We love this original Waldorf Salad recipe made with crisp apples, grapes, celery and walnuts in a creamy dressing on Boston Bib lettuce. It only takes 10 minutes to throw together and is a crowd favorite!

Number Of Ingredients 11

1 red apple (, honey crisp, red delicious, unpeeled and chopped into bite-sized pieces)
1 green apple (, golden delicious, unpeeled and chopped into bite-sized pieces)
1 rib celery (, sliced)
1 cup red seedless grapes (, halved)
1/4 cup golden raisins
1/3 cup walnut halves
1/3 cup mayonnaise ((or half Greek yogurt))
1 teaspoon granulated sugar
1 teaspoon red wine vinegar
freshly ground black pepper (, to taste)
Boston Bib lettuce (, or romaine lettuce leaves)

Steps:

  • In a large bowl toss the apples in lemon juice. Add celery, grapes, raisins and walnuts
  • In a separate bowl stir together the mayonnaise, sugar, red wine vinegar and pepper. Taste and adjust to your liking with a little extra mayonnaise or more vinegar.
  • Coat apple mixture in desired amount of dressing (you may not want to use it all).
  • Refrigerate until ready to serve. Serve cold, on top of bib lettuce or large lettuce leaf.

2 medium Red Delicious apples, chopped
2 medium Golden Delicious apples, chopped
2 tablespoons lemon juice
2 celery ribs, chopped
3/4 cup chopped walnuts
1/2 cup raisins
1 cup mayonnaise
Optional: Ground cinnamon, ground nutmeg and lettuce leaves

Steps:

  • In a large bowl, toss apples with lemon juice. Gently stir in the celery, walnuts, raisins and mayonnaise. Refrigerate until serving. If desired, sprinkle with cinnamon and nutmeg and serve on lettuce leaves.

2 cups diced tart apples (, or 2 apples)
1 tablespoon sugar
2 teaspoons lemon juice
1 cup diced celery
1 cup grapes (, halved)
1/2 cup toasted walnuts or pecans (, roughly chopped)
1/2 cup whipping cream (, whipped)
1/4 cup mayonnaise
1/2 teaspoon kosher salt

Steps:

  • Add the diced apples to a large mixing bowl and sprinkle with the sugar and lemon juice. Toss to coat. Add the celery, grapes, and nuts.
  • In another bowl, whip the whipping cream until peaks form, then gently fold in the mayonnaise. Fold into the apple mixture and season with the kosher salt. Taste and adjust the seasoning to your liking. Chill for 1 hour or overnight. Serve by itself or on a lettuce leaf.

"Millions who never visited the Waldorf owe him a debt," The New York Times wrote in 1950, upon Oscar Tschirky's death. Mr. Tschirky, a Swiss immigrant who became known as "Oscar of the Waldorf," is credited with creating this piece of Americana in 1893, a timeless dish whose popularity has spread far past the Waldorf's exclusive doors and into home kitchens. Over time, variations would include blue cheese, raisins and chopped walnuts, which can be added here alongside the celery and apples. But the original is an exercise in simplicity: four ingredients that have lived on for over a century.

The idea of Waldorf salad was unappealing to me for years. So I experimented with ingredients a bit and finally found a recipe that's incredibly delicious! This is my own spin on the traditional Waldorf salad. The ingredients crisp, filling, and bursting with juicy flavor. Perfect for hot summer days when you don't feel like firing up the stove.

1 Granny Smith apple, cubed
1 Golden Delicious apple, cubed
1 Gala apple, cubed
1 Bosc pear, cubed
3 ribs celery, chopped
¾ cup sweetened dried cranberries
½ cup chopped walnuts
¼ cup chopped pecans
1 cup sour cream
¾ cup mayonnaise
1 tablespoon granulated cane sugar
2 teaspoons fresh lemon juice

Steps:

  • Combine Granny Smith apple, Golden Delicious apple, Gala apple, Bosc pear, celery, cranberries, walnuts, and pecans in a large bowl.

Number Of Ingredients 11

1 cup pecan halves
1 one-pound fennel bulb, trimmed
2 tablespoons plus 1 teaspoon freshly squeezed lemon juice
1 Granny Smith apple
1 medium bunch seedless red grapes, halved (about 1 1/2 cups)
4 stalks celery, strings removed, thinly sliced crosswise
6 to 8 escarole leaves, stacked and cut crosswise into thin strips
1/4 cup chopped fresh dill
1/4 cup plain yogurt
2 tablespoons extra-virgin olive oil
Salt and freshly ground black pepper

Steps:

  • Heat oven to 350 degrees. Spread pecans on a baking pan. Bake until golden and fragrant, 10 to 15 minutes. Cool on a wire rack. Halve pecans; set aside.
  • Slice fennel bulb very thin using a mandoline or a sharp knife. Transfer to a large bowl; add 1 teaspoon lemon juice, and toss.
  • Cut apple, with skin on, into thin wedges; add to fennel, and toss to combine. Add grapes, celery, escarole, and half the dill to bowl. Toss to combine. Salad may be made to this point up to 4 hours ahead.
  • In a small bowl, combine remaining 2 tablespoons lemon juice, yogurt, olive oil, and salt and pepper to taste. Drizzle vinaigrette over the salad, using only as much as needed to lightly coat the salad. Transfer to a serving bowl; garnish with remaining dill and the pecans. Serve immediately.
