Lemon Herb Chicken with Couscous and Cucumber Salad image

Chicken breasts dressed with lemon and herbs are served with couscous and a bright cucumber feta salad in this weeknight dinner recipe.

2 cups chicken broth
1 teaspoon sea salt, divided
1 (10 ounce) box couscous
½ cup extra-virgin olive oil
2 lemons, juiced
1 tablespoon chopped fresh rosemary leaves
1 teaspoon dried oregano
4 (4 ounce) thinly sliced skinless, boneless chicken breasts
1 pinch sea salt and freshly ground black pepper to taste
1 tablespoon extra-virgin olive oil
1 teaspoon white sugar
2 large vine-ripened tomatoes
1 English cucumber, chopped
¼ red onion, finely chopped
½ cup crumbled feta cheese
⅓ cup chopped pitted Kalamata olives
¼ cup chopped Italian parsley

Steps:

  • Bring chicken broth and 1/2 teaspoon salt to a boil in a saucepan. Stir in couscous. Remove from heat; cover and let stand until broth is absorbed, about 5 minutes. Uncover and fluff with a fork.
  • Whisk 1/2 teaspoon salt, 1/2 cup olive oil, lemon juice, rosemary, and oregano together in a bowl to make dressing.
  • Place chicken breasts in a shallow dish. Drizzle 1/4 cup dressing on top. Season both sides with salt and pepper.
  • Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add chicken breasts; cook until golden brown, about 3 minutes per side. Transfer to a large plate. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).
  • Place 3 tablespoons dressing in a large bowl; stir in sugar. Add tomatoes, cucumber, and red onion; toss to combine. Season with salt and pepper. Add feta cheese and toss again.
  • Drizzle remaining dressing over couscous and fold in olives. Divide couscous among 4 plates. Slice chicken breasts and place on top. Serve tomato salad on the side. Sprinkle parsley over each plate.

Dressing:
3 tablespoons fresh lemon juice
1 tablespoon red wine vinegar
1 teaspoon Dijon mustard
1 teaspoon coarse kosher salt
1/2 teaspoon freshly ground black pepper
3/4 cup extra-virgin olive oil
Salad:
3 pounds medium asparagus, trimmed
4 cups thinly sliced green onions
3 cups 1/4-inch cubes peeled seeded Kirby or English hothouse cucumbers
1 tablespoon chopped fresh Italian parsley
1 tablespoon chopped fresh chervil
1 tablespoon chopped fresh chives
1 tablespoon chopped fresh mint
2 teaspoons chopped fresh tarragon

Steps:

  • For dressing:
  • Whisk first 5 ingredients in small bowl. Gradually whisk in oil.
  • DO AHEAD: Can be made 1 day ahead. Cover and refrigerate. Bring to room temperature and rewhisk beforeusing.
  • For salad:
  • Fill large bowl with lightly salted ice water; stir until salt dissolves. Cook asparagus in large pot of boiling salted water until crisp-tender, about 3 minutes. Drain, reserving 3 cups cooking liquid. Transfer asparagus to bowl of salted ice water to cool. Place green onions in another large bowl; pour hot reserved asparagus cooking liquid over onions and let stand until cool, about 30 minutes. Drain asparagus and green onions well. Transfer onions to clean kitchen towel and squeeze dry. DO AHEAD: Asparagus and onions can be made 1 day ahead. Wrap separately in several layers of paper towels, then enclose in resealable plastic bags and refrigerate.
  • Combine green onions, cucumbers, and herbs in mixing bowl. Add dressing; toss to coat. Season with salt and pepper.
  • Arrange asparagus on platter. Spoon cucumber mixture over and serve.

1 Japanese or cello cucumber, fluted and thinly sliced in 1/8-inch rounds
1 pound sushi grade yellowfin tuna, blue fin or big eye tuna, cut into 1/4-inch dice
Vinaigrette, recipe follows
1/3 cup thinly sliced scallions, white part only
3 Shiso leaves, cut into chiffonade
Coarse salt
Freshly ground white pepper
Herb Salad, recipe follows
Croutons, recipe follows
1/4 cup plus 1 tablespoon grape seed oil or canola oil
3 tablespoons ginger juice (grate 4 ounces ginger and squeeze out the juice)
1 clove garlic, finely minced
5 tablespoons lime juice
1 shallot, finely minced
1/4 teaspoon ground cayenne pepper
1 bunch chervil
1/2 bunch flat-leaf parsley
1/2 bunch cilantro
1 bunch chives
1 small head baby frisee lettuce
1/2 cup micro greens, optional
1 thin baguette
Extra-virgin olive oil

Steps:

  • Place ring mold in the center of a chilled 12-inch dinner plate. Make a circle of overlapping cucumbers around each mold.
  • Put tuna in a mixing bowl and add 8 tablespoons of vinaigrette, scallions, and Shiso. Mix to combine. Season with salt and freshly ground white pepper, to taste. Spoon tartare into mold, pressing lightly. Stand 3 croutons into tuna and top with a little herb salad. Carefully lift ring mold up and off the plate. Serve with extra croutons on the side.
  • Put all ingredients in a medium bowl and whisk to combine. Taste to check acidity, and balance with more oil or lemon juice, as needed. Set aside until ready to use.
  • Wash and dry all of the greens and herbs. Pick the leaves off the chervil, parsley and cilantro and put in a large bowl. Cut chives into 1-inch batons and add to bowl. Pick through frisee and add to bowl with micro greens. Toss gently. Refrigerate until ready to serve, and then toss with 3 tablespoons vinaigrette.
  • Yield: 2 cups herb salad
  • Preheat oven to 300 degrees F.
  • Cut baguette on severe bias to create 1/4-inch elliptical slices. Put bread slices on a baking sheet and lightly toast. Remove from heat and then drizzle with olive oil. Set aside until ready to assemble.
  • Yield: 18 croutons

1 (1/2-lb) cucumber, peeled and chopped (1 1/2 cups)
1 (1/4-lb) tomato, chopped (3/4 cup)
1/4 teaspoon curry powder (preferably Madras)
1/4 teaspoon salt
1 lemon
1 lb assorted small heirloom tomatoes, halved (larger ones quartered)
1/4 cup loosely packed fresh parsley leaves
2 tablespoons thinly sliced fresh basil
1 tablespoon extra-virgin olive oil
2 teaspoons finely chopped fresh chives
1 teaspoon finely chopped fresh lemon balm (optional)
1/4 teaspoon black pepper
1/4 to 1/2 teaspoon sugar (to taste)
1/4 teaspoon salt
6 (5- to 7-oz) mild white-fleshed fish fillets such as flounder, sea bass, or snapper
1 tablespoon extra-virgin olive oil

Steps:

  • Purée cucumber, tomato, curry powder, and salt in a blender until smooth, about 30 seconds.
  • Line a fine-mesh sieve with a dampened paper towel and set over a large glass measure, then transfer cucumber mixture to sieve and let drain until liquid measures 2/3 cup, about 20 minutes.
  • If liquid measures less than 2/3 cup, gently squeeze paper towel over sieve until liquid totals 2/3 cup. Discard solids and transfer liquid to a 2- to 3-quart saucepan.
  • Boil cucumber tomato water until reduced to about 1/3 cup, then remove from heat and cool to room temperature, about 30 minutes.
  • Cut peel, including all white pith, from lemon with a sharp paring knife. Working over a bowl, cut segments free from membranes, letting segments fall into bowl, then chop segments, reserving juice in a cup.
  • Gently toss lemon segments and reserved juice with remaining salad ingredients in a large bowl. Stir in cooled cucumber tomato water.
  • Put oven rack in middle position and preheat oven to 500°F.
  • Rinse fish and pat dry. Brush fillets all over with oil and season with salt and pepper.
  • Bake fillets in 1 layer in a lightly oiled shallow baking pan until just cooked through, 4 to 8 minutes, depending on thickness of fillets.
  • Serve tomato herb salad on top of fish.

1 cup Vegetable broth
3 cup English cucumber, chopped roughly

2 tsp Lemon juice

Garnish
8-oz container Crème fresh or sour cream
¼ cup Water, or as needed
Salad
1 cup Grape or cherry tomatoes, cut in half
¼ cup English cucumber, seeded and finely diced
3 Radishes, julienned
2 tbsp Chives, finely chopped
2 tbsp Parley leaves
2 tbsp Dill, finely chopped
Salt and black pepper to taste
2 tbsp Olive oil
1 tsp White wine vinegar
2 tsp Honey
1 tsp Lemon juice

  • In a food processor or blender place all the "soup" ingredients and puree. Lightly season with salt and pepper and refrigerate for several hours or up to overnight. Strain through a fine mesh sieve and season with salt and pepper. Whisk water into creme fresh, till think enough to drizzle (or no longer clings to the spoon). In a bowl combine tomatoes, cucumber, radishes, chives, parsley, and dill. Season with salt and pepper. In an additional bowl stir together olive oil, white wine vinegar, honey, and lemon juice. Toss together, olive oil mixture and salad. Divide soup in bowls, drizzle soup with crème fresh and place salad into the center of each bowl, and sprinkle with chives.

HERB-BUTTERMILK-MARINATED SALMON WITH CUCUMBER SALAD



Herb-Buttermilk-Marinated Salmon with Cucumber Salad image

1 cup For the salmon 2 cups buttermilk 1/2 cup lightly packed fresh basil leaves, coarsely chopped 1/2 cup lightly packed fresh cilantro leaves, coarsely chopped 1/2 cup thinly sliced scallions (about 6 medium scallions) 1/4 cup white vinegar 2 Tbs. honey 1 Tbs. ground ginger Kosher salt and freshly ground black pepper 2 sides of salmon (3 lb. each), skin and pin bones removed For the cucumber salad: 3 large English cucumbers, cut in half lengthwise, seeded, and sliced crosswise (about 9-1/2 cups) 1 large red onion, cut in half and thinly sliced (about 2 cups) 1 cup pitted Kalamata olives, cut in half 1 cup crumbled feta cheese Kosher salt and freshly ground black pepper

Steps:

  • Marinate and roast the salmon: In a food processor, combine the buttermilk, basil, cilantro, scallions, vinegar, honey, ginger, 1 tsp. salt, and 1/8 tsp. pepper. Process until smooth, about 30 seconds. Set aside 3/4 cup for the salad. Thirty minutes before roasting the salmon, pour the remaining marinade over the salmon in a large rimmed dish and let sit at room temperature. (For the best texture, don't marinate longer than 30 minutes.) While the salmon is marinating, position a rack in the center of the oven and heat the oven to 400°F. Line a large rimmed baking sheet with foil. When ready to roast the salmon, remove it from the marinade and set on the baking sheet. Bake until just firm to the touch and opaque in the center (use a paring knife to peek), 20 to 25 minutes. Remove from the oven and let rest in the pan for 10 minutes. Make the salad: In a medium bowl, mix the cucumbers, onion, olives, cheese, and 1-1/2 tsp. salt. Toss with the reserved buttermilk dressing and season to taste with more salt and pepper. Serve: Use two large spatulas to carefully move the salmon to a platter. Spoon some of the cucumber salad around the salmon and serve the rest in a bowl on the side.
