2 tablespoons whole coffee beans
2 tablespoons whole black peppercorns
4 (3/4 lb) New York strip steaks (each 1-inch thick)
vegetable oil (for brushing the cooking grate)
kosher salt

Steps:

  • Coarsely grind the coffee beans and peppercorns in a food processor or coffee grinder.
  • Press the mixture evenly on both sides of the steaks.
  • Brush the grill grate with vegetable oil.
  • Place the steaks on the grill directly over high heat; grill for about 8-10 minutes, turning once (or cook until desired doneness).
  • Remove steaks from the grill; season both sides with salt.
  • Let the steaks rest 2-3 minutes before serving; serve warm.

4 - 8 oz New York Steaks
Coffee Crusted Steak Rub (purchased at the Loft)
2 cups Garden Arugula
4 oz Blue Cheese
2 Tbsp Olive Oil
Salt & Pepper
Sauce
½ pound Butter
½ pound Sugar
½ cup Bourbon
¼ cup Parsley, chopped

Steps:

  • Coat each steak with the dry rub; make sure to cover the entire steak. Place aside the parsley. Grill the seasoned steaks over medium high heat (2-3 minutes per side for medium rare). Rest the steaks for 5 minutes to avoid the juices running out. In a sauce pan, over medium heat, melt the butter and the sugar together (do not stir sugar), once all melted, stir to avoid scorching pan. Once caramel has formed and turns golden brown, add bourbon (remove pan from heat and be careful of flair ups). Place back on stove and continue cooking to remove alcohol. As the bourbon heats up, the mixture will begin to soften. Add parsley and cracked black pepper to the caramel sauce and mix until ingredients are fully blended. Season arugula with fresh cracked black pepper and salt, dress with olive oil. Set aside. On warm plates, divide the sauce equally. Place the steak on top of the sauce and top it with arugula. Garnish steak with blue cheese wedge.

2 steaks: NY Strip, Rib Eye, Filet Mignon or even Prime Top Sirloin
2 tablespoons Canola oil
4 tablespoons Kona coffee rub (recipe to follow)
2 tablespoons steak butter (recipe to follow)
Kona Coffee Rub - combine all ingredients in small bowl
3 tablespoons finely-ground Kona coffee
1 tablespoon McCormick Montreal steak seasoning
1 teaspoon Hawaiian pink salt
1 teaspoon garlic powder
2 teaspoons fresh cracked pepper
Steak Butter - combine ingredients in small bowl
2 tablespoons unsalted butter, softened
2 shakes Worcestershire sauce
1 teaspoon garlic powder

Steps:

  • Cooking Process:
  • Preheat oven to 450 degrees. Pat steaks dry and sprinkle 1 tablespoon of coffee rub into each side of beef. Using your hands, gently press into the meat. Set aside and let come to room temperature, approximately 15 minutes.
  • Heat a heavy pan on burner over medium high heat. When hot, drizzle oil in center of pan and coat the base. When oil shimmers, add the steaks and cook 3-4 minutes per side until crust is formed.
  • Remove pan from stovetop, add 1 tablespoon of steak butter to each, and place on middle rack of preheated oven. Cook an additional 5-8 minutes, depending on thickness.
  • When finished, remove from oven and set on cutting board and spoon juices from pan over each steak. Let rest at least 5 minutes before serving.

3 lb strip steaks (4 steaks)
2 Tbsp whole peppercorns
2 Tbsp whole coffee beans

Steps:

  • 1. With a small food processor or coffee/spice grinder, coarsely grind the peppercorns and coffee.
  • 2. Press the mixture on both sides of the steaks. Light and preheat your grill on high heat.
  • 3. Right before putting the steaks on, lightly brush vegetable oil on the grates. Grill the steaks to your liking, about 8-10 minutes for medium rare.
  • 4. Remove the steaks to a cutting board and season with salt. Let them rest for a couple of minutes and serve.
