HAUPIA (COCONUT PUDDING DESSERT)

Number Of Ingredients 6

1 quart coconut milk
1/2 cup sugar
1/4 teaspoon salt
1/3 cup shredded coconut
1/4 cup water
1/4 cup cornstarch

Steps:

  • Add coconut milk, sugar and salt to a saucepan and stir over medium heat until the sugar and salt dissolves. Reduce heat to medium low, add shredded coconut and cook for 5 minutes to soften. Make a slurry in a separate small bowl by gradually whisking 1/4 cup water into the cornstarch. Whisk slurry into the coconut mixture and allow to reduce and thicken until it is the consistency of yogurt. Transfer to serving dishes and chill.

4 (3 ounce) boxes coconut cream pudding mix
2 cups milk
1 gallon vanilla ice cream
1 (8 ounce) container Cool Whip
50 Ritz crackers
1/2 cup butter

Steps:

  • Soften ice cream and mix together with pudding mix and milk.
  • Melt butter.
  • Mix with crushed Ritz crackers and press into a 9x11" pan as a crust(just on bottom).
  • Pour pudding mixture on top of crust.
  • Spread cool whip on top of that.
  • Refrigerate.

3/4 cup sugar
1/2 teaspoon salt
1 pineapple, peeled, cored and diced small
1/2 cup cornstarch

Steps:

  • Add coconut milk and sugar to a large saucepot and stir over medium heat until sugar and salt is dissolved. Pulse pineapple in a food processor until coarsely chopped. Add the pineapple to the pot and cook, stirring often until the pineapple is integrated into the mixture. Make a slurry in a separate small bowl by gradually whisking 1/2 cup water into the cornstarch. Whisk slurry into mixture in pot and allow to reduce and thicken until it is the consistency of yogurt. Transfer to serving dishes and chill.

This is a very easy dessert to throw together in a short time , can be made with any flavor of pudding that you choose.

FOR THE CRUST :
1 c all purpose flour
1/2 c butter
2 Tbsp sugar
1/4 c chopped pecans or walnuts
FOR THE FILLING :
8 oz cream cheese, room temperature
2/3 c powdered sugar
FOR PUDDING TOPPING :
2 1/2 c cold milk
2 (3.5oz) box instant coconut cream pudding
1 c cool whip
coconut , maraschino cherries nuts for garnish

Steps:

  • 1. Mix the crust ingredients together and press in the bottom of a 9x9" baking dish ; Bake @ 350° for 12-15 minutes ; let cool completely.
  • 2. Cream together the cream cheese and the powdered sugar ; Fold in 1/2 cup of the cool whip until well mixed ; Spread over top of the crust. Place in the refrigerator while your making the pudding.
  • 3. Add the milk to the pudding and mix according to the PKG. instructions ; spread on top of cream cheese mixture ; Top with the remaining cool whip and refrigerate until serving. Garnish with coconut , cherries and nuts.
