Creamy cucumber salad made with fresh dill, sour cream, and onions! This summer salad is ready in 5 minutes and is perfect for BBQs and picnics!

3 tablespoons red wine vinegar
1 tablespoon chopped fresh dill
1 teaspoon granulated sugar (optional)
¼ teaspoon garlic powder
Salt and pepper
2 large English cucumber (thinly sliced)
¼ red onion (thinly sliced)

Steps:

  • In a medium bowl, mix the sour cream, vinegar, dill sugar, and garlic powder until well combined. Taste and season with salt and pepper.
  • Add the sliced cucumbers and red onions on top of the sour cream dressing and stir to coat.
  • Serve immediately at room temperature or refrigerate for one hour before serving.

4 large cucumbers, peeled and sliced
2 Tablespoons minced yellow onion
16 ounces sour cream
2 teaspoons salt
1/4 cup white vinegar
2 teaspoons dill weed
1/2 teaspoon sugar
Pinch of pepper

  • Place cucumbers and onion in a bowl. In a separate bowl combine sour cream, salt, vinegar, dill weed, sugar and pepper. Mix well. Pour over cucumbers and mix. Cover with plastic wrap and refrigerate for 6 hours or longer. Mix well and serve.

A traditional German favorite that I have loved since I was a child. This recipe is quick, easy, and delicious. Substitute cider vinegar for a different flavor. I prefer to leave the skins on the cucumbers for more texture and flavor, but they can also be peeled prior to slicing if desired. Flavor is best when marinated for several hours before serving.

2 cucumbers
1 red or a sweet onion
1/3 cup white vinegar
1/3 cup sugar
1/3 cup sour cream

Steps:

  • Slice the cucumber thin, layer in a colander and lightly salt with kosher salt and let sit and drain the water out of the cucumbers for about an hour, or up to 4 hours. While they are sitting, make the dressing by placing the vinegar, the sugar, and the sour cream into a small mixing bowl and mix well, let it sit for about an hour so the sugar dissolves. After the cucumbers have sat for at least their hour, rinse them well, and gently squeeze them. You can put them in a salad spinner to get out excess moisture if you want. Add them to a large mixing bowl. Then, as thinly as you can, but not paper thin, slice the onion in rings or strips. Place them into the bowl with the cucumbers. Give the dressing a good stir again, and pour over vegetables, blend-in the dressing, chill for at least 4 hours and serve. Tightly covered this will keep in the refrigerator for up to two days, and is always better 24 hours after it is made.

4 cucumbers (about 2 1/2 pounds), peeled and sliced into 1/4-inch rounds
1 small sweet onion, thinly sliced into rings
Kosher salt
1/2 cup sour cream
1/4 cup chopped fresh dill
2 tablespoons white vinegar
Freshly cracked black pepper

Steps:

  • Put a large colander in a large bowl. Add the cucumbers and onions to the colander, sprinkle with 1 tablespoon salt and toss until the salt is evenly distributed. Let stand at room temperature for at least 1 hour and up to 2 hours.
  • Transfer the cucumbers and onions from the colander to a paper towel-lined baking sheet and pat them dry with another layer of paper towels.

2 tablespoons kosher salt
1/2 cup low-fat sour cream
1 tablespoon white vinegar
