Found this in a Pillsbury Pot Pie recipe book. OMG this is good! Great for breakfast or brunch. I am listing the entire recipe for 8 people, but since it was just two of us I cut the recipe in half. Great way to get rid of leftover ham!

3 tablespoons vegetable oil
1 (20 ounce) bag refrigerated shredded hash browns
1 cup shredded cheddar cheese or 1 cup swiss cheese
8 eggs
1 tablespoon fresh chives
1/2 teaspoon salt or 1/2 teaspoon salt substitute
1/4 teaspoon ground pepper
1 1/2 cups cubed cooked ham
3 ounces cream cheese, cut into small cubes
1 (8 count) Pillsbury Refrigerated Crescent Dinner Rolls

Steps:

  • Heat oven to 375. Spray an 11x7 inch glass baking dish (2 Quart) with cooking spray. Cook hashbrowns according to the directions on the package. Remove hashbrowns and arrange in the bottom and around sides of casserole dish. Sprinkle cheese over potatoes.
  • In a bowl beat eggs. Stir in chives salt pepper and ham. Cook and stir over medium heat until partially cooked. Stir in cream cheese, cook and stir until eggs are cooked but moist. Spred over cheese and potatoes.
  • Seperate crescent rolls into triangles and roll half way. Arrange over eggs with tips in the center.
  • Bake 20-25 minutes or until crust is golden brown.

1 pkg jimmy dean sausage any flavor
9 inch pie shell
1 1/2 c grated swiss chees
1/4 c chopped green bell peppers
1/4 c chopped red bell peppers
2 Tbsp onion
4 eggs lightly beaten
1 cup light cream

Steps:

  • 1. Cook sausage until done. Crumble, then drain. Prepare 9" pie shell. Mix cheese and cooked sausage. sprinkle in pie shell.
  • 2. Lightly beat the eggs in a bowl. Combine remaining ingredients and add to egg mixture. Pour in shell. Bake at 375Degrees for 40-45 minutes. Cool on rack 10 minutes.

1 cup shredded Swiss cheese (4 oz)
8 eggs
1 tablespoon chopped fresh chives
1/2 teaspoon salt
1/4 teaspoon freshly ground pepper
1 1/2 cups cubed cooked ham (8 oz)
1 package (3 oz) cream cheese, cut into small cubes
1 can (12 oz) Pillsbury® Big & Buttery refrigerated crescent dinner rolls

Steps:

  • Heat oven to 375°F. Spray 11x7-inch (2-quart) glass baking dish with cooking spray. In 12-inch nonstick skillet, heat 2 tablespoons of the oil over medium-high heat. Spread potatoes in skillet; cook until golden brown on bottom.
  • Drizzle potatoes with 1 tablespoon oil. Cut into quarters; turn sections over. Cook until golden brown. Remove hash browns from skillet; arrange in bottom and around side of casserole. Sprinkle Swiss cheese over potatoes.
  • In bowl, beat eggs. Stir in chives, salt, pepper and ham. Pour into same skillet. Cook and stir over medium heat until partially cooked. Stir in cream cheese; cook and stir until eggs are cooked but moist. Spread over Swiss cheese.
  • Separate dough into triangles. Starting at short side of each triangle, roll up halfway. Arrange over hot egg mixture with tips toward center; do not overlap.
  • Bake 20 to 25 minutes or until crust is golden brown.

A friend gave me this recipe I use to fix it often when our church met for Tue and Thur morning breakfasts. Of course I normally had to make a couple of them.

1 frozen pie crust
8 ounces pork sausage, browned and Drained
1 cup frozen southern style hash brown potatoes, thawed
1/4 cup sliced green onion
1/4 cup red pepper, chopped
1/4 cup sharp cheddar cheese, Shredded
4 large eggs
1/4 cup milk
1/4 teaspoon seasoning salt
1/4 teaspoon fresh coarse ground black pepper

Steps:

  • Preheat oven to 375°F.
  • Place crust on baking sheet.
  • Sprinkle sausage around bottom of crust.
  • Top with potatoes, onions, bell peppers and cheese.
  • Beat eggs, milk, salt and pepper until blended; pour over sausage-potato mixture in crust.
  • Bake 30 minutes or until egg mixture is cooked and crust is lightly browned.
  • Sprinkle with additional cheese and peppers, if desired.
  • Makes 6 servings.

1 pound sausage any flavor
1 9 inch pie shell
1 1/2 cups Swiss cheese, grated
1/4 cup red or green pepper, chopped
2 teaspoons onions, chopped
4 eggs, lightly beaten
1 cup light cream

Steps:

  • Spray 9 x 13 inch pan with Pam. Layer in order. Set at least 8 hours or overnight. Can be frozen. Better if you let it set and freeze unbaked. Bake at 350 degrees for 45 minutes to 1 hour. Makes great holiday breakfast!
