2 leeks (white part only)
1.5 cup zucchinis
1.25 cup potatoes
15 ml Spanish extra virgin olive oil
5.125 cup chicken stock
salt
2 large slices of Serrano ham
black pepper

Steps:

  • Cut the leeks into thin slices. Chop the zucchinis and potatoes coarsely into cubes. Heat the olive oil in a large saucepan and add the leeks. Cook the leeks until they are soft, stirring them gently. Add the chopped zucchinis and potatoes and cook them gently for about 5 minutes. Add stock to make the soup, bring to the boil and simmer without covering for about 15 minutes or until the potato is tender. Blend or process the soup in batches until it is smooth. Season the soup with salt according to taste. Next prepare the crunchy ham strips. Preheat the oven to 190ºC / 375ºF. Lay the ham slices directly on to a baking tray and roast them for 5 minutes until they are crisp. When the ham slices are cool enough to handle, cut them into thin strips. Divide the soup amongst the serving bowls and sprinkle with the crunchy ham strips and some black pepper.

3 medium zucchini ( about 1 pound)
1 tsp salt
1/2 c all purpose flour
1 1/2 c italian bread crumbs
2 eggs
2 Tbsp milk
2 c vegetable oil

Steps:

  • 1. Cut each zucchini in half crosswise than cut each half lengthwise into french fry like strips. Place zucchini in a medium bowl and sprinkle with salt: toss to evenly coat.
  • 2. Place flour and bread crumbs each in a separate dish. In another shallow dish, whisk together the eggs and milk. Coat each zucchini strip in flour then dip in egg mixture and coat completely with bread crumbs: set aside on a platter.
  • 3. In a large skillet, heat oil over medium high heat until hot but not smoking. Fry zucchini strips a few at a time for 3-4 minutes, until golden on all sides, turning frequently. Drain on paper towels and serve immediately.
  • 4. Note; If you cook your zucchini strips in a tabletop deep fryer they come out really crisp and golden !
