¼ cup kosher salt
¼ cup light brown sugar
2 tablespoons garlic powder
2 tablespoons smoked paprika
1 teaspoon ground dried chipotle pepper
1 (4 pound) whole chicken
2 tablespoons salted butter, melted

Steps:

  • Combine salt, brown sugar, garlic powder, paprika, and chipotle pepper in a bowl. Rinse and pat chicken dry. Rub with seasoning blend, placing any excess in the cavity.
  • Allow to rest at room temperature for up to 90 minutes.
  • Preheat the oven to 350 degrees F (175 degrees C).
  • Place chicken in the bottom of a Dutch oven. Pour butter over the chicken. Cover.
  • Bake in the preheated oven until no longer pink at the bone and the juices run clear, 2 to 3 hours. An instant-read thermometer inserted into the thickest part of the thigh, near the bone, should read 165 degrees F (74 degrees C). Remove from the oven and allow to rest, uncovered, for 10 minutes.
  • Carve chicken and spoon over pan drippings before serving.

1 pound skinless, boneless chicken breast, diced
2 medium carrots, diced
2 stalks celery, diced
1 red bell pepper, diced
1 bunch scallions, diced
1 (15 ounce) can diced tomatoes with green chiles, undrained
2 (15 ounce) cans black beans, drained and rinsed
4 tablespoons chili powder
1 tablespoon ground cumin
2 teaspoons granulated garlic
2 teaspoons onion powder
¼ teaspoon hot smoked paprika, or more to taste
salt and ground black pepper to taste
1 (8.5 ounce) package dry corn muffin mix
⅓ cup milk
1 egg

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Heat oil in a Dutch oven over medium heat. Add chicken. Cook, stirring occasionally, until no longer pink inside, 5 to 7 minutes. Add carrots, celery, bell pepper, and scallions and cook until tender, about 5 minutes. Add tomatoes, black beans, chili powder, cumin, garlic, onion powder, paprika, salt, and black pepper. Stir to combine. Cook until heated through, about 5 minutes more.
  • While mixture simmers, combine cornbread mix with milk and egg in a bowl.
  • Remove Dutch oven from heat and spread cornbread batter on top of chicken mixture to form the crust.
  • Place Dutch oven in the preheated oven and bake until cornbread is golden and beginning to brown, 20 to 25 minutes.

EASY BAKED CHICKEN AND RICE IN THE DUTCH OVEN

This is another absolutely delicious and easy recipe for the dutch oven. We got the recipe out of the Lodge "Camp Dutch Oven Cooking 101"-from Backyard to Backwoods. We loved it so much, that not only did we make it while camping last week, we also made it last night outside at home here. It's truly comfort food.

4 or 6 bone-in, skinless chicken thighs
1 c rice (we used brown rice)
1 pkg dry lipton onion soup mix
1 can(s) chicken broth
1 can(s) cream of mushroom soup
1 can(s) water

Steps:

  • 1. Preheat your dutch oven for about 10 minutes. Then spray with cooking spray. Use a 10 inch dutch oven for this recipe. assemble your ingredients
  • 2. Pour the rice on the bottom of the dutch oven. Place the chicken over the rice, then sprinkle the onion soup mix over the chicken. Mix the mushroom soup mix, the broth and about 1 can of water together and mix. Pour this mixture over all. Cover the dutch oven and cook for at least an hour. You might need to cook it longer--the meat fell off the bone-so good!
  • 3. Place 14 coals on the top of the oven and 7 underneath the oven. You might need to have some extra hot coals ready just in case you need them. as you can see, we loved the dinner so much that we devoured the whole thing. (Not too good for a girl on WW, but I just couldn't help myself.)

1 broiler/fryer chicken (2-1/2 to 3 pounds), cut up
3 cups water
1 cup chopped onion
4 celery ribs, sliced

3 cups biscuit/baking mix
3/4 cup plus 2 tablespoons milk

  • Place chicken and water in a Dutch oven. Cover and bring to a boil. Reduce heat to simmer; cook until chicken is tender, about 30 minutes. , Remove chicken from kettle; bone and cube. Return chicken to kettle along with the onion, celery, carrots, celery seed, 1 teaspoon of sage, salt and pepper. Bring to a boil. Reduce heat. Cover and simmer for 45-60 minutes or until the vegetables are tender. , For dumplings, combine the biscuit mix, milk, parsley and remaining sage to form a stiff batter. Drop by tablespoonfuls into the simmering chicken mixture. Cover and simmer for 15 minutes. Serve immediately.

3 serrano peppers
2 cups chicken stock
2 tablespoons oil
1 small yellow onion, diced
½ jar Doña Maria MOLÈ Sauce
1 can Rotel Chillies
1 can chipotle peppers in adobo
4 cloves garlic, minced
salt
pepper
small tortilla
fresh cilantro
queso fresco
pickled red onion

Steps:

  • Roast the serrano peppers until charred- once charred, remove skin and rough chop. Then, season chicken with salt and pepper.
  • In an enameled Dutch oven, heat oil over medium high heat and sear the chicken, 3-4 minutes per side. Remove and set aside on a clean plate.
  • Add diced yellow onion, chopped Serrano, and garlic to pot and lightly caramelize. Then, add ½ jar MOLÈ sauce & 2 cups (480 ml) chicken stock. Stir thoroughly to combine.
  • Return chicken to pot, submerging in sauce. Add more stock if needed.
  • Cover and Place in a preheated oven at 325°F or simmer on a stove for 45 minutes.
  • Remove the pot from the oven. Remove the chicken and let rest.
  • Ladle Sauce and all remaining contents into a blender and pulse until smooth and creamy. Do not liquify.
  • Assemble tacos, topping as desired. Serve.

8 to 10 chicken thighs, bone in or bone out.
2 tablespoons olive oil
2 large onions, wedge sliced 1/4 inch thick
4 to 6 cups of baby carrots
1/2 sliced red bell pepper
2 tablespoons minced garlic
1/2 cup chicken broth
1/4 cup fresh lemon juice
2 tablespoons honey
RUB INGREDIENTS
1 1/2 teaspoons cinnamon
2 teaspoons paprika
2 teaspoons salt
1/2 teaspoon black pepper
1 teaspoon dried ginger
1 teaspoon red pepper flakes
1 teaspoon dried garlic
GARNISH
2 tablespoons finely chopped italian parsley
1/2 cup chopped green onions
1 tablespoon chopped cilantro

Steps:

  • 1. RUB THE THIGHS Trim the thighs of any excess fat. Combine 2 teaspoons salt, 2 teaspoons paprika, 1 1/2 teaspoons cinnamon, 1/2 teaspoon black pepper, 1 teaspoon red pepper flakes, 1 teaspoon dried ginger, and 1 teaspoon dried garlic. Rub into both sides of the chicken. Use all of the rub. In a large dutch oven, fry the chicken pieces in 2 tablespoons olive oil, searing the meat over medium heat until nice and brown, then remove the pieces to a plate and set aside. Don't let the oil smoke!
  • 2. PREPARE THE VEGETABLES Make sure there is at least two tablespoons oil in the dutch oven. Slice the onions into 1/4 inch wedges. Wash and blot the carrots with paper towels, and add the onions and carrots to the dutch oven. Fry over medium heat until the onions start to brown, then add the 4 tablespoons minced garlic and stir, and then add the 1/2 cup chicken broth, 1/4 cup lemon juice and 2 tablespoons honey. Stir. Slice the bell pepper but set it aside.
  • 3. ADD THE FRIED THIGHS Add the chicken thighs, pushing them down into the carrots and onions. Add sliced red bell pepper. Stir, cover, and simmer over low heat until chicken and vegetables are very tender. About 24 minutes to cook boneless thighs, and 40 to 45 minutes to cook bone-in thighs. Garnish immediately with cilantro, parsley and chopped green onions and serve. Enjoy!
  • 4. SERVING SUGGESTIONS Serve with basmati rice cooked with 1 cup of golden raisins, or cooked buttered egg noodles or mashed potatoes. This is also good served with rice pilaf.
  • 5. COOK'S TIP: You can change this up and make it your own. Oven cooking: Bake at 350 to 375 for 30 to 40 minutes depending on your oven

2 small onions, quartered, divided
2 cloves garlic, minced
1 medium orange
1 cup fresh parsley sprigs
1 (4.5 pound) whole chicken

6 small red potatoes, halved
1 (8 ounce) package baby carrots

This is simple, home-style soup. I try to be specific because I know there are people just starting out, so I ask a little patience for that! I love it if someone describes a technique for the kitchen, it helps me too!

1 (3 lb) broiler-fryer chickens
4 large potatoes, cut to bite size pieces
1 (16 ounce) bag baby carrots (use half)
2 stalks celery, cut in 1/4-inch pieces
1 medium white onion, quartered
1/2-1 cup long grain white rice
2 -3 chicken bouillon cubes, crushed
1/2 tablespoon fresh coarse ground black pepper
2 dashes garlic powder, to taste

Steps:

  • Rinse and clean whole chicken, taking out the giblets. You can cook these with the chicken for flavour if you like.
  • Place your chicken into your Dutch oven or a large stock pot. I have "Vintage" Reverware and love it! But you use what you have. A 6 quart size is good.
  • Fill the pot with water to cover the chicken, about 1/4 inch more over the chicken if you have room.
  • Turn you burner on high with your stockpot centered and bring the water to a boil. Then turn the heat down to a slow boil and add the onion, pepper and powdered garlic. This will flavor you chicken.
  • Cook the chicken through, until a fork pierces the main part easily, do not cook it off the bone or you'll have chicken mush, not soup.
  • I set a very large Pyrex bowl in my sink, get out my largest stainless steel colander and place it in the bowl, and pour the whole pot of broth and chicken into the colander. Be careful about the steam so it doesn't scald you!
  • Set the pot back on the stove (You did turn it off for now, right?).
  • Lift the colander out of the bowl, straining the juice through it. Set it on a large plate or cutting board.
  • Carefully pour the broth from the bowl to the stock pot. Turn the heat back on and simmer the broth. Add more water if necessary to bring the level up to about an inch from the rim of you pot. Use less liquid if you want less soup.
  • Add potatoes, celery, carrots, rice and bouillon cubes to your broth at this point. Cover and simmer at a slow boil to continue to cook.
  • On your cutting board: use a fork and knife to pull pieces from the cooked chick, leaving the skin, fat and bones to discard. I don't keep the onion from this either, it's just to flavor the soup. If you like, you can break the leg and thigh bones and add them to the broth so their marrow can continue to flavour the soup. Discard these bones before serving.
  • Cut the chicken meat to sizes you like.
  • Check your vegetables, if they are almost cooked, add your chicken back into the stockpot. Taste your broth and add seasonings and salt to taste. I have people who are sensitive to salt, so I don't cook with it often, but it's on my table.
  • Finish simmering until vegetables are done. Turn off the heat.
  • If you are making biscuits, leave the cover on and bake your biscuits now, while the soup "sets". If your family is like mine, this gives you a good excuse for a "breather" while your biscuits bake, and it sound so "secret recipe-ish".

4 bone-in chicken thighs with skin
1 teaspoon Italian seasoning, or to taste
salt and ground black pepper to taste
1 dash balsamic vinegar
1 pound Italian sausage
1 (8 ounce) package sliced fresh mushrooms
1 (24 ounce) jar spaghetti sauce
1 pound spaghetti
2 cups shredded Italian cheese blend

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Place a rack in the middle of the oven.
  • Heat a 6 1/2 quart Dutch oven on the stove over high heat. Sear chicken thighs, skin-side first, in the hot Dutch oven, flipping over halfway, until browned, 6 minutes. Season with Italian seasoning, salt, and black pepper. Transfer chicken to a plate, skin-side down. Drizzle vinegar on top.
  • Add sausage and mushrooms to the Dutch oven over medium-high heat. Cook until sausage is browned, 3 to 5 minutes, adding a little vinegar if the pan is too dry. Drain and discard grease. Pour spaghetti sauce into the Dutch oven and stir. Return chicken to the Dutch oven, skin-side up, leaving skin exposed above the sauce. Cook until sauce begins to bubble, 3 to 5 minutes.
  • Transfer Dutch oven to the preheated oven and bake 30 minutes.
  • Meanwhile, bring a large pot of lightly salted water to a boil. Cook spaghetti in the boiling water, stirring occasionally, until partially cooked, about 4 minutes. Drain and rinse with cold water to stop the cooking process.

1 T Herbs de Provence

  • Preheat oven to 350°F. Place a roasting rack in a deep cast iron skillet or cast iron Dutch oven (I use a Le Creuset Dutch Oven). Add water Rub a tiny bit of oil on the chicken and place on roasting rack in Dutch oven. Toss carrots, potatoes and onion in a bowl with some oil, then place around the chicken. Sprinkle Herbs de Provence, salt and pepper over chicken and vegetables. Bake the chicken and vegetables, covered, for 3 hours. Remove the pan from the oven and serve.

The result was a tender, VERY flavorful bird that would lend itself to many variations. Lemon/Oregano, Apple/cinammon, Lime/Cilantro.. etc...

4 -5 lbs roasting chickens, rinsed and trimmed of excess fat
2 medium onions, quartered
1 orange, cut into wedges
2 tablespoons canola oil
2 tablespoons soy sauce
1 tablespoon canola oil (for the skin)
1 tablespoon dried basil
1 tablespoon sugar
1 tablespoon salt
1 tablespoon garlic powder
1 teaspoon ground black pepper

Steps:

  • Pre-heat oven to 500 degrees while you're cleaning bird and prepping ingredients.
  • Place a small rack in the bottom of a large dutch oven.
  • Whisk the canola oil and soy sauce in a small bowl, Mix rub seasonings in a bag.
  • Loosen the skin on the chicken with your hands and paint the canola/soy mixture UNDER the skin and in the cavity.
  • Apply dry rub under skin and in cavity, it will stick very well to the soy/oil mix.
  • put two onion quarters and two orange slices in the cavity.
  • Use your hands to rub the last TB of oil all over the bird, Place bird breast side down in the dutch oven, place remaining orange slices& onion quarters around bird.
  • You can toss in the neck and giblets in there too.
  • Put the lid on the dutch oven and bake for 50 mins covered, Remove cover and bake for another 15-20 mins, until internal temp reaches 170 degrees the thickest part of the thigh.
  • Allow to sit, uncovered for 10 mins before serving.
  • The pan drippings make for an outstanding sauce, just deglaze with a bit more orange juice or some white wine, allow to thicken, season, strain and serve.

1 1/2 bell peppers
14 oz tomato puree or crushed tomatoes
4 clove garlic
3 Tbsp unsalted butter
2 Tbsp olive oil
1/2 c flour
1 c chicken broth
1 Tbsp sour cream optional

Steps:

  • 1. Wash chicken. Place chicken in plastic container. Add 1/3 cup paprika, 1 tbs salt, 1 tbs pepper. Cover and let martinate 1-2 hours at room temp.
  • 2. Roughly chop onions and bell peppers into mid-size chunks. Melt 3 tbs butter in dutch oven over medium heat. Add onions, cover and cook for 10 minutes.
  • 3. Uncover, give onions a good stir. Add bell peppers. Give another good stir, cover and let cook for 10 minutes. In the meantime, heat 2 tbs olive oil in pan and brown chicken on both sides.
  • 4. Peel and roughly chop garlic. Add chicken and garlic to dutch oven. Stir, cover and let cook 10 minutes.
  • 5. Add tomato, 1/4 cup paprika, 1 tsp salt and 1 tsp pepper. Stir, cover, and let cook 25 minutes over low - medium heat.
  • 6. After 25 minutes, stir. Taste. Add more salt and paprika if needed. Cover and let cook about 15 more minutes, or until chicken is cooked through.
  • 7. In mixing bowl, whisk thouroughly flour and about 3/4 cup of hot liquid from dutch oven. While whisking, pour in the chicken broth. When no more flour chunks appear, pour it all back into dutch oven.
  • 8. OPTIONAL: Add 1 tablespoon sour cream (or more, if you like more).
  • 9. Turn off heat, cover and let sit for about 30 minutes. Serve over mashed potatoes, egg noodles or rice. Enjoy!

12 (10 inch) flour tortillas
3 tablespoons olive oil
1 yellow onion, large, quartered and thinly sliced
4 garlic cloves, minced
1/2 cup black olives, chopped or sliced
5 cups cooked chicken breasts, shredded
1 teaspoon chili powder
1 teaspoon ground cumin
salt and pepper
2 -10 1/2 ounces cream of chicken soup
1 1/4 cups sour cream
1 (4 ounce) can diced green chilies
3 garlic cloves, minced
1/2 cup bacon, cooked and crumbled
1 1/2 teaspoons chili powder
1 teaspoon cumin
salt & pepper
3 cups colby-monterey jack cheese, shredded
1 green onion, finely chopped

Steps:

  • In a medium sized bowl combine all sauce ing. and mix well.
  • Heat a 12" dutch oven using 16-18 briquettes on bottom until hot.
  • To hot oven add olive oil, onion, garlic and olives.
  • Cook unitl onions are soft.
  • Remove to a large mixing bowl.
  • To mixture add chicken, chili powder, cumin, S & P and 3/4 cup prepared sauce, mix.
  • Wipe dutch oven clean then re-oil generously.
  • Spoon 3/4 c sauce into the bottom of the dutch oven and spread evenly.
  • If camping place tortillas in a sealed bag under the sun to warm slightly until they become soft and flexible.
  • If not just pop in microwave for a few seconds.
  • Spoon 1/2 c of the chicken filling down the center of each tortilla.
  • Fold in the ends and roll up the tortillas.
  • Place seam side down in the dutch oven.
  • Spoon remaining sauce over the top.
  • Top with cheese and green onions.
  • Cover and bake using 10 briquettes on bottom and 16-18 on top for 20 minute.

This is a simple dish: chicken that's a little bit braised and a little bit roasted in a covered Dutch oven. The seasonings - garlic, onions, herbs and lemon - are basic and border on assertive until they cook together, when their aromas intensify and their flavors soften. Putting half the aromatics in the pot with oil and wine, tucking the other half inside the chicken and cooking in this enclosed, steamy environment means that everything that goes into the pot goes into the chicken. When the chicken's cooked through, pour off the pan juices, crush the tender garlic and add sharp mustard and vinegar to make a vinaigrette that's as good over salad greens as over the chicken.

1/4 cup olive oil
1 medium onion (preferably yellow), trimmed, peeled and cut into eighths
1 head garlic, cut crosswise
5 fresh thyme sprigs
5 fresh rosemary sprigs
Fine or coarse sea salt
Freshly ground black pepper
1 whole chicken (about 4 pounds)
1/2 lemon
3/4 cup white wine
2 teaspoons Dijon mustard
2 tablespoons wine vinegar (preferably sherry)
1 teaspoon walnut oil (optional)
3 to 4 handfuls salad greens

Steps:

  • Make the chicken: Heat oven to 450 degrees.
  • Pour 3 tablespoons of the olive oil into a Dutch oven large enough to hold the chicken, then toss in all but 1 piece of the onion. Add the garlic and 4 sprigs each of the thyme and rosemary. Stir to coat, then season generously with salt and pepper.
  • Pat the chicken dry, season the inside with salt and pepper, and tuck in the remaining piece of onion and herb sprigs. Rub the chicken with the remaining 1 tablespoon olive oil and season with salt and pepper. Squeeze the juice from the lemon half over the bird, and then pop the lemon inside it with the herbs and onion. Settle the chicken into the pot, breast side up. Pour in the wine and cover.
  • Roast the chicken for 60 minutes, then check on it: It's done when a thermometer plunged into the thickest part of the thigh has reached 165 degrees. If it's done but doesn't have enough color for you, you can run it under the broiler for a few minutes; if it's not done, remove the lid and continue to roast until done, 15 to 30 minutes more. Transfer the chicken to a platter, cover loosely with a foil tent, and let rest.
  • While the chicken rests, make the vinaigrette: Pour off the pan drippings, measure out 6 tablespoons and return them to the pot. (If your drippings are scant or very dark, you can still use them. Keep any extra drippings for another use.) Hold onto the garlic but discard the onion and herbs from the pot. Place the pot over medium heat, pour in 1/2 cup water, and boil for a couple of minutes, scraping the bottom of the pan to pick up any stuck bits. You should have about 1/3 cup of drippings; if they're very chunky, strain them when you add them to the vinaigrette.
  • Working in a medium bowl, mash 6 to 8 cloves of the soft garlic with the mustard, then whisk in the vinegar. Slowly whisk in the reserved liquid, followed by the walnut oil, if using. Taste for salt and pepper, then pour the vinaigrette into a small pitcher.
  • To serve, carve the chicken, cutting it into quarters or eighths, and arrange on the platter. Pour over a little of the vinaigrette. Dress the salad greens lightly with vinaigrette and serve on the platter or in a shallow bowl. Pass the rest of the sauce at the table.

The short of the story: These are hot wings that fall off the bone. Some people do NOT like it when the wings are "wet" and these are definitely wet and drippy... but man, are they ever delicious! I buy the very large chicken wings for this recipe, the biggest ones I can find. Great for Superbowl Sunday. Enjoy!

12 large chicken wings
12 ounces hot sauce (This is called "wing sauce" at the grocery)
8 tablespoons butter
1 teaspoon black pepper (from a can)
hot pepper sauce (at the table, I like Tapatio or Frank's Redhot brands)
cooking spray

Steps:

  • Preheat your oven to 300-degrees F.
  • Spray the inside of a Dutch oven or roaster with the cooking spray.
  • Cut the wing joints apart and discard the tips or use them to make stock. Put the "peglegs" and wings in the Dutch oven, pour the wing sauce over them, add in the butter and dust all this with the black pepper.
  • Stir, cover, and bake for 3 hours, carefully stirring every 45 minutes -- I use a wooden spoon.
  • Serve the drained wings on a large platter at the end of the three hours and offer additional hot sauce (mostly for color) at the table. Hand out plenty of paper towels -- your guests will need them!

4 cups cooked great northern beans
1 1/2 quarts hot water
2 tablespoons sysco chicken base
4 chicken breasts, cooked & diced
1 (4 ounce) can diced pimentos, with juice
1 1/2 teaspoons ground cumin
2 teaspoons chili powder
1 (4 1/2 ounce) can diced green chilies, with juice
1 white onion, peeled and diced
1 teaspoon celery seed
1 teaspoon ground thyme
1/2 teaspoon salt or 1/2 teaspoon salt substitute

Steps:

  • Put all ingredients in a dutch oven with lid or roaster with lid.
  • Put in the oven on the middle rack.
  • Oven 300*.
  • Cook 3 to 4 hours. Check once or twice to see if there is enough liquid. If it is getting a little too dry, add 1 cup water at a time and stir. Taste. You might want to add a little more salt.
  • Note: If you want hot chili add seeded diced jalapeno peppers, two will do.

I found this Dutch oven chicken recipe on the internet and made it for my sister and her family while she was here. They loved it. You can also cook this in crockpot. Just use a little flour to thicken the sauce.

8 skinless bonless chicken breasts
1 can(s) coke (not diet)
1 1/2 c ketchup
3 clove garlic minced
1 tsp onion powder
2 Tbsp chili powder

Steps:

  • 1. Arrange chicken breasts in an oiled 12" Dutch oven.
  • 2. In a large bowl add remaining ingredients and stir to mix well. Spoon sauce over chicken.
  • 3. Cover oven and bake using 8-10 briquetttes bottom and 14-16 briquettes top for 60-75 minutes or until chicken is cooked through basting with pan juices every 15 minutes.

1 whole chicken (~5lbs)

1 cup dark ale (e.g. Afligem Triple)
2 tbsp crushed juniper berries
4 whole garlic cloves, pressed
1 bay Leaf
1 Diced onion
1-2 cups large Swiss Chard Stems - cut into 1-2 inch pieces

Steps:

  • Pre-heat oven to 250 Add 2tbsp butter to dutch oven and heat over medium-high until almost smoking Season chicken with Salt and Pepper and place breast-side down into dutch oven Cook for 5 minutes to brown Using spoon flip and brown for another 5 minutes Reserve Chicken Add 1 diced onion and Swiss chard stems (1-2 cups) to the pot Sautee until soft Add Dark Ale , Bay leaf, garlic Sautee 1 minute then place Chicken back in pot Sprinkle crushed Juniper berries over chicken and liquid Sprinkle lemon zest over chicken Cover and place in oven, cook for ~90 minutes When ready place dutch oven on stove Take chicken out and place on cutting board to cool Add tbsp cold butter and the pink peppercorns Cook sauce at medium heat until reduced 50% (~5-10 min) Note: you can add corn starch to help thicken Cut chicken into 8 pieces once cooled and put back into thickened sauce Serve and enjoy!
