Number Of Ingredients 15

1/2 pound fresh broccoli, broken into florets
1-1/2 cups sliced zucchini
1-1/2 cups sliced fresh mushrooms
1 large carrots, sliced
1 tablespoon olive oil
8 ounces uncooked spaghetti
1/4 cup chopped onion
3 garlic cloves, minced
2 tablespoons butter
2 tablespoons all-purpose flour
1 vegetable bouillon cube or 2 teaspoons chicken bouillon granules
1 teaspoon dried thyme
2 cups milk
1/2 cup shredded Swiss cheese
1/2 cup shredded part-skim mozzarella cheese

Steps:

  • In a large skillet, saute the broccoli, zucchini, mushrooms and carrot in oil until crisp-tender. Remove from the heat and set aside., Cook spaghetti according to package directions. In a large saucepan, saute onion and garlic in butter until tender. Stir in the flour, bouillon and thyme until blended; gradually add milk. Bring to a boil; cook and stir for 2 minutes or until thickened., Reduce heat to low; stir in cheeses until melted. Add the vegetables; cook until heated through. Drain spaghetti; Add to vegetable mixture; toss to coat.

1 pound hamburger OR
2 cups of cubed cooked chicken
VEGETABLES
1 large broccoli head
1 1/2 cups sliced zucchini
1 1/2 cups sliced mushrooms
1 large shaved carrot
SAUCE
1 tablespoon olive or vegetable oil
1/4 cup chopped onion
2 cubes chicken bouillon granules
3 cloves garlic
2 tablespoons butter
2 tablespoons flour
1 teaspoon Thyme
2 cups milk
1/2 cup swiss cheese
1/2 cup mozzarella

Steps:

  • cook noodles; set aside SAUCE 1. heat oil in pan 2. saute onion, cloves and butter 3. add flour, chicken bouillon granules, thyme, and milk 4. Boil for 2 minutes 5. reduce heat and stir in cheeses 6. Pour sauce over veggies and fold into pasta noodles then serve

3 tablespoons flour
2 teaspoons chicken bouillon granules
1/2 teaspoon dried thyme
2 cups milk
1/4 cup white wine, or 1/4 cup more milk
1/2 cup shredded Swiss cheese
1/2 cup shredded mozzarella cheese

Steps:

  • In a large skillet, sauté the broccoli, zucchini, mushrooms, and carrot in oil until crisp-tender. Remove from heat and set aside. Cook spaghetti according to package directions. In another saucepan, sauté onion and garlic in butter until tender. Stir in the flour, bouillon and thyme until blended. Gradually add the milk and wine. Bring to a boil; cook and stir for 2 minutes or until thickened. Reduce heat to low; stir in cheeses until melted. Do not boil. Add vegetables; heat through. Drain spaghetti; toss with vegetable mixture.
