This three seafood ceviche is worth trying! Serve it in martini or margarita glasses and garnish with cilantro leaves and slices of lime. Serve with chips. I make everything ahead and marinate, but don't put the avocado in until close to serving.

½ pound cleaned, cooked crawfish tail meat
½ pound jumbo lump crabmeat
½ pound cooked small shrimp, peeled and deveined
½ cup lime juice
½ cup ketchup
2 tablespoons hot sauce
2 tablespoons olive oil
⅓ cup chopped cilantro
½ cup diced red onion (1/4-inch pieces)
1 cup peeled, seeded, and diced cucumber
1 cup diced jicama
1 jalapeno chile pepper, seeded and minced
salt to taste
1 large avocado, diced

Steps:

  • Place the crawfish, crab, and shrimp in a large glass or ceramic bowl; pick any shells from the meat. Pour in the lime juice, and gently mix, being careful not to break up the crab meat. Cover and refrigerate for 1 hour.
  • In a separate bowl, mix together the ketchup, hot sauce, and olive oil. Stir in the cilantro, onion, cucumber, jicama, and jalapeno; add salt to taste. Gently fold this mixture into the seafood. Refrigerate until ready to serve. Add the avocado just before serving.

16 ounces crabmeat or 16 ounces imitation crabmeat
1 1/2 cups cilantro, chopped (remove stems)
1/2 white onion, chopped
2 tomatoes, diced
1 seedless cucumber
3 limes
3 finely chopped serrano peppers (optional)
1 tablespoon ketchup
1/2 cup Clamato juice

Steps:

  • In a large bowl blend crab meat without breaking it up too much.
  • Add juice of 2 limes, onion, tomatoes, chopped cucumber and Serrano peppers.
  • Add salt.
  • Combine the ketchup, clamato and the juice of the third lime.
  • Add more salt if necessary.
  • Serve with Mexican corn chip or crackers.
  • I serve in a margarita glass with a wedge of lime on top.
  • Note: You can use V8 juice instead of Clamato if you want.

1 1/2 pounds lump crabmeat, picked through for shells
1 (8-ounce) can tomato sauce
1/3 cup fresh lime juice
2 cups diced Roma tomatoes
1/2 cup diced cucumber
1/2 cup diced jicama
1/3 cup diced white onion
1/4 cup freshly chopped cilantro leaves
2 teaspoons Worcestershire sauce
1 teaspoon hot sauce, or more, to taste
Salt and freshly ground black pepper
Cooking spray
Olive oil
1 baguette, sliced crosswise into 1/2-inch thick rounds or ovals
2 peeled garlic cloves

Steps:

  • For the ceviche:
  • Combine all of the ingredients in a large bowl and toss to combine.
  • For the bruschetta:
  • Coat a stove-top grill pan or griddle with cooking spray and set over medium-high heat to preheat. Brush olive oil all over both sides of bread slices. Place bread on hot pan and cook 1 to 2 minutes per side, until golden brown. While still warm, rub garlic cloves all over bread. Serve bruschetta with ceviche.

1 - 32 oz Clamato Juice - Spicy
1 lb of Imitation Crab (I usually get the brand from the Walmart fresh seafood section)
1 lb of small shrimp (cooked)
2 bunches of Green Onion
1/4 of an onion
3 cucumbers
4-6 tomatoes
1-2 Jalapeno's (Optional)
8-10 Limes

Steps:

  • 1. Rinse Imitation crab and shrimp. 2. In a large container pour the Clamato Juice. (This will make mixing the ingredients alot easier) 3. Add your shrimp. 4. With your hands, pull the imiation crab apart. It pulls apart pretty easy. Add to your bowl. 5. Chop your remaining vegetables and add to you mixture. small pieces is fine. Depending on how chunky you want it. 6. Squeeze your Lime juice and mix. Add salt and pepper to taste.... 7. Put in your fridge a couple hours before service. Serve in small bowls with chips, saltine crackers or on top of tostadas.. Should make enough to feed at least 10 people.

CHIPOTLE MARINADE:
1 tomato, seeded and coarsely chopped
1/2 red pepper, seeded and coarsely chopped
1/4 cup white onion, peeled and coarsely chopped
1/4 cup white wine vinegar
1/8 cup water
1/4 cup sugar
1 chipotle pepper
CEVICHE:
1 pound jumbo lump crab meet, picked over, just try not to break up the lumps, you've paid good money for the bigger pieces
1 pound fresh shrimp, poached (see recipe below) and chopped into 1" pieces
1 lemon cut into six pieces. Easy peel is fine but you want the shells on for now
1 pound scallops, muscle removed, cut into quarters, if you're using the smaller bay scallops you don't need to quarter them
1 cup lime juice
CHIPOTLE MARINADE:
1 red onion, skinned and minced
Juice of 1 lime or about 3/4 tablespoons lime juice
1/2 bunch cilantro, chopped
1 avocado, chopped for garnish

  • To poach the shrimp: Boil 2 qts of lightly salted water. Add the lemon and shrimp. Turn off the heat, cover and let sit until the shrimp are cooked through, about 3 minutes depending on the size of the shrimps. Place in ice until cool. Peel and clean. Refrigerate until ready to use For Scallops: Combine scallops and 1 c. of lime juice. Refrigerate for about 3 hrs, stirring occasionally until 'cooked' through (The time will vary depending on the size of the scallop pieces) Strain and refresh with ice to firm up. Ceviche: Combine the crab, shrimp and scallops Add in chipotle marinade, red onion, juice of one lime and cilantro. Chill for at least 30 minutes Garnish with avocado and additional cilantro before serving

2 tablespoons agave nectar
3/4 cup yuzu juice
Grated zest and juice of 4 lemons
3 tablespoons olive oil
1 pound fresh jumbo lump crabmeat
1 pint blueberries
1 cup plain popcorn

Steps:

  • In a medium bowl, whisk together the salt, pepper, ginger, garlic, cinnamon, cumin, agave nectar, yuzu juice, lemon zest and juice, and the oil. Using a rubber spatula, carefully fold in the crab and blueberries.
  • To serve, spoon the ceviche into bowls and garnish with a handful of popcorn per serving.

Where I live "fresh" means beef, chicken, or pork. I would put the pork and beef from Nebraska up with any in the nation! Fish can be rather iffy even in the good stores. I had a Mexican friend who made this. It is how he made it and it is really good. By all means, if you have good fresh crab, use it. I do not, so imitation is fine for me.

1 can(s) baby clams, rinsed and drained
8 ounce(s) imitation crabmeat
1/2 cup(s) finely diced carrot
1/2 cup(s) finely diced onion
2-3 - plum tomatoes, chopped
1/2 bunch(es) fresh cilantro, chopped
2-3 - limes, juiced
1 - jalapeno pepper, chopped (use seeds for heat as desired)
- salt and pepper to taste
- tapitio or other hot sauce to taste

Steps:

  • Chop imitation crab meat and clams (if needed). Juice 2 of the limes.
  • Place all ingredients in a bowl and mix well. Chill several hours and adjust seasoning as needed. Add more lime juice if needed. Add more heat if needed (pepper or tapitio).
  • Serve with tostados as an appetizer. Can serve with tortilla chips too.
