SLOW COOKER CORNISH HENS
This is my fiance's favorite slow cooker meal of mine. I usually serve it with the veggies over wild rice. You can turn this recipe for 2 into 4 by splitting the hens lengthwise after cooking.

Steps:
- Coat the hens with about 1/4 of the mushroom soup.
- Mix the remaining mushroom soup with mushrooms, olives, zucchini, and garlic salt in a bowl. Stuff the mixture inside the hens. Arrange hens, breast sides up, in the slow cooker. Spoon any remaining soup mixture over the hens.
- Cook the hens in the slow cooker on High for 4 hours.

SLOW COOKER CORNISH GAME HENS AND BAKED POTATOES
A complete meal in the slow cooker! Cook three Cornish game hens along with three russet potaotes for a wonderful hearty meal.

- NOTE - THE GAME HENS NEED TO BE THAWED COMPLETELY. This takes about 36 hours in the fridge.
- Remove the game hens from their packaging. Rinse them under cold water to remove any debris from their insides and any stuck pieces of ice.
- Pat the game hens dry with paper towels.
- Add the game hens breast up to the slow cooker.
- Squeeze the lemon over the game hens.
- Sprinkle them with the 1 teaspoon of salt, 1/4 teaspoon of pepper, paprika and basil. Be sure to sprinkle the paprika over evenly, this will keep the hens from looking pale after cooking.
- Add the russet potatoes on top, I tuck the potatoes in the empty spaces around the chicken. (no need to pierce the potaotes with a fork)
- Drizzle the olive oil over the potatoes. Sprinkle the potatoes with a touch of salt and pepper.
- Place the lid on the slow cooker.
- Cook for 7 hours on low. DO NOT OPEN THE LID DURING THE COOKING TIME. Check to see if the chicken is cooked through and the potatoes are tender before serving. Cook for an additional hour if your potatoes aren't tender, for every slow cooker cooks slightly different.

CROCK POT ROSEMARY CORNISH GAME HEN
What a terrific special occasion dinner! This recipe makes the Cornish hens tender. We liked the savory spices, but adjust the garlic and rosemary to your liking. Since these Cornish hens are made in the Crock Pot it's an easy, can't-miss meal.

- 1. Sprinkle bottom of Crock Pot with half the salt and pepper. Then drizzle 1 Tbsp olive oil over the bottom of the pot. Rough chop the onion and spread over the bottom of the pot.
- 2. Place frozen Cornish game hen on top of the onions. Drizzle the remaining Tbsp of olive oil on the bird. Rough chop the garlic and place half on top of the bird and the rest, let fall in the pot. Season the bird with salt, pepper, and garlic & onion seasoning. Top the bird with dried or fresh rosemary.
- 3. Add a 1/4 cup of water or white wine to the pot. Cook on low heat setting for 6 hours or until the legs begin to fall away from body.
- 4. To serve, cut the bird down the middle. Optional: Carefully remove the hen from the slow cooker and transfer to a small baking dish. Place in a 450 degree oven just until skin is crispy and golden brown.
- 5. Cook 2 hens at a time for a larger family dinner or substitute a whole chicken. Just make sure to increase the cooking time to allow for the larger bird.
CROCK POT MOROCCAN CORNISH GAME HENS
This is a delicious way to serve something a little exotic without slaving over a hot stove with complex recipes. Serve this with your favorite hummous and pita bread along side a spinach salad.

- Rinse hens.
- Pat dry.
- In small bowl, combine garlic, honey, turmeric, onion, allspice, salt and cayenne.
- Brush this mixture on hens.
- Cover and refrigerate at least 4 hours.

- Preheat oven to 400°F. Finely grind first 7 ingredients in spice grinder or coffee grinder. Transfer to small bowl. Whisk in orange juice, oil and garlic. (Spice mixture can be made 1 day ahead. Cover and chill.)
- Rub spice mixture all over hens; place hens in large roasting pan. Sprinkle hens inside and out with salt and pepper. Tie legs together to hold shape. Arrange carrots in pan around hens. - Seal each hen separately and tightly in aluminum foil.
- Seal any leftover dressing tightly in foil.

MOROCCAN-STYLE CORNISH HENS WITH COUSCOUS
Couscous with onions and raisins and seasoned with cumin delivers many levels of flavor with rich little Cornish hens, massaged with spices. How many birds you need for four guests will be determined by their size (the birds' and perhaps the guests', too). Whether you grill or roast them depends on your mood, your kitchen and the weather. - Mix 3 tablespoons of the oil with the paprika, 1 1/2 teaspoons cumin, 1/2 teaspoon salt and 1/4 teaspoon pepper. Rub inside surfaces of hens with 1 tablespoon of the lemon juice, then smear them, inside and out, with the spice paste. Set aside 1 hour.
- Sauté onions in remaining oil in a skillet over medium heat until golden. Stir in raisins and remaining cumin and cook until onions are lightly browned. Fold in cooked couscous and season with salt and pepper.
- Preheat grill or heat oven to 375 degrees. If grilling, sear hens on the skin side over medium heat, then turn them over, basting a couple of times with remaining lemon juice, until cooked through, about 35 minutes. If using oven, roast hen halves skin side up in a roasting pan until cooked through, 35 to 40 minutes, basting a couple of times with remaining lemon juice.
- Reheat couscous, fold in cilantro, and mound on a platter. Arrange hen halves around couscous and serve hot or warm.
