SLOW COOKER CHILI

One of my most popular recipes and for good reason! This is the best chili I've ever tasted! Slow cooking it allows for the flavors to meld and the most tender beef. Try it tonight and see why everyone loves this! Recipe makes about 12 cups.

1 Tbsp olive oil
2 lbs lean ground beef
1 large yellow onion, (finely chopped)
3 cloves garlic, (finely minced)
2 (14.5 oz) cans diced tomatoes with green chilies*
3 (8 oz) cans tomato sauce
1/2 cup beef broth
2 Tbsp chili powder
2 1/2 tsp ground cumin
2 tsp paprika
2 tsp unsweetened cocoa powder
1 tsp granulated sugar
1/2 tsp ground coriander
Salt and freshly ground black pepper
1 (15 oz) can dark red kidney beans, (drained and rinsed)
1 (15 oz) can light red kidney beans, ( drained and rinsed)
Shredded cheddar cheese, (for serving)

Steps:

  • Heat olive oil in a large and deep non-stick skillet over medium-high heat.
  • Add onion and saute 3 minutes, then add garlic and saute 30 seconds longer. Pour onions into a 6 or 7 quart slow cooker (I like this one HERE).
  • Return skillet to medium-high eat, add beef and cook stirring occasionally until beef has browned.
  • Drain most of fat from beef, leaving about 2 Tbsp in with beef (this is optional, I think it ads flavor but you can drain it all if you'd prefer). Pour browned beef into slow cooker.
  • Stir in diced tomatoes, tomato sauce, beef broth, chili powder, cumin, paprika, cocoa powder, sugar, coriander and season mixture with salt and pepper to taste.
  • Cover with lid and cook on low heat for 5 - 6 hours.
  • Stir in dark and light red kidney beans and allow to heat through, about 2 minutes. Serve warm with desired toppings.

For the chili
6 oz. dried black beans - soaked overnight
6 oz. dried pinto beans - soaked overnight
2 lbs skinless boneless chicken thighs
1 TBSP olive oil
1 28oz. can of diced fire-roasted tomatoes (you can use regular tomatoes if fire-roasted are not available)
1 bottle of Guinness stout, extra stout or another stout beer (and if you can find chocolate stout terrific!)
½ cup water
3 cloves of garlic, chopped
1/2 cup of chopped cilantro, divided in half
1 large onion, chopped (about 2 cups)
A 1 lb butternut squash, peeled and chopped into bite-sized pieces (about 3 cups)
1 oz. unsweetened chocolate, finely chopped
1 oz. bittersweet chocolate, finely chopped
1 tsp grated orange zest
2 TBSP masa harina or very finely ground cornmeal plus 3-4 TBSP hot water, mixed to make a slurry
2 ½ TBSP Spice Mix (see below)

People argue about their preference of chili powders and heat level as much as their politics. I like a little heat, but firmly believe that food should not hurt. Naturally, my choices of ground chilies reflect that, and this recipe is on the mild side. I love ancho for its fruity nature, new mexico chilies for heat that won't blow the back of your head off, and the smoky spiciness of smoked Spanish paprika, or pimenton. When I'm serving this to company, I'll serve some roasted green chilies on the side so those who like more heat can add it in themselves.
1 TBSP tsp salt
1 TBSP chili powder
1 TBSP ground cumin
1 TBSP ancho chili powder
1 tsp New Mexico chili powder
1 tsp unsweetened cocoa powder
1 tsp cinnamon
1 tsp black pepper
½ tsp hot pimenton (smoked Spanish paprika)
½ tsp ground coriander

Steps:

  • Mix all of the spices together until fully blended. This makes more than you'll need for the recipe, so just keep the extra in a jar for the next time, or when you want a little spice on chicken, meat, or fish. Put the chicken in a sealable bag and add in a heaping TBSP of the spice mix. Knead the bag so all of the chicken is covered with the mix. Put in the fridge to sit for at least an hour. When you are ready to make the chili, heat 1 TBSP olive oil in a large frying pan over medium high heat and brown the chicken on both sides. You may have to do this in two batches so the chicken isn't crowded. Once the chicken is browned, remove it to a plate, turn heat to low and add ¼ cup of the beer and deglaze the pan, scraping up the browned bits stuck to bottom of pan. Turn off the heat and add back in the chicken and any juices. Let sit until you're ready to add to the crock-pot.Drain and rinse the soaked dry beans and put into the crock-pot. Add in the onion, garlic, squash, chicken, pan juices you just deglazed, the can of diced tomatoes and ¼ cup chopped cilantro. Mix everything together well so all the ingredients are well distributed. Add in the remaining beer and ½ cup of water, then the chopped chocolate and the remainder of the spice mix. Mix well again. The liquid should be up to the top of the ingredients but not covering. If you need more liquid, add a little more water.Set the crock-pot to cook on high for 6 hours. At 5-½ hours remove the chicken, shred it with 2 forks and add back into pot. Make a slurry from the masa and hot water, add to the pot and mix well. Let the chili cook another 30 minutes to thicken the sauce. Taste for seasonings and add salt and pepper if needed. Add in the other ¼ cup of chopped cilantro and stir. Calories: about 265 per cup. As with any stew, chili is always better a day or two later, so this is the perfect recipe to do ahead, and it freezes beautifully.

Wonderful on cold nights. I also make this dish on the stove top, simmering for about 1 hour. I like to add 1-1 1/2 cup chicken broth to make it a bit more liquidy.

2 tablespoons vegetable oil
8 boneless skinless chicken thighs
1 onion, chopped
3 garlic cloves, minced
2 teaspoons ground coriander
1 1/2 teaspoons ground cumin
1 teaspoon dried chipotle powder
1/4 teaspoon salt
1 1/2 teaspoons pepper
19 ounces white kidney beans, drained and rinsed (or use can size that come closest, this is a Canadian size can)
2 (4 1/2 ounce) cans green chilies, chopped
2 tablespoons all-purpose flour
1/3 cup cilantro, fresh, chopped
2 tablespoons lime juice

Steps:

  • In a large skillet heat 1 tbsp oil over medium-high heat, brown chicken all over. Transfer to crock pot.
  • Drain any fat from pan. Heat 1 tbsp oil and fry onion, garlic, coriander, cumin, chili powder, salt and pepper, stirring occasionally until softened, about 6 minute Scrape into crock pot.
  • Add beans and chilies to crock pot and cook on low for 5 hours.
  • Remove chicken from sauce, cube into bite size pieces and set aside.
  • Whisk flour with 3 tbsp water and stir into crock pot. cover and cook on high for 15 min or until sauce has thickened.
  • Stir in chicken, fresh cilantro and lime, heat through and serve.

Made a chicken chili recipe, and it was bland. So I took the ingredients and added my own flair. My family loves it when it gets cold out, because they know this will be on the menu. It's very flavorful. Serve with tortilla chips and sliced avocado for something different. Serve with sour cream and cheese.

1 (16 ounce) jar green salsa (salsa verde)
1 (16 ounce) can diced tomatoes with green chile peppers
2 (15 ounce) cans white beans, drained
1 (14.5 ounce) can chicken broth
1 (14 ounce) can corn, drained
1 onion, chopped
½ teaspoon dried oregano
¼ teaspoon ground cumin
salt and ground black pepper to taste
3 skinless, boneless chicken breasts

Steps:

  • Mix green salsa, diced tomatoes with green chile peppers, white beans, chicken broth, corn, onion, oregano, cumin, salt, and black pepper together in a slow cooker. Lay chicken breasts atop the mixture.
  • Cook on Low until the chicken shreds easily with 2 forks, 6 to 8 hours.
  • Remove chicken to a cutting board and shred completely; return to chili in slow cooker and stir.
