I always keep this dry rub in a shaker on my shelf so I have it ready to use in an instant. It's a deliciously different way to prepare barbecued ribs.

2 tablespoons brown sugar
2 tablespoons paprika
2 tablespoons pepper
1 tablespoon chili powder
1-1/2 teaspoons salt
1-1/2 teaspoons crushed red pepper flakes
1 teaspoon garlic powder
6 pounds pork spareribs
6 sheets (40 inches x 18 inches) heavy-duty foil

Steps:

  • In a small bowl, combine the sugar and seasonings. Rub all of it onto both sides of ribs. Make two stacks the three sheets of foil and place half the ribs in the center of each stack. Bring opposite long edges of foil together; fold down several times. Fold the short edges toward the food and crimp tightly to prevent leaks. Refrigerate overnight. Remove from refrigerator 30 minutes before grilling., Prepare grill for indirect heat. Place foil packets over indirect medium heat. Grill, covered, for 1-1/2 hours or until tender, turning foil packets over after 45 minutes. Remove ribs from foil; place over direct heat. Grill, uncovered, for 10-15 minutes or until crisp, turning once.

2 pounds beef short ribs
⅓ cup soy sauce
¾ cup red wine
½ cup olive oil
2 tablespoons all-purpose flour
¼ cup brown sugar
4 cloves garlic, minced
1 pinch curry powder

Steps:

  • Place the ribs in a large pot, and fill with enough water to cover. Bring to a boil, and cook until the meat is no longer pink, about 20 minutes.
  • Meanwhile, preheat the oven to 425 degrees F (220 degrees C). In a medium bowl, stir together the soy sauce, red wine, olive oil, flour, brown sugar, garlic and curry powder.
  • Drain the ribs, and coat generously with the sauce. Arrange them on a baking sheet.
  • Roast for about 30 minutes in the preheated oven, or until fork tender. Pour the remainder of the sauce over the ribs about halfway through.

It is surprising how some items you think would never go together do!! This recipe suited my taste. . . hope it does yours too!!

4 lbs spareribs, cut into serving size pieces (baby back if possible)
6 tablespoons dried onion
1 teaspoon peppercorn
1 tablespoon curry powder (or more if you like)
2 tablespoons butter or 2 tablespoons margarine
1 teaspoon salt
1 (5 ounce) jar applesauce (baby food jar)
2 tablespoons lemon juice

Steps:

  • Combine ribs with 4 Tbs onion and peppercorns in a large pot.
  • Cover with water and simmer for 45 minutes.
  • Meanwhile, slowly cook curry powder in butter for 2 minutes.
  • Add remaining ingredients plus 2 Tbs water.
  • Place ribs in single layer on a grill (10 inches from coal).
  • Brush with curry sauce.
  • Grill turning often and brushing with sauce for 45 minutes or until tender and browned.

ST. LOUIS-STYLE GRILLED RIBS



St. Louis-Style Grilled Ribs image

Curry powder is the secret ingredient in my special barbecue rub. It, along with a handful of other dried spices that I always keep in my pantry, gives such intense flavor to these meaty ribs that you don't even need sauce. They are fall-off-the-bone tender.

2 slabs St. Louis style ribs (5 to 6 pounds each)
1 1/2 cups Dijon mustard
1 cup Miss Brown's Rib Rub, recipe follows
1 cup apple juice
Barbecue sauce, optional
1/3 cup garlic powder
1/3 cup onion powder
1/3 cup smoked paprika
1/3 cup dark brown sugar
2 tablespoons curry powder
2 tablespoons kosher salt
1 tablespoon freshly ground black pepper
2 teaspoons celery seeds
2 teaspoons chili powder
2 teaspoons ground cumin

Steps:

  • Prepare a grill for indirect cooking (with one side lit and the other side unlit) and heat to between 230 and 235 degrees F.
  • Brush the ribs on both sides with the Dijon mustard. Rub both sides with Miss Brown's Rib Rub.
  • Place the ribs on the unlit side of the grill. Close the lid and cook until beginning to brown, about 45 minutes. Uncover and spritz with the apple juice in a spray bottle. Close the lid and cook for 3 more hours. Wrap the ribs tightly with aluminum foil and cook until the ribs begin to become tender, 1 more hour.
  • Unwrap the ribs and cook until very tender, 30 minutes to 1 hour longer. (Brush on sauce if you'd like during last hour of cooking.) Remove the ribs from the grill. Let stand for 5 minutes, then slice and serve.
  • Stir together the garlic and onion powders, smoked paprika, brown sugar, curry powder, salt, pepper, celery seeds, chili powder and cumin in a medium bowl. Store in an airtight container for up to 1 month.

2 teaspoons canola oil
2 lbs beef short ribs, trimmed
1 1/2 teaspoons kosher salt, divided
1/4 teaspoon fresh ground black pepper, divided
1/3 cup minced shallot
3 tablespoons minced garlic
3 tablespoons minced peeled fresh ginger
1/4 cup water
2 tablespoons red curry paste
1/4 cup light coconut milk
1 tablespoon sugar
1 tablespoon fish sauce
1 teaspoon lime zest
1 tablespoon fresh lime juice
4 cups hot cooked basmati rice

Steps:

  • Heat oil in a large nonstick skillet over medium-high heat. Sprinkle ribs with 3/4 t. salt and 1/8 t. pepper. Add half of the ribs to pan; cook 2 minutes on each side or until browned. Place ribs in an electric slow cooker or crock pot. Repeat procedure with remaining ribs.
  • Add shallots, garlic, and ginger to skillet; saute 2 minutes. Stir in 1/4 cup water and curry paste; cook 1 minute. Stir in coconut milk, sugar, and fish sauce. Add coconut milk mixture to cooker. Cover and cook on LOW for 6 hours.
  • Remove ribs from cooker; keep warm. Strain cooking liquid through a colander over a bowl; discard solids. Place a zip-top plastic bag inside a 2-cup glass measure. Pour cooking liquid into bag; let stand 10 minutes (fat will rise to the top). Seal bag; carefully snip off 1 bottom corner of bag. Drain drippings into a small bowl; stopping before fat layer reaches opening; discard fat.
  • Stir in remaining 3/4 t. salt, remaining 1/8 t. pepper, zest, and juice.
  • Shred rib meat with 2 forks; discard bones. Serve sauce over ribs and rice.
