This soup is a time-tested recipe that helps you put comfort food on the table in just 40 minutes total. Once your potato soup is thick and bubbly, top it with bacon, cheese and green onions for a restaurant-worthy meal right at your kitchen table.

1 package (12 oz) bacon
1 1/2 cups chopped onion
6 cups Progresso™ chicken broth (from two 32-oz cartons)
2 lb baking potatoes, peeled, cubed
2/3 cup butter
3/4 cup Gold Medal™ all-purpose flour
4 cups milk
1 teaspoon salt
1 teaspoon freshly ground pepper
1 cup diced cooked ham
1 container (8 oz) sour cream
2 1/2 cups shredded sharp Cheddar cheese (10 oz)
3/4 cup sliced green onions

Steps:

  • In 12-inch skillet, cook bacon over medium heat 6 to 7 minutes or until crisp; drain on paper towels. Crumble bacon; set aside. Reserve 2 tablespoons drippings in skillet. Cook onion in bacon drippings over medium-high heat 6 minutes or until almost tender.
  • In 6-quart Dutch oven, mix onion, broth and potatoes. Heat to boiling; reduce heat. Cook 10 minutes or until potatoes are very tender.
  • Meanwhile, in same skillet, melt butter over low heat. Stir in flour with whisk until smooth. Cook and stir 1 minute. Gradually stir in 2 cups of the milk. Pour milk mixture into potato mixture. Add remaining 2 cups milk, the salt and pepper. Cook over medium heat, stirring constantly with whisk, until mixture is thickened and bubbly.
  • Stir in ham, half of the bacon, the sour cream, 2 cups of the cheese and 1/2 cup of the green onions. Cook until thoroughly heated and cheese is melted. Evenly top individual servings with remaining bacon, 1/2 cup cheese and 1/4 cup green onions.

Fully loaded baked potato chowder with the creamiest, cheesy soup base. Packed full of little red potatoes, bacon, onion, carrots and corn to make it extra hearty. Don't forget to top it with chives!

1/2 lb bacon, cut in half
1 tbsp olive oil
1 small yellow onion, diced
2 garlic cloves, minced
2 tbsp flour
3 c chicken broth + extra
24 oz petite red potatoes, quartered
2 carrots, peeled and sliced
1/2 c frozen corn
1/2 c half and half
4 oz sharp cheddar cheese, grated
1/4 c sour cream
1/2 scant tsp salt, (only if needed)
pepper
chives

Steps:

  • Heat a soup pot over medium heat
  • Cut the bacon in half and cook it in the soup pot, drain out on to a paper towel and wipe out the excess bacon fat, but leaving any stuck on bacon bits
  • Chop up the bacon into small bits
  • Add the olive oil, onion and garlic to the pot, saute for 3-5 minutes
  • Mix in 2 tbsp flour, stirring for 1 minute
  • Pour in the chicken broth, let it come to a boil
  • Add the potatoes, bacon, carrots and corn
  • Cover and simmer on med/low 10-15 minutes or until the potatoes are tender (add an extra splash of chicken broth if the liquid gets too low)
  • Turn the heat off
  • Add the half and half, sharp cheddar cheese and sour cream, stirring well in between each addition
  • Serve and top with chives
  • Add salt to taste if needed

I took several ideas from different recipes I found, and added some of my own magic and came up with this OMG DELICIOUS soup! It's very creamy, chunky, flavorful AND filling!

2 stick butter
2 Tbsp garlic, minced
1 medium onion, diced
2-3 carrots, grated or diced
1/2 c flour
2 tubs knorr® homestyle concentrated chicken stock, disolved in 1 1/2 cup hot milk
10-12 sm to med red potatoes, washed & unpealed
3 c milk
4 Tbsp olive oil
16 oz bag frozen corn, thawed
6oz pkg real bacon crumbles
1 tsp salt
1 tsp pepper
2 c heavy cream
shredded cheddar cheese

Steps:

  • 1. Dice potatoes into small bite sized cubes, set aside.
  • 2. In a large pot, over med heat, melt both sticks of butter. Add garlic, onion & carrots. Saute 5-7 min, until tender. Wisk in flour, cook another 2 minutes stirring constantly until well blended.
  • 3. Slowly add hot milk with disolved chicken stock, stirring until blended.
  • 4. Add potatoes & 3 cups of milk. Cook over med-low heat approx 20-30 min, until potatoes are soft, stirring often.
  • 5. In a med skillet, heat olive oil. Add corn, bacon, salt & pepper. Saute over med heat approx 10 minutes.
  • 6. When potatoes are fork-tender, add corn & bacon mixture, and 2 cups heavy cream. Reduce heat to low, continue heating, stirring often for another 10 min.
  • 7. Top individual bowls with shredded cheese.

1 can (10-3/4 ounces) condensed cream of chicken soup, undiluted

1/4 teaspoon pepper
1 package (8 ounces) cream cheese, cubed and softened
1/2 pound sliced bacon, cooked and crumbled, optional
Minced chives, optional

Steps:

  • In a 5-qt. slow cooker, combine the first 5 ingredients. Cover and cook on low for 8-10 hours or until potatoes are tender. , Add cream cheese; stir until blended. Garnish with bacon and chives if desired.

2 cups peeled and diced potatoes
½ cup diced carrots
½ cup diced celery
¼ cup chopped onion
1 teaspoon salt
¼ cup butter
2 cups milk
¼ cup all-purpose flour
2 (15 ounce) cans whole kernel corn, drained
2 ½ cups shredded Cheddar cheese

Steps:

  • Place potatoes, carrots, celery, onion and salt in a large pot with water to cover. Bring to a boil, reduce heat and simmer 20 minutes.
  • Meanwhile, combine butter, milk and flour in a small saucepan over medium-low heat. Stir constantly until smooth and thick.
  • Pour milk mixture into cooked vegetables. Stir in corn and cheese until cheese is melted. Serve.
