4 lbs chicken thighs, and legs NOT leg quarters
14 1/2 ounces canned diced tomatoes
8 ounces canned peas
14 ounces chicken broth
1 teaspoon garlic powder
2 tablespoons fajita seasoning mix, depending on your own tastes
8 ounces of goya yellow rice

Steps:

  • 1. Put all ingredients EXCEPT the rice in the crock pot on high for 4 hours or low for 6 to 8. Stir it all up and ignore it.
  • 2. One hour before you want to eat, add the entire 8 oz of rice and set the temp to low.
  • 3. Cook covered for one hour.
  • 4. Serve and enjoy!

4 chicken breast halves, skin and excess fat removed
1 sm red bell pepper, seeded and chopped
1/4 t salt
1/2 t grd black pepper
1/4 t paprika
1 T cooking oil
1 medium onion, chopped
3 garlic cloves, minced
1/2 t dried rosemary leaves
1 can (14.5 oz) crushed tomatoes
1 pkg (10 oz) frozen peas

Steps:

  • 1. Season chicken with salt, pepper, and paprika. 2. In a medium skillet, heat oil over medium-high heat. 3. Add chicken and brown; drain. Put chicken in stoneware liner. 4. In a small bowl, combine remaining ingredients, except peas. Pour over chicken. 5. Cover and cook on low 8 hrs (high 4 hrs). One hour before serving add peas. Serve over rice.

1/4 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon paprika
1 tablespoon olive oil
1 medium onion, chopped
1 small red pepper, chopped
3 cloves garlic, minced
1/4 teaspoon dried Rosemary
2 cups crushed tomatoes
1 cup salsa
1 package (10 ounce) frozen peas or corn

Steps:

  • Cook rice. Season chicken with salt, pepper and paprika. Brown chicken in skillet. Put chicken in crock-pot.
  • In small bowl, combine remaining ingredients except the peas, pour over chicken.
  • Cover and cook on low 7-9 hours (High, 3-4 hours). Add peas one hour before serving. Serve over rice.
