (380ml) chicken broth
14 oz (400g) canned diced tomatoes
2/3 cup (160ml) ketchup (or tomato sauce)
1/2 cup (125ml) BBQ Sauce
1 tablespoon Franks hot sauce (optional)
Salt
Pepper

Steps:

  • Heat oil and sauté onion in a dutch oven until soft.
  • Add in garlic and stir for 30 seconds.
  • Dump in the chicken or turkey, shredded pork, butterbeans/lima beans, sweet corn kernels, broth, diced tomatoes, ketchup, BBQ sauce, hot sauce (if using), salt, and pepper.
  • Bring to a boil and then simmer for 35 - 40 minutes, slightly uncovered.
  • Adjust seasonings as needed and serve.

1 pound boneless, skinless chicken thighs, cut into large pieces
1 pound boneless pork chops, cut into large pieces
1 (28 ounce) can crushed tomatoes
1 (15 ounce) package frozen corn
1 (15 ounce) package frozen lima beans
1 cup hickory-flavored barbecue sauce
1 cup diced onion
1 clove garlic, minced
1 teaspoon kosher salt
½ teaspoon ground black pepper
1 (32 ounce) container chicken stock

Steps:

  • Combine chicken, pork, tomatoes, corn, lima beans, barbecue sauce, onion, garlic, salt, and pepper in a large, resealable freezer bag. Seal the bag and mix the contents until well combined. Freeze for up to one month.
  • When ready to cook, remove bag from the freezer and allow contents to partially thaw until they can be broken apart, about 1 hour.
  • Empty the bag into a Dutch oven and add chicken stock; bring to a boil. Reduce heat to a low simmer and cook, uncovered, until the stew has thickened slightly and the meat shreds easily with a fork, about 1 1/2 hours.
  • Remove meat and shred with a fork. Return meat to the pot and serve immediately or keep warm until ready to serve.

1 (3 pound) boneless beef chuck roast
1 (16 ounce) jar whole pepperoncini peppers
1 (.6 ounce) package dry Italian-style salad dressing mix
2 tablespoons olive oil

Steps:

  • Cut chuck roast into 5 pieces and place in a 1-gallon, resealable freezer bag.
  • Drain pepperoncinis and reserve 1/4 cup of the liquid. Add peppers to the freezer bag.
  • Whisk reserved liquid with Italian dressing mix and olive oil. Pour mixture over the beef and peppers. Tightly seal the bag and mix the contents until well combined. Lay flat in the freezer and freeze for up to one month.
  • When ready to cook, remove bag from the freezer and allow contents to partially thaw until they can be broken apart, about 1 hour.
