Earl's Warm Potato Salad With Roast Corn and Bacon image

I can barely keep this potato salad in the bowl. Delicious hot or cold and easy to make. Perfect for summer bbqs!

3 -4 lbs baby potatoes
2 cups corn (frozen or canned)
1/2 red onion, medium dice
3 -5 garlic cloves, lightly smashed
1/2 lb bacon, crumbled
1/4-1/3 cup parmesan cheese
1/3 cup sour cream
1/3 cup mayonnaise
1 teaspoon horseradish
2 tablespoons lemon juice
1 tablespoon dill
salt
fresh pepper
olive oil

Steps:

  • Preheat oven to 425.
  • Dice potatoes in salad size pieces. Put them in a single layer on a cookie sheet.
  • Spread corn evenly over potatoes.
  • Spread chopped onions over potatoes.
  • Lightly smash garlic distribute cloves evenly through potatoes.
  • Drizzle liberally with olive oil and salt and pepper.
  • Toss to combine.
  • Roast until potatoes are cooked and crisp.
  • Cook and chop or crumble bacon, put aside.
  • Combine mayonnaise, sour cream, horseradish, lemon juice, dill, Parmesan cheese and salt (keep in mind bacon will add salt and potatoes have been seasoned) and pepper to taste.
  • After roasting with the potatoes remove garlic cloves. Mash them into a paste and add to dressing.
  • Toss roast potatoes, corn, bacon and dressing together. Serve warm. Leftovers are delicious cold!

This is a great recipe that I've modified over the years. The flavors are terrific and the ingredients and ratios are very flexible. Adapt to make it your own specialty. Great for picnics and pot lucks. This recipe is very flexible. It is a great, clean-out-the-refrigerator kind of dish. It also stores well and actually tastes better the next day. Serve warm or chilled.

5 ears corn, shucked
2 teaspoons olive oil
3 slices bacon, chopped
½ pound Yukon Gold potatoes, cut into 1/2-inch cubes
1 red bell pepper, cut into cubes
salt to taste
1 small red onion, thinly sliced
1 tablespoon cider vinegar
½ teaspoon red pepper flakes, or more to taste

Steps:

  • Bring a large pot of lightly salted water to a boil. Add the corn and cook until slightly soft but still crisp, about 5 minutes. Cut corn kernels from the cobs; discard cobs.
  • Heat olive oil in a large skillet over medium heat. Cook and stir bacon in hot oil until browned and crisp, 5 to 10 minutes. Transfer bacon to a paper towel-lined plate to drain, reserving drippings in the skillet.
  • Cook potatoes, stirring occasionally, in the same skillet over medium heat until potatoes are golden brown, about 5 minutes. Add red bell pepper and salt; cook and stir until peppers are tender, about 5 minutes more.
  • Stir corn kernels into potato mixture and cook until corn is heated through, about 5 minutes.
  • Pour corn-potato mixture into a large bowl. Add bacon, red onion, cider vinegar, and red pepper flakes; toss to combine.

Bacon, Arugula, Tomato and Roasted Corn Salad image

3 thick slices bacon, cut crosswise into lardons (1/2-inch chubby pieces)
3 ears corn, shucked
2 pounds mixed colors and sizes heirloom tomatoes
Kosher salt and freshly ground black pepper
1 healthy-size sprig fresh thyme
4 teaspoons white wine vinegar
1 tablespoon Dijon mustard
3 tablespoons extra-virgin olive oil
6 cups baby arugula or other baby lettuces (about 8 ounces)

Steps:

  • Preheat the oven to 450 degrees F.
  • Put the bacon in a small skillet and cook over medium heat until rendered and just crisp and not black, about 8 minutes. Transfer to a paper towel to drain. Reserve some of the bacon fat.
  • Brush the corn lightly with the bacon fat and put on a baking sheet. Roast the corn, turning once or twice, until the some of the kernels get a little burnished, 15 to 20 minutes. Cool. (Alternatively, the corn can be cooked on a hot grill for about 10 minutes).
  • Dice and chunk up the tomatoes - it's kind of great if they aren't all uniform. Put the pieces into a big salad bowl and season with salt and pepper. Don't be shy - tomatoes come alive with salt and pepper. Strip the leaves off the thyme sprigs right into the tomatoes. Toss together lightly and set aside to get juicy.
  • Whisk the vinegar, mustard, 1/4 teaspoon salt and some pepper in bowl. Gradually whisk in the olive oil to make a smooth dressing.
  • Slice the kernels off the cobs add to the salad with the bacon. Add the arugula, season with salt and pepper and toss lightly to combine. Serve.

3 ears fresh corn, unhusked
2 large red bell peppers
2 pounds 1 1/2- to 2-inch-diameter unpeeled red-skinned potatoes (about 24), quartered
4 thick bacon slices, cut into 1/2-inch pieces
1/2 cup extra-virgin olive oil
3 tablespoons Sherry wine vinegar
1/3 cup crumbled blue cheese
1 cup chopped green onions
3 tablespoons chopped fresh oregano

Steps:

  • Prepare barbecue (high heat). Grill corn until husks are blackened on all sides, turning occasionally, about 15 minutes. Cool 15 minutes. Remove husks and silk. Cut kernels from cobs.
  • Cut 1/2 inch from top and bottom of each pepper. Quarter each pepper lengthwise. Trim ribs and seeds from peppers. Flatten pieces, breaking slightly, if necessary. Place peppers on grill, skin side down. Grill without turning until skins are blackened and blistered, about 10 minutes. Cool 10 minutes. Peel peppers; cut into 1/2-inch squares.
  • Cook potatoes in large pot of boiling salted water until tender, about 12 minutes. Drain; let cool 5 minutes in strainer. Transfer to large bowl.
  • Sauté bacon in medium skillet over medium heat until crisp. Using slotted spoon, transfer bacon to paper towels.
  • Whisk oil and vinegar in small bowl to blend. Season dressing with salt and pepper. Drizzle 1/4 cup dressing over potatoes; toss to coat. Add corn, bell peppers, bacon, cheese, onions, oregano, and 3 tablespoons additional dressing; toss to coat. Season salad with salt and pepper. Add remaining dressing by tablespoonfuls to moisten, if desired. Serve warm or at room temperature.

6 slices bacon
1 lb gemelli pasta (corkscrew Pasta)
3 ears corn
1 (8 ounce) jar sun-dried tomatoes, Packed In Oil
1 garlic clove, Crushed And Minced
3 tablespoons parmesan cheese, grated

Steps:

  • Place bacon strips on a large skillet, place the skillet on the stovetop, and then turn the heat on medium-high. Cook the bacon until it starts to crisp up and then flip to cook the other side. Remove the bacon and place it on a paper towel-lined plate. Break the bacon into bite-sized pieces once it cools slightly.
  • When the bacon is about half-cooked, start boiling water in a medium-large pot. Once the water comes to a boil, add your pasta and cook until it is just al dente (8-10 minutes for dry pasta).
  • While the bacon cooks and the water boils, cut the corn off the cob and prepare the sun-dried tomato sauce. Roughly chop the sun-dried tomatoes, then add the tomatoes and the oil from the jar to the bowl of a food processor. Add the garlic and parmesan cheese and then process the ingredients until the tomatoes are finely chopped.
  • After the bacon has cooked, add the corn to the bacon grease (you can drain some of the oil) and cook for about 3-4 minutes, just enough to lightly cook the corn.
  • When the pasta has finished cooking, drain it, then add it to the skillet with the corn. Add the bacon and the sun-dried tomato sauce and stir well to coat the pasta with sauce. Finally, add some diced fresh mozzerella and fresh basil.

Lobster Chopped Salad with Fava Beans, Cherry Tomatoes, Avocado, Corn, and Applewood-Smoked Bacon image

When I was growing up, my mom and sister were obsessed with lobster. My father and I just never got it. But on both their birthdays, my father would take us all to the chosen lobster spot of the moment. While Jessica and my mom happily cracked their way through dinner, hardly glancing up from their plates, Dad and I would glumly saw through our landlubber specials. I admit I felt a little envious watching Jessica and Mom picking apart their matching dinners, knowing that I would never have that lobster bond with my mother. Normally, my mother prefers her lobster plain and simple-steamed and served with lemon and drawn butter. But one Mother's Day, I took liberty, hoping to entice her with this rendition of a classic chopped salad. It worked; while we're still on opposite sides of the table at the lobster shack, we both get excited about this salad.

Number Of Ingredients 14

2 live Maine lobsters, 1 3/4 to 2 pounds each
10-ounce slab applewood-smoked bacon
1/3 cup plus 1 tablespoon extra-virgin olive oil
1 1/2 cups fresh corn (from about 2 ears)
1 teaspoon thyme leaves
2 tablespoons finely diced shallots
3 tablespoons lemon juice
Pinch cayenne pepper
2 ripe avocados
3/4 pint cherry tomatoes, mixed colors if possible
1 large head butter lettuce, leaves separated, cleaned, and dried
2 tablespoons chopped flat-leaf parsley
2 tablespoons sliced green and opal basil
Kosher salt and freshly ground black pepper

Steps:

  • Bring a large pot of water to a boil over high heat.
  • Insert the tip of a large chef knife just below the eyes of each lobster-this will kill them instantly. Add the lobsters to the pot of boiling water, making sure they are completely submerged. Cook the lobsters 10 minutes, and then remove them immediately to a bowl of ice water.
  • When the lobsters have cooled, twist off the tails and claws from the bodies. Save the bodies for another use, or discard.
  • Place the tails on their sides, and crush gently with the heel of your hand to break open the shells. Carefully pull out the tails. Cut the tails in half lengthwise, and remove the intestinal tract and any green tomalley. Cut each half crosswise into six or seven pieces.
  • Use the back of a large not-precious knife to break open the shell on the claws. Remove the claw meat, and cut each claw into three or four pieces. Carefully crack the shells of the knuckles and remove the meat. You should have about 12 ounces of lobster meat total.
  • Slice the bacon into 3/8-inch-thick slices. Arrange the bacon strips in two stacks, then cut the strips crosswise into 3/8-inch even-sided rectangles or lardons. Heat a large sauté pan over medium heat for 1 minute. Swirl in 1 tablespoon olive oil, add the bacon, and cook about 5 minutes, stirring frequently, until the bacon is tender and lightly crisped. Using a slotted spoon, remove the bacon to a plate lined with paper towels. Reserve the fat in the pan.
  • Return the pan to medium-high heat. Add the corn, thyme, 1/4 teaspoon salt, and a pinch of black pepper. Sauté over medium heat 3 to 4 minutes, until the corn is just cooked and tender. Remove to a platter or baking sheet to cool.
  • While the corn is cooling, make the vinaigrette: Place the shallots, lemon juice, and 1/4 teaspoon salt in a small bowl, and let sit 5 minutes. Whisk in the 1/3 cup olive oil and a pinch of cayenne. Taste for balance and seasoning.
  • Cut the avocados in half lengthwise. Remove the pit and peel. Dice the avocados into 1/2-inch cubes and season with 1/4 teaspoon salt. Slice the cherry tomatoes in half, and season with 1/4 teaspoon salt.
  • Place the lobster, corn, avocados, tomatoes, and bacon in a large salad bowl. Toss with 5 tablespoons vinaigrette and taste for seasoning, adding a little more vinaigrette if you like. Place the lettuce leaves on a large chilled platter and spoon a little vinaigrette over them. Toss the parsley into the lobster salad, and arrange it over the lettuce. Scatter the basil over the top.
  • You can boil and prepare the lobsters, make the vinaigrette, and sauté the bacon and corn ahead of time. Prepare the avocado and tomatoes just before serving.

GRILLED CORN AND BACON SALAD

-8 stalks of fresh corn
-1 package of thick cut bacon (or a slab if you want to cut yourself) I highly recommend the bacon from gratefulpalate.com
-1 white onion
-salt and pepper
-Rice Wine vineger
-1 can of chipotle peppers in adobe sauce

Steps:

  • 1. Soak corn in water (10 minutes to an hour) 2. Grill corn (in husks) on the BBQ at medium.. Takes about 10-15 minutes. Turn while cooking 3. Take grilled corn and put into a brown paper bag and let it sit for a while (20 minutes at least or it is to hot to cut) 4. Once corn is manageable, cut off alls the corn into a large bowl. Allow corn to cool to room temperature. 5. Cook slabs of bacon (your choice in oven or in pan) until done (not overly crispy) 6. Dice onion and cook in reserved bacon greese til translucent (or carmalized if you prefer). 7. When onions are close to finished, open the can of chipotles and pour in the sauce from the can. (Unless you like extremely spicy food, avoid putting in actual pepper). 8. Mix bacon, onion mixture and corn together in a bowl. 9. add a little rice wine vineger and some salt & pepper 10. Serve when ready.

4 ears corn, husks and silks removed
6 strips bacon
1 red pepper, finely diced
1 large avocado, diced
¼ cup fresh cilantro, chopped
juice squeezed from 2 limes
salt and pepper, to taste

Steps:

  • Cut the kernels off the ears of corn and set aside. Heat a large skillet over medium heat. Add the strips of bacon to the skillet and cook on both sides until the bacon is crisp, 6-8 minutes. Transfer to a paper towel-topped plate to cool. Drain off all but about 1 Tablespoon of bacon fat from the skillet and put it back on the stove over medium heat. To the hot skillet, add the corn kernels, and leave them without stirring until they start to sizzle, 1-2 minutes. Continue cooking the corn, stirring occasionally, until it is cooked through and most kernels have started to brown in spots. Transfer to a large bowl. Refrigerate the corn until cool, at least 30 minutes. Just before serving, combine the corn, red pepper, avocado, cilantro, and lime juice. Crumble the cooked bacon over the top and toss gently. Season with salt and pepper, to taste. Not a red pepper fan? Tomatoes would be a great substitute for the red peppers in this recipe.
