4 bone-in chicken breasts
1 1/2 lbs potatoes, cut in chunks
1/2 lb baby carrots
1 cup chopped onion
2 (7/8 ounce) packages dry chicken gravy mix
1 1/2 cups water
1 teaspoon thyme
1 teaspoon minced garlic
1/4 teaspoon sage
1 teaspoon seasoning salt
1 cup sour cream

Steps:

  • Cut chicken breasts in half crosswise.
  • In crockpot, put potatoes, carrots and onions.
  • Top with the chicken.
  • In small bowl, mix gravy mix with the next 5 ingredients until smooth.
  • Pour over chicken.
  • Cover and cook on low for 8 hours.
  • Remove chicken and vegetables.
  • Whisk sour cream into drippings.
  • Serve over chicken.

FRENCH COUNTRY ROAST CHICKEN AND VEGETABLES



French Country Roast Chicken and Vegetables image

2 tablespoons Chopped Fennel fronds
2 slices White sandwich bread (crust removed)
1 Egg
1 Minced shallot
2 cloves Minced garlic
2 tablespoons Chopped parsley
1 teaspoon Fresh marjoram
2 tablespoons Ground mustard
1/4 teaspoon Black pepper
2 sheets Parchment paper
2 Chicken breasts (12 oz each), skin on, boneless
2 Chicken thigh/leg combo (12 oz each), skin on, bone in
2 tablespoons Oil
2 Celery ribs
8 Parsley sprigs
6 Marjoram sprigs
1 Bay leaf
1/2 pound Small red potatoes
1 Fennel bulb, quartered
2 Carrots (chopped in 1/2 inche pieces)
8 Peppercorns
2 Whole garlic cloves
1/4 teaspoon Salt
4 cups Chicken broth
1/3 cup EVOO
6 Cornichon, minced
2 tablespoons Parsley, minced
1 tablespoon Fennel fronds, minced
1 teaspoon Marjoram
2 teaspoons Ground mustard
2 teaspoons Shallot, minced
1/2 teaspoon Lemon zest, grated
2 tablespoons Lemon juice
1/4 teaspoon Black pepper

Steps:

  • 1. Make the Stuffing
  • Pulse sandwich bread in food processor until medium fine breadcrumbs
  • Add egg, parsley, marjoram, shallot, garlic, mustard, and black pepper to food processor. Pulse 8 times until mixed.
  • Add 1 lb ground pork to processor. Pulse until mixed (4-5 pulses)
  • Lay out 2 pieces of parchment paper. Add half of stuffing mixture to bottom third of each. Shape into 8"x2" logs, roll into log, and twist ends of paper to seal. Tie ends with kitchen string.
  • 2. Brown the chicken
  • Pat chicken dry
  • Heat 2 tbsp oil in dutch oven
  • Season chicken with salt and pepper
  • Brown chicken 4-7 minutes on skin side only until brown. Remove to a plate. Put fat out of dutch oven
  • 3. Make bouquet garnis
  • Halve celery ribs crosswise. Stack parsley, marjoram and bay leaf in a tight pile. Encase the pile between celery ribs and tie securely with kitchen string
  • 4. Build the Meal in the Pot and Cook It
  • Add whole potatoes, quartered fennel bulb and chopped carrots to bottom of dutch oven in a single-ish layer.
  • Lay bouquet garnis on top of vegetables
  • Add peppercorns, garlic cloves, salt
  • Add chicken broth to pot, leaving the top 1/2 inch of vegetables uncovered
  • Lay chicken legs on veggies (they will not be covered)
  • Lay stuffing rolls beside legs
  • Lay chicken breasts on top of chicken legs
  • Increase heat to high and bring to a boil
  • Cover dutch oven and place in 300 degree oven until breast meat reaches 160 degrees, about 60-70 minutes
  • 5. Make the Sauce
  • Combine all ingredients in a bowl, whisk, set aside for 15 minutes. EVOO, parsley, marjoram, fennel fronds, cornichon, shallot, mustard, lemon zest, lemon juice, black pepper
  • 6. Remove Ingredients and Serve
  • Remove chicken and stuffing to a plate. Remove all skin from chicken. Carve breasts into thick slices. Separate legs from thighs. Carve stuffing into large slices.
  • Remove veggies to serving platter
  • Strain and defat broth
  • Add stuffing to side of platter beside veggies
  • Add chicken to platter atop veggies and stuffing
  • Sprinkle with parsley and moisten platter with reserved broth
  • Serve into individual bowls, adding more broth and cornichon sauce to each bowl

8 bone-in chicken breast halves (about 2 1/4 pounds)
3 cups cubed potatoes (about 1 1/2 pounds)
3 cups baby carrots (about 1 pound)
1 medium onion, coarsely chopped
2 (1 1/4 ounce) packages chicken gravy mix (size is a guess)
1 cup water
1 teaspoon thyme leaves, to taste
1/4 teaspoon poultry seasoning or 1/4 teaspoon ground sage
1 teaspoon seasoning salt
1 cup sour cream

Steps:

  • Rinse chicken and pat dry.
  • Place potatoes, carrots and onion in slow cooker amd top with chicken, overlapping slightly.
  • Mix Gravy Mixes, water, thyme, poultry seasoning and Season-All in small bowl and pour over chicken and vegetables.
  • Cover and cook for 8 hours on LOW or 4 hours on HIGH until chicken is cooked through and vegetables are tender.
  • Place chicken and vegetables on platter or in large bowl.
  • Whisk sour cream into drippings in slow cooker; pour over chicken and vegetables.
  • IMPORTANT: For best results, do not remove cover during cooking.

4 large garlic cloves, coarsely chopped
2 tablespoons chopped fresh rosemary or 2 teaspoons dried rosemary
2 tablespoons chopped parsley
1 teaspoon salt
1 teaspoon black pepper
1/4 cup olive oil
3 large portabella mushrooms, cut into 1-inch pieces
2 lbs small red potatoes, cut into quarters
4 medium sized carrots, peeled and cut into 1 inch pieces
1 medium sized onion, cut into eighths
6 chicken quarters
2/3 cup chicken broth
1 cup chicken broth

Steps:

  • Heat oven to 400 degrees. Coat 2 large flameproof roasting pans with non-stick cooking spray.
  • In a small bowl, combine the chopped garlic, rosemary, parsley, salt, pepper and oil.
  • In a large bowl, toss mushrooms, potatoes, carrots and onion with 2 tablespoons herb mixture. Spoon into roasting pans, dividing equally between the two.
  • Brush remaining herb mixture over chicken pieces. Place chicken, skin side up in pans and arrange the vegetables around them.
  • Bake in 400-degree oven for 45 minutes. Then add 1/3-cup chicken broth to each roasting pan. Baste the chicken with pan juices. Continue to bake for 15 minutes longer.
  • Remove the chicken and vegetables to a serving dish, keep warm.
  • Place one pan over medium heat on stovetop. Add cup chicken broth. Bring to a simmer, scraping up any browned bits from bottom of pan, pour through strainer to a small bowl. Repeat with remaining roasting pan and chicken broth.
  • Pour pan juices over chicken and vegetables and serve.

1 chicken (cleaned), 4 1/2 pounds
For the filling or sauce
10 1/2 ounces butter
1 shallot
7 ounces white mushrooms
1 bunch of Italian parsley
1 bunch of chervil
sprig of tarragon
Chives
1 head of garlic
4 cups of chicken juices
Salt and freshly ground pepper
For onions
12 white onions (average size)
1 tablespoon of ricotta
1 tablespoon of parmesan
1 tablespoon of chopped Italian parsley
1 small stick of celery
2 tablespoons of grilled pine nuts
1 tablespoon of salted pork fat
2 tablespoons of roasted chicken juices
A little chopped sage
Olive oil
Salt & white pepper
For tomatoes
16 ripe tomatoes
20 tomato quarters confit (remove the pips and interior)
4 white onions (not too big)
1 tablespoon of chopped parsley
1 tablespoon of ground basil
1 tablespoon of grated parmesan
2 tablespoons of chicken juices
4 cloves of garlic (unpeeled)
1 sprig of thyme
1 sprig of rosemary
Olive oil
Salt & pepper

Steps:

  • Start chicken:
  • Cream 7 oz of butter. Chop the herbs (3/4 of the parsley, 3/4 of the chervil, the sprig of tarragon) and mix with the creamed butter. Keep just the tips of the remaining parsley and chervil.
  • Clean the white mushrooms and dice (quite small), bake them slowly in butter, and add to the herbed butter along with the finely sliced shallots. Season with pepper and salt.
  • Lift the skin slightly from the chicken, without tearing it, and spread the herbed butter underneath. Be careful afterwards to ensure that the skin covers the meat so that it does not dry out during cooking.
  • If you do not have a spit you can cook the chicken in the oven at 350#&176;F for about 1 1/4 hours. When the chicken is 3/4 cooked, deglaze with chicken juices.
  • When cooked, sieve the cooking juices and add the chervil and parsley. This will be used later on.
  • Make onions:
  • Peel and wash about 8 white onions; remove the top of the onions (about 1/4 of onion if it is small or 1/3 if it is large, these lids will be used later on), and empty the middle of the onions with a spoon (keep two or three layers of onion).
  • Dice the other onions finely with the spooned out interiors. Sweat the onions in olive oil until they are lightly golden, adding salt and pepper. Cut the celery stick into very small pieces, and crush the grilled pine nuts with a knife (you can grill them in the grill or oven).
  • Away from the heat mix the sweated onions, diced celery, pine nuts, ricotta, the salted pork fat, sage, parmesan, chopped parsley, salt, and pepper.
  • Stuff the onions (replace the tops on the onions before cooking) and put them on a baking sheet, drizzle with olive oil and cook in the over preheated to 356°F for near 1/2 hour. Be careful not to burn them, if you think there is a risk of burning cover them with kitchen foil. Baste the onions regularly in their juices as this will make them really tasty and fondant (slightly melted). When the onions are cooked, coat them with chicken juices, add freshly ground pepper and serve.
  • Make tomatoes:
  • Cut the top off 8 tomatoes (about 1/3 of the tomato) and keep the stalk part to use as a cover on the stuffed tomatoes. Salt and pepper the interior of the tomatoes and leave upside down on a baking sheet to drain out excess water. This will give you a more solid tomato and it will avoid excess liquids in the stuffing.
  • Remove the skin from the remaining tomatoes (leave them a few seconds in boiling water); cut into quarters and remove the insides.
  • Chop the tomato confit into roughly diced sized pieces.
  • In a cast iron pot, heat the olive oil with the unpeeled garlic cloves, add the peeled and emptied tomatoes, rosemary sprig, salt, and pepper and leave to cook in a hot oven (390°F) until you obtain a fondant marmalade appearance.
  • Once the marmalade is cooked and cooled, remove the garlic cloves, thyme, and rosemary, then add the finely chopped white onions and sweat with olive oil.
  • Mix together the chopped tomatoes confit, parsley, grated parmesan, and chopped basil. Drizzle with a little olive oil, and check the seasoning, you may have to add a little salt and pepper.
  • Stuff the tomatoes with both mixtures and cover with the tomato stalk tops, then place them in a gratin dish and sprinkle with olive oil. Place in an oven, preheated to 350°F, for half an hour. Sprinkle regularly with olive oil and the roasted chicken juices.
  • Serve the tomatoes and onions on the plate, carve the chicken and coat with the jus. Add a little freshly ground pepper and drizzle with chives cut lengthwise.
  • You can add other vegetables, such as artichokes cooked whole (cooked barigoule style) then stuffed with olive tapenade, braised with the tomatoes in the oven with the chicken juices.
  • A few croutons rubbed with garlic and pan-fried are perfect to finish the dish.

1/2 to 1 cup homemade Chicken Broth, or store-bought
4 cloves garlic (large), finely chopped
2 tablespoons chopped fresh flat-leaf parsley
2 tablespoons chopped fresh rosemary
1/4 cup olive oil

1 (10-ounce) package white mushrooms halved or quartered if large
6 medium boiling potatoes, peeled and cut into eights
2 medium carrots, cut into 1-inch chunks
1 medium onion, cut into eights
1 chicken (about 3 1/2 pounds), cut into 8 serving pieces

Steps:

  • 1 Prepare the chicken broth, if necessary. Place a rack in the center of the oven. Preheat the oven to 450°F. Choose a baking pan large enough to hold all of the ingredients in a single layer, or use two pans. Oil the pan or pans. 2 Place the garlic, parsley, and rosemary in a small bowl and mix with the oil. Add salt and pepper to taste. 3 Scatter the mushrooms, potatoes, carrots, and onions in the pan. Add half the herb mixture and toss well. Brush the remaining herb mixture over the chicken pieces. Place the chicken skin-side up in the pan, arranging the vegetables around them. 4 Bake for 45 minutes. Baste the chicken with the pan juices. If the chicken seems dry, add a little of the chicken broth. Continue to bake, basting occasionally, 15 minutes more, or until the chicken juices run clear when pierced in the thickest part of the thigh with a knife and the potatoes are tender. If the chicken is not brown enough, run the pans under the broiler for 5 minutes or until the skin is browned and crisp. 5 Transfer the chicken and vegetables to a serving platter. Tip the pan and skim off the fat with a large spoon. Place the pan over medium heat. Add about 1/2 cup of the chicken broth and scrape the bottom of the pan. Bring the juices to a simmer and cook until slightly reduced, about 5 minutes. 6 Pour the juices over the chicken and vegetables and serve immediately. From "1,000 Italian Recipes." 1/2 cup butter or margarine, melted
2 teaspoons salt
1 cup chicken broth or bouillon*
Few drops of hot pepper sauce
6 potatoes new, scrubbed and cut in half if large
6 carrots cut in 2-inch pieces
12 onions small onions, peeled, or 1 package (16 oz.) frozen small thawed
1/2 pound mushrooms large fresh
1/2 cup celery sliced
2 tablespoons water cold
1 tablespoon cornstarch

Steps:

  • Place oven rack in lowest position. Remove all fat from body cavity. Tie legs and tail together and place chicken on a rack in broiler pan. Broil for 20 to 30 minutes, basting frequently with butter or margarine and turning until browned all over. Place chicken, breast-side up, in a Dutch oven.Sprinkle chicken with salt. Add broth or bouillon, drippings from broiler pan and hot pepper sauce to Dutch oven. Cover and simmer over low heat for 45 minutes. Baste chicken.Layer around chicken the potatoes, carrots, onions and mushrooms sprinkle top with celery.Cover and bake in a preheated 350° oven for 1 hour or until chicken and vegetables are tender. Remove chicken and place on a warm platter. Surround with vegetables cover and keep warm.In a small bowl or cup, mix cold water and cornstarch until smooth. Stir into cooking liquid. Stirring over medium heat, bring to a boil and boil for 1 to 2 minutes or until thickened.
