Steps:
- In a large pot, combine water and chicken over medium heat. Cook for 15 minutes or until chicken is tender. Remove from heat. Remove chicken from broth and let cool. Reserve broth.
- Strain chicken broth into a 5-quart stock pot. Heat over medium heat. Add bay leaf, salt, garlic, 3 cups chicken broth, rice, lemon zest and lemon juice. Cook for 10 minutes.
- Shred chicken breast and add to soup. Add ham. Cook for 5 minutes more. Remove soup from heat, stir in kale, lemon slices and serve.
