SHRIMP COCKTAIL

Kosher salt and freshly ground pepper
For the shrimp:
2 bay leaves
1 lemon, quartered, plus wedges for serving
1 tablespoon black peppercorns
1 tablespoon coriander seeds
Kosher salt
1 pound (about 24) large shrimp, peeled and deveined, tails intact
For the cocktail sauce:
1/3 cup sweet chili sauce (such as Heinz)
1/4 cup ketchup
Juice of 1 lemon
2 tablespoons horseradish, drained
1 teaspoon hot sauce
1/4 teaspoon Worcestershire sauce

Steps:

  • Make the cocktail sauce: Combine the chili sauce, ketchup, lemon juice, horseradish, hot sauce and Worcestershire sauce in a small bowl. Season with salt and pepper. Refrigerate at least 1 hour before serving.
  • Make the shrimp: Combine 8 cups water, the bay leaves, quartered lemon, peppercorns, coriander seeds and 2 tablespoons salt in a large saucepan. Bring to a boil, then reduce the heat to medium low and add the shrimp. Simmer until the shrimp curl slightly and are just cooked through, about 4 minutes. Remove the shrimp to a plate with a slotted spoon; refrigerate until chilled, about 1 hour. Serve with the cocktail sauce and lemon wedges.

This recipe came about from a mix of several other recipes I have made over the years, and it has become a favorite. 35 years ago I would slap a brick of cream cheese on a platter, toss my homemade cocktail sauce with some canned or frozen shrimp, throw some crackers around the edge, and here ya go! I think you will agree that this recipe is much more sophisticated and tastes wonderful. Give this a try, any shrimp cocktail lovers will not be able to stay away! Cook time includes chilling time.

1 (8 ounce) package cream cheese
1 (8 ounce) container chive & onion cream cheese
1 1/2 lbs large shrimp, peeled and deviened (can use smaller or jumbo, adjust roasting time)
2 tablespoons olive oil
1.5 (12 ounce) bottles chili sauce (such as Heinz)
3/4 cup celery, finely diced
4 green onions, finely chopped
2 teaspoons horseradish sauce (or to taste)
1 teaspoon hot sauce (or to taste)
1 teaspoon fresh lemon juice
1 (12 ounce) package buttery crackers

Steps:

  • Preheat oven to 400 degrees F. Line a baking sheet with parchment paper.
  • Pat shrimp dry with paper towels and place shrimp in large bowl. Add olive oil, salt and pepper, to taste, and gently toss to combine. Place shrimp onto baking sheet leaving space between them. Put sheet into oven and roast just until pink, firm and cooked through, about 6-8 minutes. Remove from oven and let cool before dicing into bite-size pieces. (If you need to get this together faster, I put a baking sheet in the freezer until cold, then put the diced shrimp on it and stuff it in the freezer for about 15 minutes to chill.).
  • Mix together the chili sauce, horseradish sauce, hot sauce, chopped celery, and half of the chopped green onions. Add shrimp and place in refrigerator to chill.
  • With a hand mixer or stand mixer, beat together the cream cheeses until very smooth. Spread onto a rimmed plate, (an offset spatula is helpful here), into a smooth frosting-like layer of equal thickness. Cover lightly with waxed paper and place in refrigerator to chill.
  • When ready to serve, use a slotted spoon to place shrimp mixture on top of cream cheese on plate and sprinkle with remaining chopped green onions.
  • Serve with buttery crackers.

Yield about 6 dozen (1-1/4 cups sauce).

3 quarts water
1 small onion, sliced
1/2 medium lemon, sliced
2 sprigs fresh parsley
1 tablespoon salt
5 whole peppercorns
1 bay leaf
1/4 teaspoon dried thyme
3 pounds uncooked large shrimp, peeled and deveined (tails on)
SAUCE:
1 cup chili sauce
2 tablespoons lemon juice
2 tablespoons prepared horseradish
4 teaspoons Worcestershire sauce
1/2 teaspoon salt
Dash cayenne pepper
Lemon wedges, optional

Steps:

  • In a Dutch oven, combine the first 8 ingredients; bring to a boil. Add shrimp. Reduce heat; simmer, uncovered, until shrimp turn pink, 4-5 minutes. , Drain shrimp and immediately rinse in cold water. Refrigerate until cold, 2-3 hours. In a small bowl, combine the sauce ingredients. Refrigerate until serving. , Arrange shrimp on a serving platter; serve with sauce. If desired, serve with lemon wedges.
