If you can't decide between cookies or cheesecake now you don't have to. This would be good with chocolate chip or peanut butter cookie cups also.

½ cup butter
½ cup white sugar, or more as needed, divided
1 egg
½ teaspoon vanilla extract
1 ½ cups all-purpose flour
2 tablespoons all-purpose flour
½ teaspoon baking powder
¼ teaspoon baking soda
¼ teaspoon salt
1 (8 ounce) package cream cheese
¼ cup white sugar
2 tablespoons white sugar
1 egg

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Line 18 cupcake cups with paper liners.
  • Beat butter, sugar, egg, and vanilla extract together using an electric mixer in a mixing bowl until smooth.
  • Sift 1 1/2 cups plus 2 tablespoons flour, baking powder, baking soda, and salt together in a separate bowl. Mix into butter mixture until combined.
  • Place 1 teaspoon of batter into each of the prepared cupcake cups. Sprinkle each cup with a little sugar.
  • Bake in the preheated oven until golden, about 10 minutes. Remove from the oven and indent each cup using a teaspoon-sized measuring spoon. Let cool 10 minutes.
  • While cookie cups cool, beat cream cheese, 1/4 cup plus 2 tablespoons sugar, and egg together using an electric mixer in a mixing bowl until smooth. Place a little more than 1 teaspoon of filling into each cookie cup. Sprinkle with sugar.
  • Bake in the preheated oven until filling sets, 10 to 15 minutes more. Let cool completely before serving.

I found this recipe through a couple websites pinned on Pinterest. I adjusted the frosting to my preference. I really liked the flavor of the cupcakes, but I may try using sour cream instead of half and half next time

1/2 cup butter, softened
1 cup sugar
2 large eggs
1 tablespoon vanilla
1 1/2 cups flour
1/8 teaspoon salt
1 1/2 teaspoons baking powder
3/4 cup half-and-half
frosting
4 tablespoons cream cheese (half a brick)
3 cups powdered sugar
4 tablespoons butter, softened
1 teaspoon vanilla
3 -5 tablespoons half-and-half

Steps:

  • Preheat oven to 350.
  • Cream butter and sugar until fluffy. At least 2 minutes, longer with a hand held mixer.
  • Mix in eggs one at a time, scraping down the bowl with each addition.
  • Add vanilla.
  • Add salt and baking powder and mix just until combined.
  • Incorporate flour, mixture will be thick.
  • Add in half and half and mix thoroughly.
  • Original directions say to divide batter into 12 cupcakes, I got 14 and they were all filled well.
  • Bake 18 to 20 minute If you are new to baking with your oven check them at 16 minute Mine were done in 18. I checked mine with a toothpick, needs to come out clean.
  • Cool cupcakes.
  • To make frosting, allow both the butter and cream cheese to come to room temperature. If it is a hot day don't let them get too warm.
  • Cream the butter and cream cheese for at least 3 minute You should NOT be able to tell that you have 2 ingredients in the bowl. You want a light yellow color with a fluffy look.
  • Add powdered sugar one cup at a time, incorporating well. Don't forget to scrape the bowl frequently! :).
  • Add vanilla and 2 tablespoons of half and half. Check consistency for frosting, add more half and half until you are happy with the thickness of your frosting.
  • Frost and enjoy.

1 c white sugar
1 c butter, softened
3 oz package cream cheese softened
1/2 tsp salt
1/2 tsp almond extract
1/2 tsp vanilla extract
1 egg yoke
2 1/4 c all purpose flour

Steps:

  • 1. In a large bowl, combine the sugar, butter, cream cheese, salt, almond and vanilla extracts, and egg yolk. Beat until smooth. Stir in flour until well blended. Chill the dough for 8 hours, or overnight.
  • 2. When dough is properly chilled, preheat over to 375 degrees
  • 3. Bake for 7 to 10 minutes in the preheated oven, or until light and golden brown. Cool cookies completely before frosting.
  • 4. On a lightly floured surface, roll out the dough 1/3 at a time to 1/8 inch thickness, refrigerating remaining dough until ready to use. Cut into desired shapes with lightly floured cookie cutters. Place 1 inch apart on ungreased cookie sheets. Leave cookies plain for frosting, or brush with slightly beaten egg white and sprinkle with candy sprinkles or colored sugar. ALTERNATIVE: (instead of sprinkles) Frost with green food coloring added to the frosting of your choice. Make it festive !

This is a great pie and always a hit at any gathering. I hope you enjoy it as much as we have!

1 package(s) pillsbury sugar cookie dough
1 - 8oz cream cheese, softened
1 - 5oz cream cheese, softened
1/2 cup(s) sugar
2 teaspoon(s) vanilla extract
2 - eggs
1 can(s) cherry pie filling

Steps:

  • Slice the cookie dough into 10 to 12 slices and then cut the slices into fourths. Place them around the bottom and sides of a 9 inch deep dish pie plate. Using your fingers, press the cookie dough around the bottom and sides of plate evenly to form your crust. Bake at 350 in preheated oven for 15 minutes. Cool completely.
  • Beat one 8 oz package plus 5 oz of cream cheese, add 1/2 c sugar and beat 2 minutes. Add vanilla and eggs one at a time and continue to beat 1 minute. Pour into cooled crust.
  • Bake at 325 in preheated oven for 45-50 minutes until cooked through and lightly browned. Chill for at least 6 hours or overnight. Top with cherry pie filling. Enjoy!
