PRESSED CUBAN-STYLE BURGER

1 pound ground chuck
Salt and freshly ground black pepper
1/2 cup best quality mayonnaise
3 cloves roasted garlic, pureed
1/4 cup Dijon mustard
4 hamburger buns
4 slices thinly sliced smoked ham
8 slices thinly sliced Swiss cheese
2 dill pickles, sliced into 1/4-inch thick slices

Steps:

  • Form the meat into 4 (1/4-inch thick) burgers. Season the meat with salt and pepper on both sides and cook in a saute pan over high heat to medium doneness, about 2 to 3 minutes per side.
  • Combine the mayonnaise and roasted garlic in a small bowl and season with salt and pepper, to taste. Spread both sides of each bun with mayonnaise and mustard.
  • Place a slice of cheese on the bottom portion of each bun, place the burger on top of the cheese, then top the burger with a slice of ham then another slice of cheese then the pickle slices. Place the tops of the bun over the pickles and cook on a sandwich press or wrap the burgers in aluminum foil and cook in a hot skillet over high heat with a heavy skillet placed on top of the burger to press the sandwich. Cook until golden brown and cheese has melted.

¾ pound ground beef
¼ pound ground pork
½ cup dry bread crumbs
¼ cup milk
1 egg
1 tablespoon minced onion
1 tablespoon ketchup
2 teaspoons salt
½ teaspoon Pimenton de la Vera (smoked Spanish paprika)
½ teaspoon Worcestershire sauce
¼ teaspoon ground black pepper
½ teaspoon vegetable oil

Steps:

  • Mix the ground beef, ground pork, bread crumbs, milk, egg, onion, ketchup, salt, Pimenton de la Vera, Worcestershire sauce, and pepper together in a large bowl until well combined; divide the mixture into 12 equal ball shapes. Place in refrigerator for 3 hours to allow the flavors to meld.
  • Heat the vegetable oil in a large skillet over medium heat. Cook the meatballs in the skillet, flattening them with the back of a spatula as they cook, about 7 minutes per side for well done. An instant-read thermometer inserted into the center should read 160 degrees F (72 degrees C).

2 teaspoons orange juice or tangerine juice
1/2 teaspoon paprika
1/4 teaspoon ground cumin
1/8 teaspoon garlic powder
1 Grillers® Original
1 very thin slice aged provolone cheese or fontina cheese (1/3 oz)
1 thin slice tomato
1 thin slice red onion
1 thin lengthwise slice dill pickle
1 reduced-calorie hamburger bun, split and toasted

Steps:

  • 1. In small bowl stir together orange juice, paprika, cumin and garlic powder. Brush on both sides of veggie burger. Cook burger according to package directions.

What can I say? I love cuban sammies and love burgers. This was a real treat to cook this summer.

2 lb ground chuck
1/2 c real mayo
1/4 c dijon mustard
8 slice swiss cheese
3 clove roasted smashed garlic
4 slice of your favorite deli ham
dill pickles slices ( they have them just sliced for sammies now )
hamburger buns
salt and pepper to taste

Steps:

  • 1. Divide the ground meat into 4 sections and make 4 patties out of it.
  • 2. You can grill these or fry them. Cook till fully cooked.
  • 3. Mix the mayo, mustard and garlic and salt and pepper in a bowl and set aside.
  • 4. Assemble the burgers. Put the mayo mustard mixture on both the bottom and top half of the buns. Place 1 slice of swiss then place the burger on top of the cheese.Then a slice of ham then another slice of cheese then the pickle slices.
  • 5. If using a grill wrap the burgers in tin foil then place back on the grill. With a heavy pan press the burgers down for 30 seconds. If using a pan just smash them in the pan until the cheese melts.

1 pound Certified Angus Beef ® 80% lean ground beef
3 cups (10-ounces) frozen shredded hash browns
1 cup canola oil for frying
1 1/4 teaspoons salt, divided
1 small onion, finely diced
2 cloves fresh garlic, finely chopped
1 1/4 teaspoons paprika, divided
3/4 teaspoon cumin, divided
1/2 teaspoon black pepper
1/4 cup ketchup
1/4 cup water
2 tablespoons white vinegar
1 tablespoon brown sugar
2 teaspoons hot sauce, divided
1/2 teaspoon garlic powder
3 tablespoons mayonnaise
1/4 teaspoon lime zest
1 teaspoon lime juice
4 slices pepper jack cheese

Steps:

  • Heat oil over high heat in a 12-inch cast iron skillet. Working in two batches, shallow fry hash browns until extremely crisp and dark golden brown like matchsticks (about 5 minutes per batch). Transfer to brown paper or paper towels, season with 1/4-teaspoon salt. Hash browns can be held at room temperature up to four hours.
  • In large mixing bowl, combine ground beef with onion, fresh garlic, 1/2-teaspoon paprika, 1/2-teaspoon cumin, 1-teaspoon salt and 1/2-teaspoon pepper. Mix by hand and form into four equal sized loosely-packed balls. Refrigerate while preparing sauces.
  • In a small mixing bowl combine ketchup, water, vinegar, brown sugar, 1-teaspoon hot sauce, garlic powder, remaining 1-teaspoon paprika and remaining 1/4-teaspoon cumin. Stir thoroughly, refrigerate.
  • In another small mixing bowl combine mayonnaise, lime zest, lime juice and remaining 1 -teaspoon hot sauce. Stir to combine, refrigerate.
  • Once oil in cast iron skillet has cooled enough to handle, pour off excess into a disposable container, wipe skillet clean with a paper towel. Heat cast iron over medium-high heat, place two balls of beef in the skillet. Using a sturdy metal spatula smash to 1/2-inch thick patties. Top each patty with 2-teaspoons of the ketchup-based special sauce. Sear the patties 4 minutes, flip, top with a slice of cheese and sear 2 more minutes. Repeat with remaining balls of beef.
  • Spread bottom buns with mayo-based special sauce, add burgers, and top each with an equal amount of fried potatoes. Drizzle each potato stacked patty with an additional tablespoon of the ketchup-based sauce and add top bun.

Makes 3 sandwiches
Cuban bread- 1 Loaf (very similar to French bread)
6 slices Sweet smoked Deli sliced ham (aka Virginia Ham)
6 oz Smoked pulled pork - (recipe below)
1 1/2 pound Ribeye steak ground
6 slices of Garlic dill pickle sliced long way
Hickory smoked salt to taste
9 thin slices of Swiss cheese
4 oz melted butter for grilling
1/2 teaspoon garlic salt
to taste Fresh ground pepper
455 special sauce recipe
4 tablespoons of Mojo marinade
5 tablespoons of yellow mustard
5 tablespoons of mayo
Ground Ghost pepper - or ground hot pepper of your choice
Stir all sauce ingredients together

  • Preheat oven 500 degrees
  • Fresh ham bone in hock portion 3-5 pounds cups purchased mojo marinade. Using deep dish oven pan place fresh ham and add two cups of purchased Mojo marinade cover and place in 500 degree oven for an hour. Then lower temp to 350 degrees and bake for an additional 3 hours.
  • After that is done, remove the fresh ham place it on your smoker and smoke for 4 hours at 200 degrees using a mixture of apple, hickory and mesquite wood. This will be used to create the pulled pork.
  • Burger recipe
  • Make 3 patties from the ground ribeye steak, and form into half pound patty.
  • Place patties in a smoker for a half hour. Once that is done, grill the patties for 2 minutes each side.
  • Grill deli ham slices 10 seconds on each side
  • Sprinkling garlic salt on dill pickles slices and grill for 15 seconds each side.
  • Stir all ingredients together in a bowl
  • Now it is time to construct the burger. Take the loaf of Cuban bread cut the ends off cut the loaf into three six inch sections like a traditional Cuban sandwich, brush butter on the inside and place on grill for about 30 seconds you want it slightly toasted. Remove from the grill and brush the some of the special sauce on the bottom inside of the bread. Next layer one slice of Swiss cheese to the each sandwich, then layer the grilled patties. Next layer two slices of grilled deli ham , then the grilled pickles, then the pulled pork then drizzle 455 special sauce and two more slices of Swiss cheese, and add the top piece of bread.
  • Mix melted butter and garlic salt , then brush both sides of assemble sandwich. Place the sandwich on the grill, press with heavy spatula or car piston for 30 seconds or until you see the cheese start to melt and turn it over and press it for another 30 seconds. Remove from the grill cut on half diagonally to enjoy your Cuban Sandwich.
