1 pound uncooked jumbo shrimp, peeled and deveined, tails left intact
⅓ cup flour
¾ teaspoon salt
½ teaspoon black pepper
3 large eggs large eggs
1 ½ cups Kikkoman Panko Bread Crumbs
1 cup Vegetable oil (for deep frying)

Steps:

  • Beat eggs in a medium bowl until frothy. Mix flour, salt and pepper in another medium bowl. Dredge shrimp in flour, shake off excess. Dip shrimp into eggs, then press shrimp into Panko; turn shrimp over and press into Panko again to coat both sides.
  • Pour enough oil into heavy large pot to reach depth of 2 inches; heat to 350 degrees F. Working in batches, add shrimp to hot oil; deep-fry until cooked through, about 1 minute. Using tongs transfer shrimp to paper towels to drain. Arrange shrimp on platter. If desired, serve with Kikkoman Tonkatsu Sauce for dipping.

1 1/3 cups regular or low-fat mayonnaise
1 1/2 teaspoons fresh lemon juice
2 garlic cloves, pressed
1 teaspoon cayenne pepper
1/2 teaspoon Dijon mustard
Peanut oil (for frying)
1/2 cup yellow cornmeal
1/2 teaspoon salt
1 1/2 pounds uncooked jumbo shrimp, peeled, deveined

Steps:

  • Whisk mayonnaise, lemon juice, garlic, 1/2 teaspoon cayenne and mustard in small bowl to blend. (Can be made 1 day ahead. Cover tightly with plastic wrap; refrigerate.)
  • Pour enough oil into heavy large pot to reach depth of 2 inches; heat to 375°F. Mix cornmeal, salt and 1/2 teaspoon cayenne in medium bowl. Add shrimp to bowl; toss to coat. Working in batches, add shrimp to hot oil and deep-fry until shrimp are golden and opaque in center, about 1 1/2 minutes. Using slotted spoon, transfer shrimp to paper towels to drain.
  • Place aioli in center of platter; surround with shrimp and serve.

I've guessed on cook time here. These are the crunchiest shrimp I've had outside of a restaurant! This makes alot, but if you are going to make these you may as well go all out!! Everyone loves them! These have received so many mixed reviews that I thought maybe I should mention that I deep fry them in a Presto Fry Daddy and not very many at a time. I never said they were easy...and I get better each time I do it. Thanks for giving them so much attention!

2 lbs peeled jumbo shrimp
Crisco shortening, melted in deep fryer (till full by manufacturer standards)
2/3 cup flour
1 1/3 cups cornstarch
1/2 teaspoon salt
1/2 teaspoon baking powder
6 egg whites
2/3 cup water
4 tablespoons vegetable oil
corn flake crumbs

Steps:

  • In a medium bowl, stir flour, cornstarch, salt, baking powder, egg whites, water and oil together with a whisk.
  • Pour out a liberal amount of cornflake crumbs on a dinner plate.
  • Roll each shrimp well into batter mixture and quickly roll in cornflake crumbs.
  • Deep fry shrimp about 7 at a time till golden brown.
  • Drain on paper towels.
  • Serve with cocktail and/or tartar sauce.

The monthly hostess makes a salad and supplies coffe, tea, or a cold drink, as we take turns in each members home. Last month the snack was shrimp. This is my recipe to take for our lunch. I finally get to use my 1955 shrimp...

1 lb jumbo raw shrimp, peerled and deveined, leaving the tails on.
1-1/2 c panko bread crumbs
vegetable oil
3 large eggs
1/3 c lflour
3/4 tsp salt
1/2 tsp black pepper

Steps:

  • 1. In amedium bowl, beat eggs till frothy. Mix in flour,salt,and pepper. Rince shrimp and pat dry with paper towel. Dredge shrimp with flour mixture, shaking off excess. Dip shrimp into beaten eggs . Then coat both sides of shrimp into Panko, pressing Panko into shrimp. Place in refrigerator..at least 1/2 hour to set the breading. Pour enough oil into a large heavy pot to a depth of 2-3 inches,and heat oil to 350 temp.
  • 2. Working in batches, add shrimp to hot oil and deep fry until cooked through, about 1 minute. Remove and drain on paper towels. Arrange shrimp on a serving dish. Serve with your favprite sauce... or use Kikkoman Tonkatsu Sauce for dipping! 7/24/12: I just noticed this morning a shrimp dip on J.A.J.... "Bob's Shrimp Dip" .. that sounds very interesting! Along with 4 plus more on J.A.P... You might like to try for something different.
