WATERMELON FETA SPINACH SALAD



Watermelon Feta Spinach Salad image

Number Of Ingredients 7

4 cups baby spinach, 4 ounces
1 1/2 pounds bite sized cubes seedless watermelon, 4-6 cups depending on the size of the cubes
1/2 small red onion, slivered, 1 ounce
1 cup feta cheese, cut into cubes or crumbled, 2 ounces
1 small bunch of basil, chopped
Olive oil and reduced balsamic for drizzling
Finishing sea salt for sprinkling

Steps:

  • Mound the baby spinach onto individual plates and top with the watermelon, red onion, feta cheese, and chopped basil. Or you can toss them altogether in a large serving bowl.
  • Drizzle with the olive oil of your choice and reduced balsamic vinegar. You can also use regular balsamic but the flavor won't be quite as rich.
  • Sprinkle each plate with a small amount of the finishing salt.
  • Serve immediately.
  • If you're using one serving bowl, toss the salad before serving with a sprinkling of the finishing salt thrown in.

1/3 cup olive oil
1/4 cup red wine vinegar
1 teaspoon Dijon mustard
1 teaspoon honey
1 teaspoon dried oregano
Kosher salt and freshly cracked black pepper
1 cup crumbled feta
1/2 cup toasted pistachios, roughly chopped
8 cups baby spinach
2 cups cubed watermelon

Steps:

  • For the oregano vinaigrette: In a medium bowl, whisk together the olive oil, vinegar, Dijon, honey, dried oregano and some salt and pepper to combine.
  • For the salad: Set aside 2 tablespoons each of the feta and pistachios for serving, then add the remaining feta and pistachios to a large bowl. Add the spinach and watermelon, drizzle over the dressing and toss to coat. Transfer to a serving bowl and garnish with the reserved feta and pistachios.

1 Persian cucumbers (sliced)
½ small red onion (thinly sliced)
4 ounces crumbled feta cheese
2 tablespoons chopped fresh mint leaves (plus more for garnish)
¼ cup extra-virgin olive oil
3 tablespoons lime juice
1 tablespoon honey
½ teaspoon Kosher salt
¼ teaspoon freshly cracked black pepper

Steps:

  • Place the watermelon in a large bowl. Add the cucumbers, red onions, feta cheese and mint leaves around the watermelon.
  • In a small bowl, whisk together olive oil, lime juice, honey, salt and black pepper.
  • Pour the dressing over the salad ingredients and toss gently to combine.
  • Garnish with more fresh mint leaves, and serve cold.

4 tablespoons olive oil
1 tablespoon honey
1 tablespoon balsamic vinegar
2 tablespoons fresh lemon juice
1/4 cup finely diced shallot
1 teaspoon peeled and grated ginger
2 cups watermelon balls
3 cups fresh spinach
2 tablespoons of fresh mint or 2 tablespoons basil
1/2 cup feta cheese
salt & pepper

Steps:

  • To make the dressing, combine olive oil, honey, balsamic vinegar, lemon juice, shallots and ginger. Mix well and place in the refrigerator in a sealed container for later.
  • When ready to serve, prepare the salad by combining the watermelon, spinach, herbs and feta cheese. Add the dressing to taste. Toss and then add salt/pepper to taste. Serve right away.

100g quinoa
2 tbsp pumpkin seeds
½ small watermelon , skin and seeds removed, cut into chunks
80g baby spinach
1 ripe avocado , peeled and sliced
½ small pack mint , finely chopped
50g feta , crumbled
juice 1 lime
1 punnet salad cress

Steps:

  • Rinse the quinoa, then put it in a pan with a fitted lid and cover with 200ml water. Cook, covered, over a medium heat for 15 mins or until fluffy and the water has been absorbed. Don't worry if it catches on the bottom at little. Fork through to separate the grains , then leave to cool.
  • Meanwhile, heat a frying pan over a medium heat and toast the pumpkin seeds for 1 min or until they start to pop. Tip into a serving bowl or on a platter with the watermelon, spinach, avocado, mint and feta. Toss through the quinoa , then squeeze over the lime juice with a pinch of seasoning. Top with the cress and serve.
