CUBE STEAK PARMESAN
This is a great Italian style way to prepare beef or venison cube steaks. Double the ingredients for a crowd!

- Preheat the oven to 350 degrees F (175 degrees C). In a shallow dish, stir together the flour, salt and pepper. In a separate bowl, whisk together the eggs and water with a fork. In a third bowl, or shallow dish, mix together the cracker crumbs, 1/3 cup of Parmesan cheese and basil.
- Heat the oil in a large skillet over medium heat. Dredge the cube steaks in the seasoned flour, dip into the egg mixture, and coat with the cracker crumb mixture. Place them in the skillet, and fry just until browned on each side. Arrange steaks in a single layer in a greased casserole dish.
- Bake for 25 minutes in the preheated oven. Meanwhile, in a medium bowl, stir together the tomato sauce, sugar, 1/4 teaspoon of oregano, and garlic powder. Spoon over steaks when the 25 minutes are up. Top each steak with mozzarella cheese and remaining Parmesan cheese; sprinkle remaining oregano over the top. Bake for 5 more minutes, or until the cheese is melted, and the sauce is hot.

OLD FASHIONED BEEF CUBE STEAK WITH TOMATO GRAVY
Old Fashioned Cube Steak with Tomato Gravy is an old-timey dish inspired by Mom's roast beef recipe. I'm also paying homage to my Midwestern roots where hearty meals are a staple. A family favorite served with lots of mashed potatoes.

- Pat dry cube steaks with a paper towel. Sprinkle with salt & pepper on both sides. Dust with flour on both sides.
- Add 2 Tablespoon olive oil to a 12" heavy-bottomed skillet. Bring to heat over medium-high heat.
- Add cube steaks to the skillet, two at a time, and brown. As the meat browns, remove to a plate or to the skillet's inverted lid.
- Once all the meat is browned, reduce skillet heat to medium. Add onion, sliced pepper, crushed red pepper and garlic. Stir and saute for 5 minutes.
- Add stewed tomatoes, bouillon cube, and water OR beef stock, and dried basil. Bring to simmer and cook for 5-10 minutes until tomatoes are soft.
- Return cube steaks to the skillet along with accumulated meat juices. Ladle the tomato/vegetable mixture over the meat. Reduce to slow simmer. Cover with lid. Cook for 30 minutes.
- Remove meat to a platter. (Optional: Mash vegetables and gravy.) Pour tomato gravy over cube steak OR plate individually and ladle tomato gravy over meat.
- Serve with plenty of mashed potatoes and any green vegetable.

- In a shallow bowl, combine the flour, salt and pepper. In another bowl, beat eggs and water. BEEF IN TOMATO SAUCE

- Cut beef into 1 1/2-inch cubes, then rinse in warm water to clean.
- Put beef into a medium sauce pot with 1 tablespoon olive oil. Add salt and pepper, to taste, and bouillon cubes.
- Cover and place pot over low heat. Let it steam for 20 minutes.
- Put 3 tomatoes, 1 red pepper, 1 onion, and 1 garlic clove into a blender and pulse to coarsely chop. Then pour tomato mixture into the pot with the beef and add the remaining 2 tablespoons of olive oil. Cook 15 minutes.
- Stirring it on medium heat, add the remaining 3 tomatoes, cut into wedges, 1 sliced red pepper, 1 sliced onion, and 1 sliced garlic clove. Cook for 15 minutes and it's ready to serve.

- 1. Preheat oven to 350 degrees. In a large bowl combine 2 cans of Hunt's pasta sauce and 2 tablespoons of oregano, basil, garlic powder & Parmesan cheese. Mix well.
- 2. To enhance the flavors, heat in the microwave for about 5 minutes and stir again. Set aside.
- 3. Season your tenderized cube steaks with salt and pepper. Set aside.
- 4. Whisk the eggs and use them for your egg wash.
- 5. Set up to 9x13 cake pans. One with the Panko bread crumbs and the other for your egg wash.
- 6. In a large frying pan, add about an inch of vegetable oil and heat on medium-high.
- 7. Then dredge the steaks in the egg.
- 8. Coat both sides in the Panko crumbs.
- 9. Then fry them until a golden brown on both sides.
- 10. Usually about 6-7 minutes per side.
- 11. As they come out of the pan, sprinkle a generous portion of Parmesan cheese on top of each one. Set aside until all are done.
- 12. Place cooked steaks in a 9x13 glass cake pan and pour a little sauce over each one. Just enough to cover the top of them.
- 13. Add a slice of cheese on top of each.
- 14. Spoon a little more sauce on top.
- 15. Sprinkle with parsley flakes and the rest of the oregano.
- 16. Bake in the oven for 25 minutes or until cheese is melted.
- 17. While the steaks are baking prepare your pasta.
- 18. Put a helping of pasta on a plate. Put steak on top. Add more sauce, if desired. Note: Serve with homemade garlic toast and a nice salad of your choice.
CUBE STEAKS WITH FRESH TOMATO SAUCE

- In a 10 or 12 inch skillet over medium-high heat, in hot salad oil, cook steaks, a few at a time, 2 or 3 minutes on each side or until of desired doneness; place on warm platter and keep warm.
- Chop 3 tomatoes and slice 3.
- Reduce heat to medium; to same skillet add 1/4 cup water, chopped tomatoes, green onions, sugar, salt and basil.
- In cup, blend cornstarch and 1/4 cup cold water until smooth; gradually stir into tomato mixture and cook stirring until thickened.
- Add sliced tomatoes and cook until heated through.
- Spoon tomato mixture over steaks.
