16 ounces coleslaw mix * see notes
3 green onions, sliced
1 jalapeno, seeded and minced
2 tablespoons cilantro, chopped
1/2 cup sour cream
1/2 cup mayonnaise
Zest and juice of 1 lime (you want about 2 tablespoons of lime juice)
Salt and pepper to taste

Steps:

  • In a small bowl, whisk the sour cream, mayonnaise, lime zest and juice and season with salt and ground black pepper. Set aside.
  • Place the slaw ingredients in a large bowl. Pour the slaw dressing and toss to combine. Adjust seasoning. Cover and chill for at least 20 minutes.

This Cilantro Lime Slaw recipe is easy to make in just 10 minutes, it tastes extra fresh and light, and it can work great as a zesty side dish or as a topping for tacos, burgers, sandwiches and more.

1 cup plain Greek yogurt*
1/2 cup tightly-packed fresh cilantro
1/4 cup freshly-squeezed lime juice
1/2 teaspoon ground cumin
1/2 teaspoon fine sea salt
1/4 teaspoon freshly-cracked black pepper
3 green onions (just the green parts)
2 garlic cloves
(optional) 1 jalapeño or serrano pepper, stemmed and cored
1 (14-ounce) bag cole slaw mix* (about 7-8 cups)

Steps:

  • Combine the Greek yogurt, cilantro, lime juice, cumin, salt, black pepper, green onions, garlic and jalapeño (if using) in a blender or food processor*. Pulse briefly a few times until the mixtures is combined.
  • Place the cole slaw mix in a large mixing bowl. Drizzle the sauce on top of the cole slaw, then toss until the mixture is evenly combined. Season with extra pepper and/or lime juice if needed.
  • Serve immediately, or cover and refrigerate for up to 24 hours.

3 cups Red Cabbage, shredded
3 cups Green Cabbage, shredded
1 bunch Radishes, thinly sliced
1-1/2 cups Jicama, peeled and cut into small cubes
2 Scallions, thinly sliced
1/4 cup Yogurt, plain
3 tablespoons Extra Virgin Olive Oil
2 tablespoons Fresh Lime Juice
2 tablespoons Rice Vinegar
1 teaspoon Sea Salt
1 cup Fresh Cilantro, chopped

Steps:

  • Combine red and green cabbages, radishes, jicama, and scallions in a large bowl
  • Process oil, lime juice, yogurt, vinegar, and salt in a blender until smooth. Stir in cilantro and, if desired, jalapeno. Pour over cabbage mixture, and toss to coat. Cover and refrigerate at least 1 hour or up to 3 days before serving.

1 tablespoon Dijon mustard
1 tablespoon cider vinegar
1 tablespoon freshly squeezed lemon juice
1 tablespoon sugar
1 teaspoon coarse salt
1/2 cup mayonnaise
1/4 cup sour cream
1 small green cabbage, (about 1 3/4 pounds), finely shredded
2 medium carrots, cut into 1/8-inch-thick matchsticks or coarsely grated
1 small onion, coarsely grated (optional)

Steps:

  • Whisk together mustard, vinegar, lemon juice, sugar, salt, mayonnaise, and sour cream in a small bowl. Refrigerate dressing, covered, until ready to use, or up to 2 days.

1 small head green cabbage, about one pound
1 bunch scallions, finely chopped
1 carrot, peeled and coarsely grated
1 cup plain low-fat or non-fat yogurt
1/2 cup mayonnaise
Salt and freshly ground black pepper
A pinch of sugar, or more, to taste
3 tablespoons finely chopped Italian parsley

Steps:

  • Remove any wilted outer leaves from the cabbage. Quarter the cabbage and slice off the cores. Shred the cabbage into a large bowl. Fold in the scallions and carrot.
  • Mix the yogurt and mayonnaise together and season to taste with salt, pepper and sugar. Pour the dressing over the vegetables and mix. Refrigerate for at least an hour and up to 24 hours.
  • Check seasonings and add the parsley just before serving.
