2 tablespoons butter
1 pound boneless skinless chicken breasts, cut into strips
1 medium onion, chopped
1 large carrot, thinly sliced
2 garlic cloves, minced
1 tablespoon cornstarch
1 can (14-1/2 ounces) chicken broth
2 tablespoons lemon juice
1/4 teaspoon salt
1 cup frozen peas
1-1/2 cups uncooked instant rice

Steps:

  • In a large cast-iron or other heavy skillet, heat butter over medium-high heat; saute chicken, onion, carrot and garlic until chicken is no longer pink, 5-7 minutes., In a small bowl, mix cornstarch, broth, lemon juice and salt until smooth. Gradually add to skillet; bring to a boil. Cook and stir until thickened, 1-2 minutes., Stir in peas; return to a boil. Stir in rice. Remove from heat; let stand, covered, 5 minutes.

1/2 pound boneless skinless chicken breasts, cut into strips
1/4 cup chopped onion
1 medium carrot, thinly sliced
1 garlic clove, minced
1 tablespoon butter
1 teaspoon cornstarch
3/4 cup chicken broth
1 tablespoon lemon juice
1/4 teaspoon salt, optional
3/4 cup uncooked instant rice
1/3 cup frozen peas

Steps:

  • In a skillet, cook the first four ingredients in butter. Combine cornstarch, broth, lemon juice and salt if desired until smooth; add to skillet. Bring to a boil; cook and stir for 2 minutes or until thickened. Stir in rice and peas. Remove from the heat; cover and let stand 5 minutes. Fluff with a fork.

3 tablespoons extra virgin olive oil
2 tablespoons flour
3 boneless skinless chicken breasts
Salt and pepper
Juice & Zest of 1/2 lemon
2 1/2 cups chicken stock
1 inch garlic paste
1 tablespoon butter
1 1/2 cups instant rice
1/2 cup frozen peas

Steps:

  • PREP CHICKEN Dice chicken breasts in to 1 inch pieces Salt and pepper chicken Put flour on a plate an dredge chicken shaking off excess flour. COOK RICE Bring 1 1/2 cups of chicken stock to a boil in a medium sauce pan. Add rice & peas and bring back up to boil. Turn off heat and cover. MEANWHILE COOK CHICKEN Heat olive oil in a large skillet over medium-high heat Add chicken pieces and lemon zest. Cook turning occasionally until chicken is browned. Add remaining 1 cup of chicken stock and garlic stir to combine. Lower heat to medium and cook until bubbly and sauce is thick - about 4-5 minutes. FINISH MEAL Add butter to chicken and sauce mix. Turn off heat. Add lemon juice and stir to combine. Serve chicken and sauce over rice and peas.
