Steps:
- To Make White Sauce: Melt butter in a small skillet over medium low heat; stir in flour, then milk. Cook until thickened and season with salt and pepper.
- Spread 1/2 of the browned bread crumbs in the bottom of a 9x13 inch baking dish. Add layers of asparagus and chopped egg, alternately. Pour White Sauce over all and top with remaining bread crumbs.
- Bake in preheated oven for 30 minutes.

- Preheat oven to 425 degrees. In a food processor, process bread until coarse crumbs form. Transfer breadcrumbs to a small bowl. Drizzle with 2 tablespoons oil. Add Parmesan, season with salt and pepper, and stir with a fork to combine.
- Arrange asparagus in a 9-by-13-inch baking dish. Drizzle with 1 tablespoon oil and season with salt and pepper. Top with breadcrumb mixture and bake until breadcrumbs are golden brown and asparagus is tender, 20 minutes. Squeeze lemon juice over asparagus just before serving.

ASPARAGUS AND PARMESAN-EGG CRUMB TOPPING
Steps:
- Pulse the bread in the bowl of a food processor until it becomes fine crumbs. Spray a nonstick skillet with cooking spray and heat pan over medium-high heat until hot. Lower heat to medium, add bread crumbs to the skillet and toast, tossing often, until crumbs are golden brown and toasted, about 5 to 6 minutes. Remove from heat and cool completely.
- Grate egg in the medium-sized holes of a box grater or on a medium microplane grater (used for grating chocolate or cheese). Combine the egg, bread crumbs, parsley, cheese, salt, and pepper in a medium-sized bowl and toss to combine.
- Steam the asparagus until firm, but tender, about 3 to 4 minutes.
- Arrange asparagus on a serving platter and top with Parmesan-Egg Crumb Topping.

- In a large skillet, saute asparagus and onions in 1 tablespoon of butter until crisp-tender, about 8 minutes. Transfer to an ungreased 1-1/2-qt. baking dish. , In a large saucepan, melt 2 tablespoons butter. Stir in flour until smooth; gradually add milk. Bring to a boil; cook and stir for 2 minutes or until thickened. , Reduce heat. Add the cream cheese, salt and pepper; stir until cheese is melted. Pour over vegetables. Sprinkle with cheddar cheese. Melt remaining butter; toss with bread crumbs. Sprinkle over casserole. , Bake, uncovered, at 350° for 35-40 minutes or until heated through.

LUMP CRABMEAT AND ASPARAGUS TAGLIATELLE

- Bring large pot of salted water to a boil. Once boiling, blanch asparagus until crisp-tender, about 2 minutes. With slotted spoon, transfer to a colander. Rinse asparagus under cold water. Drain asparagus well and set aside. Keep the pot of water boiling for the pasta. In a large skillet, heat olive oil over medium-high heat. Add leeks. Cook until leeks are soft, about 3 minutes. Add white wine and cook until reduced by half, about 2 minutes. Reduce heat and add cream and lemon zest. Simmer until the sauce coats the back of a spoon. Add crabmeat and continue to simmer until just heated through. Season with salt and pepper. Remove from heat. Meanwhile, cook pasta in boiling salted water until tender but still firm to bite. Drain pasta. Add the sauce, asparagus, and pasta to the pot and cook over medium heat, tossing, approximately one minute, or until heated through. Serve Immediately.
SALTINE-CRACKER ASPARAGUS CASSEROLE
Though I'm not particularly a fan of canned asparagus, this casserole version produces a mighty fine dish...it's all in the sauce.

- Preheat oven 350 degrees.
- Melt 2 tbs butter in microwave-proof bowl, then stir in flour till smooth.
- Add 2 tbs liquid from canned asparagus to flour mixure; stir well.
- Stir in sour cream, grated cheese, salt, pepper, and hot sauce.
- Thoroughly drain one can asparagus and arrange in bottom of ungreased 9"x2" square casserole.
- Cover evenly with half the sour cream mixture.
- Thoroughly drain second can asparagus and layer.
- Top with remaining sour cream mixture.
- Melt 3 tbs butter and mix with cracker crumbs; spread evenly.
- Bake uncovered 30-40 minutes or until bubbly.

- Preheat oven to 350 degrees F (175 degrees C). Butter a medium-sized casserole dish.
- Place eggs in a medium saucepan and cover with cold water. Bring water to a boil and immediately remove from heat. Cover and let eggs stand in hot water for 10 to 12 minutes. Remove from hot water, cool, peel and chop.
- In a heavy saucepan, melt the butter. Stir in the flour, salt, and pepper; blend thoroughly. Gradually stir in 3/4 cup of reserved asparagus liquid and the milk; cook (stirring constantly) until the sauce is thickened and smooth . If the mixture is too thick, more asparagus liquid or milk can be added until the mixture reaches the desired consistency. Stir in the Worcestershire sauce and cayenne pepper. Remove the pan from the heat.
- Layer the asparagus, eggs, cheese, and almonds into the casserole. Repeat the layering until all of the ingredients are used. Spoon the sauce over the layers and sprinkle with crumbs.
- Bake in the preheated 350 degree F (175 degrees C) oven for 20 minutes; or until bubbly and lightly browned.

- Heat the oven to 450 degrees. Combine the bread crumbs and Parmesan.
- Rinse asparagus and break off woody bottoms. Peel if thick. Lay stalks in a baking dish that will hold them in two or three layers. If the asparagus are thick, add a splash of water. Drizzle with the olive oil, sprinkle with salt and pepper; place in oven.
- Roast until the asparagus are tender, 10 to 12 minutes. Test for doneness by piercing a spear with point of a sharp knife; it should slide in but meet a little resistance. (Up to this point, the recipe can be made as much as two hours before serving; just leave asparagus at room temperature.).
- Turn on broiler and place rack as close as possible to heating element. Top asparagus with cheese-crumb mixture and run under broiler to brown for 1-2 minutes. Serve hot or at room temperature.
