GREEN GAZPACHO SOUP SHOOTERS

Cucumbers are the star in this simple chilled soup, which is just as refreshing as its tomato-based cousin.

3 large cucumbers, peeled and cut into 1/2-inch chunks
1 tablespoon red wine vinegar
1 teaspoon sugar
Kosher salt
1/3 cup sliced, skin-on almonds
3 tablespoons extra-virgin olive oil
1 small garlic clove, chopped
1/2 small bunch parsley, leaves roughly chopped

Steps:

  • Toss the cucumber, vinegar, sugar and 2 teaspoons salt in a medium bowl and set aside at room temperature, tossing occasionally, until juicy, about 30 minutes.
  • Meanwhile, put the almonds in a large skillet and heat over medium, swirling them around until golden and toasted in spots, about 3 minutes. Set aside to cool.
  • Add the oil and garlic, the cucumber mixture along with any collected juices, 6 ice cubes and all but 2 tablespoons each of the almonds and parsley to a blender. Blend on high until very smooth. Refrigerate until chilled, about 2 hours.
  • Pour into 2-ounce shot glasses. Sprinkle each with the reserved almonds and parsley.

1 English cucumber (about 1 pound), cut into chunks
1 scallion, white and green parts, coarsely chopped (about 1/4 cup)
3 tablespoons chopped fresh dill, plus sprigs for garnish
Salt and freshly ground black pepper
1 medium tomato (about 5 ounces), seeded and diced
2 teaspoons olive oil

Steps:

  • In a blender, combine the yogurt, cucumber, scallion and dill. Pulse until pureed. Season, to taste, with salt and pepper. Ladle into individual bowls. Top each serving with 2 tablespoons of diced tomato, drizzle with 1/2 teaspoon of olive oil and garnish with a dill sprig.

1 pound cucumbers, peeled, seeded and sliced
1/2 teaspoon salt
1-1/2 cups fat-free plain yogurt
1 green onion, coarsely chopped
1 garlic clove, minced
4-1/2 teaspoons snipped fresh dill
Additional chopped green onion and snipped fresh dill

Steps:

  • In a colander set over a bowl, toss cucumbers with salt. Let stand for 30 minutes. Squeeze and pat dry., Place the cucumbers, yogurt, onion and garlic in a food processor; cover and process until smooth. Stir in dill. Serve immediately in chilled bowls. Garnish with additional onion and dill.

The most simple yet one of the best soups I had so far. A simplified version of my mum's cucumber soup. No need for salt, pepper, or seasonings, just a good vegetable broth. I like to have it with a good slice of toasted bread and some good cheese.

1 tablespoon butter, or more to taste
1 tablespoon olive oil
1 small yellow onion, chopped
1 large clove garlic, minced
2 large English cucumbers, peeled and thinly sliced
2 small zucchinis, peeled and thinly sliced
3 cups vegetable broth

Steps:

  • Melt butter with the oil in a large saucepan over medium-high heat. Cook and stir onion and garlic in the butter mixture until tender, 3 to 5 minutes. Add cucumber and zucchini slices; cook and stir until softened, 2 to 3 minutes. Pour vegetable broth over the mixture; bring to a boil, reduce heat to medium-low, and let simmer until the vegetables are cooked through, 20 to 25 minutes. Remove from heat and cool a few minutes.
  • Pour soup into a blender no more than half full. Cover and hold lid in place with a towel; pulse a few times before leaving on to blend. Puree in batches until smooth.

Steps:

  • 1. Peel cucumbers, trim ends, and cut in half lengthwise. Scrape out centers and coarsely chop. Crush garlic and 1/4 teaspoon salt into a paste with flat side of a chef's knife. 1 pound beets, peeled and cut into 1/2-inch pieces
2 plum tomatoes, chopped
1 small clove garlic, minced
Pinch of ground cloves
2 cups low-sodium chicken broth
Kosher salt and freshly ground pepper
1 1/4 cups plain whole-milk yogurt
1 tablespoon horseradish
Fresh dill or mint, for topping

Steps:

  • Combine the beets, tomatoes, garlic, cloves, 4 cups water, the chicken broth, 1/2 teaspoon salt and a few grinds of pepper in a pot. Bring to a boil, then reduce the heat to medium low; simmer until the beets are tender, about 30 minutes.
  • Working in batches, puree the soup in a blender until smooth; transfer to a large bowl. Whisk in 1/2 cup yogurt and season with salt and pepper. Let the soup cool slightly, then cover and refrigerate until cold, about 2 hours.
  • Mix the remaining 3/4 cup yogurt with the horseradish in a small bowl; season with salt. Thin the soup with a little water, if necessary. Serve in shot glasses; top with the horseradish yogurt and dill.

SQUASH SOUP SHOOTERS

2 slices bacon
3 tablespoons butter
5 to 6 fresh sage leaves
2 fresh rosemary sprigs
1 shallot, chopped
Kosher salt
1 butternut squash
1/4 cup white wine
1 cup chicken stock
1/8 teaspoon vanilla extract
Freshly ground black pepper
1 1/2 cups cooked spicy Italian sausage, or high-quality lump crab meat
1/4 cup finely chopped fresh chives, for garnish

Steps:

  • Cook the bacon in a cast-iron Dutch oven over medium-high for 5 minutes. Add the butter, sage, rosemary, shallots and a pinch of salt, and cook an additional 5 minutes, stirring occasionally.
  • Meanwhile, cut off the skinny neck of the squash and cut in half (remove the stem, but leave unpeeled). Cut the bulb into 4 quarters. Remove the seeds and stringy flesh and add them to the Dutch oven. Cook until fragrant and golden, about 5 minutes. Deglaze the pan with the white wine and allow to reduce for a couple of minutes. The seed mixture should look rich and flavorful. Add 2 cups water and the chicken stock and nestle in the squash, flesh-side up (you should be able to just fit one nice-size squash in almost one layer). Cover and simmer until very tender, about 40 minutes.
  • Once cooked, cool slightly, remove the squash, scoop out the flesh and place in powerful blender. Strain the liquid through a metal sieve, gently pressing against the solids to extract all of the flavor. Blend the broth with the squash until very creamy, about 1 solid minute on high. Wipe the Dutch oven clean and place the soup back into the pan. Heat gently, and then stir in the vanilla just before serving. Season with salt and pepper and pour over a little chunk of either cooked spicy sausage or a small lump of crab meat in a shooter glass. Top each shooter with a tiny bit of chopped chives.

3 1/2 cups low-salt chicken broth
3 large fresh dill sprigs plus 6 tablespoons minced fresh dill
1 teaspoon (or more) salt
1 cup crème fraîche or sour cream
3 ounces smoked salmon, cut into 1/2-inch pieces

Steps:

  • Melt butter in heavy large pot over medium heat. Add onions and sauté until slightly softened, about 3 minutes. Add cucumbers and potato; stir 1 minute. Add broth, dill sprigs, and 1 teaspoon salt. Increase heat and bring to simmer. Reduce heat to low; cover and simmer until cucumbers and potato are tender, stirring occasionally, about 25 minutes. Working in batches, puree soup in processor until smooth. Return to pot. Cool 15 minutes. Whisk in 1/2 cup crème fraîche and 4 tablespoons minced dill. Cover and chill until cold, about 4 hours. 1/2 cucumber, finely chopped (reserve)
1 teaspoon minced garlic

2 tablespoons butter
2 tablespoons flour
2 cups water
1 1/2 teaspoons chicken bouillon granules
1/2 teaspoon lemon juice
1 pinch dried red pepper flakes
1 teaspoon dried dill
1 pint buttermilk
1/4 cup sour cream
salt & pepper
2 tablespoons snipped chives

Steps:

  • Sauté onion and sliced cucumber in olive oil until onion is transparent.
  • Season to taste with salt and pepper.
  • Add water, chicken base, pepper flakes and garlic. Bring to a boil.
  • In a small pan, melt butter then blend in flour. Add to cucumber mixture, simmer 30 minutes.
  • Process soup in blender until smooth.

Here's an exceptionally easy, no-cook soup. This evolved from the classic recipe for Middle Eastern cucumber soup, which is made with a base of yogurt. However, I don't think it tastes right with soy yogurt, so I tinkered with it until it approximated the original flavor, without the yogurt. I enjoy it with barley added, as suggested in the variation below.

Yield 4 to 6 servings

Number Of Ingredients 8

2 large cucumbers, peeled and seeded
1 recipe Vegan Sour Cream (page 7)
1/2 cup finely chopped mixed fresh herbs (such as dill, parsley, and mint), or more to taste
1 to 2 scallions, green parts only, thinly sliced
1 1/2 cups rice milk, or as needed
Juice of 1/2 lemon, or more to taste
1/2 teaspoon ground cumin, or more to taste
Salt and freshly ground pepper to taste

Steps:

  • Grate the cucumbers on a coarse grater, either by hand or in a food processor fitted with the grating disk.
  • Transfer the cucumbers to a serving container. Stir in the sour cream, herbs, scallions, and enough rice milk to give the soup a slightly thick consistency. Season with lemon juice, cumin, salt, and pepper. Serve at once or refrigerate until well chilled.
  • For a heartier version of this soup, add a cup or so of cold, cooked barley.
  • For a pleasantly peppery flavor, stir in a good handful of chopped watercress leaves.
