4 baking (russet) potatoes, sliced into 3/8-inch thick rounds
salt and freshly ground black pepper to taste
1 pinch cayenne pepper, or to taste
1 pinch herbes de provence, or to taste
2 tablespoons olive oil

Steps:

  • Preheat oven to 425 degrees F (220 degrees C).
  • Line a baking sheet with parchment paper or a silicone baking mat and set aside.
  • Combine potatoes, salt, ground black pepper, cayenne pepper, and herbes de provence in a large bowl. Drizzle olive oil over potatoes and stir to evenly coat.
  • Place potatoes on baking sheet, spaced evenly, and bake in the preheated oven for 15 minutes.
  • Remove from oven, flip over each potato slice, and return to the oven for another 15 minutes. Continue cooking and flipping until potatoes are well browned, about 30 minutes. Potatoes should be crispy around edges, but still soft in the center.

6 bone-in pork loin chops (1 inch thick and 7 ounces each)
1 tablespoon olive oil
1/2 teaspoon seasoned salt
1 cup cheese dip
1/2 cup 2% milk
4 cups frozen cottage (waffle) fries
1 can (2.8 ounces) french-fried onions, divided
4 cups frozen broccoli florets

Steps:

  • In a large skillet, brown pork chops in oil; sprinkle with seasoned salt. In a small bowl, combine cheese sauce and milk until blended. , Spread into a greased 13x9-in. baking dish. Top with cottage fries and half of the onions. Layer with broccoli and pork chops., Cover and bake at 350° for 45 minutes. Sprinkle with remaining onions. Bake until a thermometer reads 160°, 10 minutes longer.

These are very easy to make and a great side dish. Crunchy and healthier then deep frying.

4 medium russet potatoes peeled and sliced 3/8 inch thick
1 tsp salt
1/2 tsp pepper and cayenne pepper
1 Tbsp herbs de provence
3 Tbsp olive or canola oil

Steps:

  • 1. Place potatoes in a bowl. Drizzle the oil over and sprinkle all the seasonings on them mixing to try to coat as evenly as you can.
  • 2. Preheat oven 425 degrees. Use a slip mat or parchment paper. Lay the potatoes in a single layer on paper. Will have to use probably two large baking sheets.
  • 3. Bake until browned probably 15 minutes or so. Flip and bake until other side is browned.

  • Preheat oven to 400 degrees F (200 degrees C). Grease a baking sheet.
  • Place potatoes, vegetable oil, Parmesan cheese, curry powder, paprika, salt, and garlic powder in a resealable plastic bag; shake to coat. Spread seasoned potatoes over prepared baking sheet.

1 large baking potato
olive oil, salt and pepper

Steps:

  • 1. Scrub potato, cut into wedges.
  • 2. Soak potato slices in hot water for 10 minutes or cold water for 1 hour.
  • 3. Pat potatos dry. Lightly oil and sprinkle with salt and pepper. You can use spray oil too!
  • 4. Preheat over to 475 degrees. Cover fries with foil and bake for 5 minutes.
  • 5. Uncover and continue cooking for 15 minutes. Turn potatos over and cook for an additional 15 minutes.

6 potatoes, cut into 1/2-inch cubes
2 tablespoons olive oil, or to taste
1 cup grated Parmesan cheese
2 cloves garlic, chopped, divided
2 tablespoons butter
salt and ground black pepper to taste
1 pinch garlic and herb seasoning blend (such as Mrs. Dash®)
12 large mushrooms, quartered
3 Roma tomatoes, diced
1 green bell pepper, cut into large chunks
1 slice onion

Steps:

  • Preheat oven to 450 degrees F (230 degrees C). Grease a 10x15-inch glass baking dish.
  • Spread potatoes into the baking dish; drizzle olive oil on top. Sprinkle Parmesan cheese and 1 garlic clove over potatoes.
  • Roast in the preheated oven for 25 minutes.
  • Melt butter in a large skillet over low heat; season with 1 garlic clove, salt, pepper, and garlic-herb seasoning. Add mushrooms, tomatoes, bell pepper, and onion. Cook and stir until softened, about 5 minutes.

1 large onion sliced into rings
1 stick butter
8 oz sour cream
1 pkg onion soup mix
8 oz cracker barrel sharp cheddar cheese
8 oz cracker barrel vermont sharp cheddar cheese

Steps:

  • 1. Add butter to large skillet. Fry the potatoes and onion until browned and softened.
  • 2. Mix the sour cream with the onion soup mix. Add the cheeses and pour over potatoes. cook until cheese is a melted.

COTTAGE FRIES

Well seasoned and flavorful, these tasty potatoes are perfect with barbecued proteins... an amazing side dish recipe!

Number Of Ingredients 11

2 medium yukon gold potatoes, scrubbed and sliced into 3/8-inch thick rounds
1 Tbsp white vinegar
1 Tbsp olive oil (substitute with infused oil such as rosemary)
1 Tbsp bacon fat
1 Tbsp freshly squeezed lemon juice
1/2 Tbsp herbes de provence, or to taste
1/2 tsp garlic salt
1/4 tsp hot paprika, or to taste
1/4 tsp ground himalayan sea salt, or to taste
1/4 tsp freshly ground black pepper, or to taste (i always use mixed peppercorns)
1 Tbsp fresh chopped parsley, for garnish

Steps:

  • 1. Preheat oven to 450ºF and line a baking sheet with foil; set aside.
  • 2. Fill up a large bowl with very cold water and add white vinegar. Stir well before adding the potato slices. Swirl them around and let them sit for 20 minutes.
  • 3. Drain them in a colander and pat them dry with paper towels.
  • 4. Transfer to a large bowl and pour on oil, bacon fat and lemon juice. Season the potato slices with Herbes de Provence, garlic salt, hot paprika, ground sea salt and black pepper. Toss everything until the slices are well coated.
  • 5. Spread them evenly in a single layer on the prepared baking sheet. Transfer to the preheated oven and bake for 1 hour, flipping them every 15 minutes.
  • 6. Remove from the heat and transfer the slices to a plate lined with paper towels to absorb any excess oil before sprinkling with chopped parsley.
