Don't worry about exhausting your arm while making this sweet potato risotto. You do have to attend to the risotto now and then, but you only need to stir occasionally for the 30 minute cook time.

2 tablespoons olive oil
1 large onion, finely chopped
kosher salt and black pepper
2 small sweet potatoes (about 1 pound), cut into 1/4-inch pieces
2 cloves garlic, chopped
1 cup Arborio rice
1 cup dry white wine
0.5 cup grated Parmesan (2 ounces)
2 teaspoons chopped fresh oregano

Steps:

  • Heat the oil in a large saucepan over medium heat. Add the onion, ½ teaspoon salt, and ¼ teaspoon pepper. Cook, stirring occasionally, until soft, 3 to 5 minutes.
  • Add the sweet potatoes and garlic and cook, stirring occasionally, for 1 minute.
  • Add the rice and cook, stirring, for 2 minutes. Add the wine and cook, stirring frequently, until absorbed.
  • Measure 3½ cups of water. Add ¾ cup at a time and cook, stirring occasionally and waiting until each addition is absorbed before adding the next. It should take 25 to 30 minutes for all the water to be absorbed.
  • Stir in the Parmesan and oregano.

4 tablespoons butter
2 tablespoons minced shallots
1 medium sweet potato (about 2 cups diced into 1/4 inch dice)
1/3 cup chopped pecans
3 to 4 cups vegetable broth
1 cup Arborio rice (about 6 to 7 ounces)
1/2 cup fresh grated Parmesan cheese
Kosher salt (to taste)
Black pepper (to taste)
Optional Garnish: 1 tablespoon finely chopped green onion tops or fresh parsley

Steps:

  • Gather the ingredients.
  • Heat 4 cups of vegetable broth to the boiling point; reduce heat to the lowest setting to keep it hot.
  • Melt the butter in a medium saucepan. Add the minced shallot and pecans, cook until shallot is tender.
  • Add the rice to the shallot and pecan mixture and cook, stirring, for 1 to 2 minutes. Stir in sweet potato. Stir about 3/4 cup of the hot broth into the rice mixture. Cook over medium-low heat, stirring constantly until the liquid has been absorbed.
  • Stir about 3/4 cup of the hot broth into the rice mixture. Cook over medium-low heat, stirring constantly until the liquid has been absorbed. Continue adding liquid, about 1/4 cup to 1/3 cup at a time, stirring frequently, until the rice and sweet potato are tender, but not overly soft. The texture should be creamy and a little loose. This will take about 25 minutes and about 3 to 4 cups of broth. Remove the saucepan from the heat and add the Parmesan cheese.
  • Taste and add salt and freshly ground black pepper to taste. Serve with extra Parmesan cheese and garnish with green onion or parsley, if desired.

3/4 cup freshly grated Parmesan
Salt and freshly ground black pepper
1 pound orzo (rice-shaped pasta)
2 tablespoons olive oil
1 large shallot, finely chopped
1 garlic clove, minced
1 (14.5-ounce) can diced tomatoes, juices drained
1 1/4 cups whipping cream
1 cup frozen peas, thawed

Steps:

  • Bring a heavy large saucepan of salted water to a boil over high heat. Add the orzo and cook until tender but still firm to the bite, stirring often, about 8 minutes. Drain, reserving 1 cup of the cooking liquid.
  • Meanwhile, heat the oil in a heavy large frying pan over medium heat. Add the shallot and garlic, and saute until tender, about 2 minutes. Add the tomatoes and cook until they are tender, about 8 minutes. Stir in the cream and peas. Add the orzo and toss to coat. Remove the skillet from the heat. Add the Parmesan to the pasta mixture and toss to coat. Stir the pasta mixture until the sauce coats the pasta thickly, adding enough reserved cooking liquid to maintain a creamy consistency. Season the orzo with salt and pepper, and serve.

1 shallot, minced
1 cup tri-colored orzo
2 cups chicken broth
2/3 cup mashed sweet potato
1/3 cup grated pecorino
salt, pepper and dried sage to taste

Steps:

  • Melt butter in a medium saucepan over medium high heat. Add minced shallot and sweat for one to two minutes or until soft. Add orzo, stir to coat, and sweat for one more minute. Add two cups of chicken broth to saucepan. Stir and bring to a boil. Turn heat to low and simmer orzo and broth for 18-20 minutes,stirring occasionally, until the orzo absorbs all the broth. Take saucepan off the heat and stir in mashed sweet potato and pecorino. Add salt, pepper, and dried sage to taste.

8 ounces cremini mushrooms, thinly sliced
3 tablespoons extra-virgin olive oil
Kosher salt and freshly ground pepper
1 large leek (white and light green parts only), sliced and rinsed
2 cloves garlic, minced
12 ounces orzo
3 cups milk
1 1/2 cups shredded Italian cheese blend (about 6 ounces)
1 5-ounce package baby spinach (about 8 cups)
Grated zest and juice of 1 lemon
2 tablespoons chopped fresh parsley

Steps:

  • Preheat the oven to 425 degrees F. Toss the mushrooms with 2 tablespoons olive oil, a pinch of salt and a few grinds of pepper on a baking sheet.
  • Spread out in a single layer. Roast, stirring halfway through, until well browned and crisp around the edges, about 25 minutes. Let cool for a few minutes, then scrape up with a spatula and transfer to a bowl.
  • Meanwhile, heat the remaining 1 tablespoon olive oil in a large pot or Dutch oven over medium-high heat. Add the leek and garlic, season with salt and pepper and cook until the leek softens, about 2 minutes. Add the orzo, 2 cups water, the milk, 1 teaspoon salt and a few grinds of pepper. Bring to a boil, stirring constantly. Reduce the heat to a simmer and cook, stirring occasionally, until the orzo is al dente, 5 to 7 minutes.
  • Remove from the heat and add the cheese, spinach, lemon juice and 1 tablespoon parsley. Stir until the cheese melts and the spinach wilts; add a splash of water if the mixture is too thick. Season with salt and pepper.
  • Toss the mushrooms with the lemon zest and remaining 1 tablespoon parsley. Divide the orzo among bowls and top with the mushroom mixture.

1 cup uncooked whole wheat orzo pasta

2 medium tomatoes, seeded and chopped
1/4 cup minced fresh basil

Steps:

  • In a large saucepan over medium-high heat, saute zucchini and shallot in oil until almost tender. Add garlic; cook 1 minute longer. Add the orzo, broth and milk.
