1/2 cup chopped onion
1 tablespoon plus 1 teaspoon olive oil, divided
3 tablespoons minced garlic
2-1/2 cups chicken broth, divided
1/4 cup pitted Greek olives, chopped
3 tablespoons chopped sun-dried tomatoes (not packed in oil)
1 tablespoon quick-cooking tapioca
2 teaspoons grated lemon zest
1 teaspoon dried oregano
6 boneless skinless chicken breast halves (6 ounces each)
1-3/4 cups uncooked couscous
1/2 cup crumbled feta cheese

Steps:

  • In a small skillet, saute onion in 1 tablespoon oil until crisp-tender. Add garlic; cook 1 minute longer. , Transfer to a 5-qt. slow cooker. Stir in 3/4 cup broth, olives, tomatoes, tapioca, lemon zest and oregano. Add chicken. Cover and cook on low for 3-1/2-4 hours or until chicken is tender. If desired, cut chicken into pieces., In a large saucepan, bring remaining oil and broth to a boil. Stir in couscous. Cover and remove from the heat; let stand for 5 minutes or until broth is absorbed. Serve with chicken; sprinkle with feta cheese.

3 tbsp. extra-virgin olive oil
juice of 1 lemon
3 cloves garlic, crushed
1 tsp. dried oregano
450 g chicken thighs
Salt
Freshly ground black pepper
200 g asparagus, ends removed
1 courgette, sliced into half moons
1 lemon, sliced

Steps:

  • In a large bowl, combine 2 tablespoons olive oil, lemon juice, garlic, and oregano. Whisk until combined then add chicken thighs and toss to coat. Cover bowl with cling film and let marinate in the refrigerator for at least 15 minutes and up to 2 hours.
  • When you're ready to cook the chicken, preheat oven to 220°C (200ºC fan). In a large ovenproof pan over medium-high heat, heat remaining tablespoon olive oil. Season both sides of marinated chicken with salt and pepper, then add chicken skin-side down and pour in the remaining marinade.
  • Sear until the skin becomes golden and crispy, about 10 minutes. Flip chicken and add asparagus, courgette and lemons to the pan.
  • Transfer pan to oven and cook until the chicken is cooked through and the vegetables are tender, about 15 minutes.
