Simple yet delicious biscotti. Coffee and chocolate - what a wonderful combination. Tasty suggestions include adding 1/3 cup toasted almond slivers or 1/3 cup chocolate morsels.

¾ cup granulated sugar
½ cup lightly salted butter, softened
2 large eggs
2 cups all-purpose flour
3 tablespoons finely ground coffee
3 tablespoons cocoa powder
1 ½ teaspoons baking powder

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Lightly oil a baking sheet.
  • Combine sugar and butter in a large bowl and mix until light and fluffy. Add eggs 1 at a time and blend well.
  • Mix flour, coffee, cocoa powder, and baking powder in a bowl and whisk to blend. Slowly add flour mixture to butter mixture and stir until dough is blended.
  • Lightly oil a large square of aluminum foil. Place dough on top and use foil to roll into a log about 12 inches long. Open the foil and slip dough log onto the prepared baking sheet. Gently flatten log to about 1 1/2 inches in height.
  • Bake in the preheated oven for 25 minutes. Remove and let cool 10 minutes, leaving oven on. Slice log into 12 biscotti using a serrated knife. Stand biscotti upright on the baking sheet, leaving 1/2 inch space between each.
  • Return to the oven and bake 12 minutes more. Remove and let cool completely, about 1 hour. Store biscotti in an airtight container.

Easy biscotti image

Make these easy biscotti to serve with coffee, or dip into chocolate and present in a tin to give to family and friends at Christmas

300g plain flour
100g caster sugar
50g light brown soft sugar
1½ tsp baking powder
80g vegetable oil
1 large egg
2 tsp vanilla extract
milk or dark chocolate , melted, to decorate (optional)

Steps:

  • Heat the oven to 180C/160C fan/gas 4, and line a baking tray with baking parchment. Put the flour, sugars, baking powder and a large pinch of salt in a large bowl and stir together.
  • In a separate bowl, whisk together the oil, egg, vanilla and 3 tbsp hot water. Gradually mix the wet ingredients into the dry until the mixture comes together into a dough. Gently knead the dough until smooth - it will be quite dry, so add another 1 tbsp water if it's too difficult to knead after a few minutes. Divide the dough into two equal pieces, shaping each into a 25 x 8cm log. Put the logs on the prepared baking tray and bake for 25-30 mins. Remove from the oven and leave to cool on the tray for around 15 mins.
  • Using a sharp knife, cut the slightly cooled logs into 1-2cm-thick slices crosswise. Return the biscotti to the lined baking tray and bake for 15-20 mins more (the oven should still be at 180C/160C fan/gas 4), turning the tray around halfway through. Leave to cool slightly on the tray, then transfer the biscotti to a wire rack and leave to cool completely. If you like, dip one end of each biscotti into some melted chocolate, then leave to set on a baking tray lined with baking parchment. Will keep in an airtight container for up to five days.

I found this recipe on the web about 5 years ago and can't remember where I found it. I wish I could so that they received the credit. I am a biscotti nut and this was the first recipe (and only) that I used. The results are fabulous and they are so easy to make even though they are triple-baked. I did change the ingredients just a little. Once you eat these you will never go back to store-bought again. I like them best dipped in a cup of hot tea.

3/4 cup toasted almond (slivered works best)
1/4 lb butter
3/4 cup sugar
2 eggs
2 1/4 cups flour
1 1/2 teaspoons baking powder
1/4 teaspoon salt
1 teaspoon almond extract
1 orange, zest of (make sure it is fresh)

Steps:

  • Preheat oven to 350.
  • Cream butter and sugar.
  • Add Eggs.
  • Mix until smooth.
  • Add orange zest and almond extract.
  • Continue mixing until well blended.
  • Sift in flour, baking powder and salt.
  • Stir in almonds.
  • On floured board, divide dough in half and using your hands roll and form each half into a long roll (approx 1 1/2 diameter by 10 inches long).
  • Place rolls lengthwise on a cookie sheet approx 2 inches apart.
  • Bake rolls at 350 for about 20- 25 minutes.
  • Take rolls out of oven and cool for 5 minutes (leaving them on the cookie sheet).
  • Using a sharp knife slice across each roll diagonally into 1/2 inch thick slices (I usually make the slices about 3 inches long).
  • Lay the slices flat on the cookie sheet, then bake for 8 minutes.
  • Turn slices over and bake for an additional 8-10 minutes until slightly golden.
  • Remove and cool biscottis on a rack.
  • Store in an airtight container once they are cooled.

Number Of Ingredients 6

1 (18 ounce) box cake mix, your choice of flavor avoid those with pudding in the mix
1 cup all-purpose flour
4 large eggs, room temperature
1/2 cup margarine, melted
2 teaspoons vanilla extract, substitute with whatever suits the cake mix flavour
3/4 cup nuts or 3/4 cup chocolate piece

Steps:

  • Preheat the oven to 350F degrees.
  • Pour the cake mix into a mixing bowl. Stir in sifted all purpose flour.
  • Make a well in the centre and add the eggs, margarine and vanilla extract.
  • With an electric beater mix on medium speed for 2 to 3 minutes until the dough does not stick to the sides of the mixing bowl. It will look and feel like play dough!
  • On a lightly floured board, divide dough into two halves.
  • Roll each half into a log about 1" in diameter.
  • Roll each log gently to the edge of the board and then continue rolling it onto a lightly sprayed 11" x 15" baking sheet.
  • Flatten the top of each cookie log until it is about 3" wide.
  • Bake for 20 minutes.
  • Remove baking sheet from the oven and let stand for 10 minutes.
  • Reduce oven temperature to 325 and do not turn off.
  • Gently slide one cookie log onto the board that you rolled out the dough on.
  • Using a serrated knife or better still an electric carving knife, slice each log across the width into 3/4" slices.
  • Place cookies cut side down back onto the baking sheet and return them to the oven for another 10 minutes.
  • Remove cookies to cooling rack to cool completely.
  • Store cooled cookies in an airtight container or freeze.

  • PECAN BISCOTTI: butter pecan cake mix - chopped pecans - maple extract.
  • APRICOT BISCOTTI: golden cake mix - chopped dried apricots - toasted slivered almonds - almond extract.

1 (18.25 ounce) package yellow cake mix
¾ cup vegetable oil
5 eggs
2 tablespoons anise seed
6 tablespoons anise extract
1 cup chopped almonds
⅓ cup confectioners' sugar for decoration

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Grease and flour a 10x15 inch jellyroll pan.
  • In a medium bowl, stir together the cake mix, oil, eggs, anise seeds, almonds, and anise extract. Mix well after each addition. Pour into the prepared pan.
  • Bake for 20 to 30 minutes in the preheated oven, until a toothpick comes out clean.
  • Cut down the middle of the pan, then cut each half into 1/2 inch slices. Place slices on their side onto the jellyroll pan and return to the oven for 8 to 10 minutes, until toasted. Cool and dust with confectioners' sugar.

3 egg whites

Steps:

  • In a large bowl, combine dry ingredients; mix well.
  • In a small bowl, whisk egg, egg whites and extract. Add to brownie mixture stir until combined.
  • Divide dough into thirds.
  • On a greased baking sheet using greased hands, shape each portion of dough into a 7-inch x 3-1/2-inch rectangle.
  • Bake at 350º for 24 minutes. Remove from oven; cool on baking sheet for 5 minutes.

3/4 c almond, finely chpd.
6 oz semi sweet or dark chocolate chips

Steps:

  • 1. FIRST IN FOOD PROCESSOR CHOP ALMONDS...THEN FINELY CHOP OTHER HALF OF ALMONDS. PUT IN BOWL N SET ASIDE. LINE COOKIE SHEET WITH PARCHMENT PAPER.
  • 2. IN A BOWL BEAT TOGETHER THE OIL, EGGS, SUGARS N ALMOND EXTRACT. COMBINE THE FLOUR N BAKING POWDER THEN STIR INTO EGG MIXTURE (I USED MIXER AT BEGINN N FINISHED MIXING BY HAND) FINALLY ADD ALMONDS N CONTINUE TO INCORPORATE. 1 cup butter, softened (no substitutes)
1 cup sugar
2 eggs
1 1/2 teaspoons vanilla extract
1/2 cup sour cream
3 1/2 cups all-purpose flour
1 1/2 teaspoons baking powder
1 teaspoon baking soda

Steps:

  • Cream butter and sugar together.
  • Beat each egg in well one at a time.
  • Add sour cream and vanilla.
  • Combine dry ingredients in a seperate bowl mix well and add to creamed mixture.
  • Mix until a dough is formed.
  • Turn out onto floured surface, lightly knead and divide into 3 loaves 8-in. x 2-1/2-in. x 3/4-in.
  • Line two baking sheets with aluminum foil and grease, place loaves onto baking sheets and bake at 350 for 25 minutes or until golden brown.
  • Allow loaves on foil to cool on wire rack for 15 minutes.
  • Once cooled place on a cutting board and slice 3/4 diagonal slices.
  • Place slices cut side down on ungreased baking sheets.
  • Bake at 350 for 8 minutes or until golden; turn and bake an additional 8 minutes.
  • Cool slices on wire rack.
  • Store in an airtight container.

1 (1 lb) box brownie mix
3 cups coarsely chopped nuts (use either walnuts, pecans or almonds)
3 large eggs
2 tablespoons water or 2 tablespoons milk
1 teaspoon almond extract

Steps:

  • Heat oven to 350°F.
  • Grease a 13 x 9-inch baking pan, and line the bottom and sides with foil leaving a 2-inch overhang on the short sides.
  • In a large bowl stir together the brownie mix and nuts.
  • Stir in eggs, water and almond extract until the ingredients are moistened and the batter is stiff.
  • With a spatula spread the batter into the prepared baking pan in an even layer.
  • Bake for about 35 minutes or until the cake is firm to the touch in the center.
  • Using the foil overhang carefully remove the brownie from the pan onto a wire rack, then let cool for 5-6 minutes.
  • Cut the brownie in half lengthwise, scoring the surface with a serrated knife and completing the cutting through with a large sharp knife, then cut crosswise into 3/4-inch thick slices.
  • Place the brownie biscotti cookies cut-side down on a large baking sheet.
  • Bake in a 350°F oven for 23-25 minutes or until crisp.

⅔ cup white sugar
2 eggs
1 teaspoon vanilla extract
2 cups all-purpose flour
2 teaspoons baking powder

1 cup raisins

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a baking sheet.
