Number Of Ingredients 8

5 medium sweet potatoes, peeled and cut into 1-inch pieces (about 1 1/2 pounds)
2 tablespoons olive oil
Kosher salt and freshly ground black pepper
1/2 cup cranberry juice cocktail
3 tablespoons dark brown sugar
2 tablespoons butter
1/2 teaspoon ground cinnamon
1/4 cup chopped toasted almonds

Steps:

  • Preheat the oven to 400 degrees F.
  • On a baking sheet, toss together the sweet potatoes, oil and some salt and pepper. Roast until the potatoes are golden brown and cooked through, 30 to 40 minutes.
  • In the meantime, in a small saucepan over medium-high heat, reduce the cranberry juice by half. Add the brown sugar, butter and cinnamon, stirring to dissolve and incorporate.
  • When the potatoes come out of the oven, add them to a large bowl. Pour the glaze over top and toss to coat completely. Serve topped with the toasted almonds.

Found this recipe in Low Fat Ways to Cook for the Holidays (C1998). Love sweet potatoes but was looking for a new and different way to prepare them. I love how this sounds and plan to make for Thanksgiving this year. Adopted recipe. times are negotiable depending on power of microwave.

6 sweet potatoes, medium cut into 1-inch cubes (about 3 lbs)
1/2 cup brown sugar, firmly packed
2 tablespoons margarine
2 tablespoons orange juice, unsweetened
1/2 teaspoon salt
1 cup whole berry cranberry sauce
orange rind (optional)

Steps:

  • Place potatoes in 2 qt microwaveable safe baking dish: cover and micro on HIGH 12 min or until pototatoe is tender.
  • Combine sugar and next 3 ingredients in a 2 c glass measuring cup. Microwave on HIGH for 3 min, stirring every minute Add sugar mixture and cranberry mixture to potatoes, toss gently. Microwave on HIGH 10 min or until thouroughly heated, basting with sauce tice uring cooking.
  • Garnish with orange rind.

8 Medium SweetPotatoes, cooked, peeled and sliced lengthwise
1 1/2 cups Whole Cranberry Sauce
4 tbsp. Orange Juice
2 tbsp. Lemon Juice
1 cup Light Corn Syrup
2 tbsp. Melted Butter

Steps:

  • Place SweetPotatoes in a shallow baking pan. Mix cranberry sauce and juices and spoon over the SweetPotatoes. Blend corn syrup and melted butter and pour over the mixture. Bake at 350 degrees F. for 25 minutes, basting occasionally.

This will work for either sweet potatoes or carrots, I use both sweet potatoes and carrots for this, make certain to chop your carrots into about 1-1/2 inch pieces. This is a great dish, and one that goes great with a turkey or roasted chicken dinner. If you like a lot of sauce or you are using more sweet potatoes then then double the sauce ingredients, adjust the amount of sugar, if you prefer a sweeter sauce then add in more sugar, you can use brown sugar in place of white if desired

3 -4 medium sweet potatoes (peeled and and cut into about 1-1/2-inch chunks or larger)
1 cup jellied cranberry sauce
2 -4 tablespoons sugar (use as much sugar as desired)
2 tablespoons orange juice
1 -2 tablespoon butter, melted

Steps:

  • Set oven to 350 degrees.
  • Place the sweet potatoes in a buttered casserole dish (use a baking dish large enough to hold the potatoes).
  • In a small saucepan, combine cranberry sauce, orange juice, sugar, melted butter; bring to a boil, reduce heat and gently simmer for about 8 minutes (you will have to break up the cranberry jelly with a fork to smooth out).
  • Pour the mixture over the potatoes in the baking dish; toss gently to combine and coat.
  • Bake for about 20 minutes until the potatoes and carrots are desired texture and they are heated through.
  • Delicious!
