2 cups Arborio rice
2 cups vegetable stock
2 1/2 cups coconut milk
1 teaspoon sea salt
1/2 teaspoon freshly cracked black pepper

Steps:

  • Preheat the oven to 350 degrees F.
  • Line a deep baking sheet with aluminum foil.
  • Add the rice, vegetable stock, coconut milk, salt, and pepper to a medium bowl and toss it around with your hands until all the rice is coated. Pour the mixture into the foil lined baking sheet. Cover tightly with aluminum foil. Put the pan in the oven and bake until creamy, about 1 hour. Transfer the rice to a serving bowl and serve.

1 cup pearled barley
2 1/4 cups light coconut milk
1/2 tsp. curry powder
1/2 tsp. garam masala powder
1/4 tsp. ground coriander
1/4 tsp. ground ginger
1/4 tsp. ground cayenne pepper
1/4 tsp. salt
4 cardamom pods
8-10 coriander seeds
pinch of allspice
6 oz. cooked edamame beans
1 cup chopped shitake mushrooms

Steps:

  • Whisk together 2 cups of coconut milk and the spices in a large bowl or pot. Over medium heat, bring the spiced coconut milk to a low boil. Once at a low boil, turn the heat to low and add the barley to cook in the spiced coconut milk. Stir regularly to keep the milk from scalding on the bottom. While the barley cooks, prepare the edamame beans. In a large pan, sautée the mushrooms in 1 tbsp. vegetable or olive oil, seasoning lightly with salt and pepper. Cook them for just a few minutes, as they will continue to soften once added to the risotto. If they are done before the barley, remove from heat and set aside. As the coconut milk begins to thicken and reduce, test the doneness of the barley. If the barley is still too al dente, add some additional coconut milk to keep it from getting to sticky while the barley cooks. Continue to add small amounts of coconut milk as needed, until the barley is al dente and the coconut milk is still kept creamy. Add the barley and edamame to the sautée pan with the mushrooms. Stir together over low heat, adding any additional coconut milk needed to maintain the right consistency. The end result should be creamy and a bit runny, but not thick and sticky. Remove the cardamom pods before serving, and enjoy.

Wholesome and nutty, barley is a superb alternative to arborio rice in this risotto, since it's naturally plump and chewy when cooked. The grated Parmesan and butter stirred in at the end release the barley's starches, creating a silky, creamy texture. Make sure to use pearl barley, not hulled, since it cooks much faster and is more tender. As for the mushrooms, white button, cremini and earthy shiitakes are a tasty, accessible mix, though any combination of oyster, king trumpet and maitake would raise the bar. Still, the best thing about this risotto, which is a satisfying vegetarian weeknight dinner (or side to any large roast or fish) is that it's baked, taking away the pressure of constant stirring at the stove.

3 tablespoons extra-virgin olive oil
1/2 small white or yellow onion, finely chopped (about 1/2 cup)
5 garlic cloves, thinly sliced
1 pound mixed mushrooms, such as white button, cremini and shiitakes, halved if small, quartered if large (about 7 cups total)
Kosher salt and black pepper
10 ounces pearl barley (about 1 1/2 cups)
1 medium carrot, very thinly sliced into rounds (about 1 cup)
2 ounces grated Parmesan (about 1/2 cup), plus more for serving
2 tablespoons unsalted butter
1/4 cup chopped chives

Steps:

  • Heat oven to 425 degrees. In a large Dutch oven or heavy pot, heat 2 tablespoons oil over medium. Add onion and garlic, and cook, stirring occasionally, until softened, about 3 minutes. Add mushrooms and remaining 1 tablespoon oil, and season with salt and pepper. Cook, stirring occasionally, until mushrooms start to soften, about 3 minutes.
  • Stir in barley, carrot and 4 1/2 cups water, and bring to a boil over high heat. Cover, transfer to the oven and bake until barley is tender and chewy and almost all of the liquid is absorbed, about 30 minutes.
  • Stir in Parmesan and the butter until slightly thickened and creamy. Season with salt and pepper.
  • Divide among shallow bowls. Sprinkle with chives and more Parmesan, to taste.

3 medium fresh golden beets and beet greens
3 tablespoons melted coconut oil, divided
3/4 teaspoon sea salt, divided
5 cups reduced-sodium chicken broth
1 cup chopped leeks (white portion only)
1 teaspoon curry powder
1 teaspoon garlic salt
1 cup medium pearl barley
1/2 cup white wine or unsweetened apple juice
1 cup grated Manchego cheese
3 tablespoons lemon juice (Meyer lemons preferred)
4 teaspoons grated lemon zest, divided
1/4 teaspoon coarsely ground pepper
1/4 cup chopped fresh parsley

Steps:

  • Preheat oven to 350°. Wash and trim beet greens, removing stems; dry with paper towels. Place greens in a single layer on parchment-lined baking sheets. Brush with 1 tablespoon coconut oil; sprinkle with 1/4 teaspoon sea salt. Bake until dry and crisp, 15-18 minutes. Set aside., Meanwhile, peel and dice beets. In a large saucepan, bring chicken broth to a boil. Add beets. Reduce heat; simmer, covered, until beets are tender, 15-18 minutes. Remove beets with a slotted spoon. Keep broth hot., In another large saucepan, heat remaining coconut oil over medium heat. Add leeks; cook and stir 2-3 minutes. Add curry powder, garlic salt and remaining sea salt; cook, stirring, until leeks are tender, 2-3 minutes. Increase heat to medium-high. Add barley; stir constantly until lightly toasted, 2-3 minutes. Add wine; stir until liquid has evaporated., Add enough broth, about 1 cup, to cover barley. Reduce heat to medium; cook and stir until broth is absorbed. Add remaining broth, 1/2 cup at a time, cooking and stirring until broth is absorbed after each addition. Stir in beets with last addition of broth. Cook until barley is tender but firm to the bite and risotto is creamy, 25-30 minutes., Remove from heat. Stir in cheese, lemon juice, 2-1/2 teaspoons grated lemon zest and pepper. Transfer to a serving dish. Sprinkle with parsley and remaining lemon zest. Serve with crispy beet greens and lemon slices.

2 1/2 cups low sodium vegetable broth or 2 1/2 cups low sodium chicken broth
2 teaspoons olive oil
1/2 cup onion, chopped
1 cup butternut squash, diced into small pieces
1/3 cup pearl barley
1 tablespoon fresh sage, chopped or 1/2 teaspoon dried sage
3 tablespoons parmesan cheese (the shaker kind is fine)
2 tablespoons fresh parsley, chopped
salt and pepper

Steps:

  • In a small saucepan, bring the broth to a boil. Cover, and reduce heat to low.
  • Heat oil in a medium sized pot over medium heat.
  • Add onion and sauté until tender.
  • Add squash and sauté for another 3 minutes. Add barley and stir for 2 more minutes.
  • Add 1/2 cup of the boiled broth, and chopped sage. Simmer, stirring often until broth is absorbed, about 5 minutes.
  • Add remaining broth slowly, about 1/3 cup at a time, allowing it to be absorbed each time.
  • Cook barley until tender but still firm, about 35-40 minutes.
  • Remove from heat and stir in parmesan cheese and parsley. Season with salt and pepper to taste.

1 tablespoon vegetable oil
1 cup short-grain rice, like arborio
1 cup dry white wine
1 can (14 ounces) coconut milk
1 cup diced tomato (canned are fine; drain well), optional
1 pound raw shrimp, peeled and diced
Salt to taste
1/4 teaspoon cayenne, or to taste
1/2 cup minced cilantro, basil or scallion, optional

Steps:

  • Put oil in a 10-inch skillet, preferably nonstick, and turn heat to medium-high. Add rice and cook, stirring occasionally, until rice glistens and sizzles, 2 or 3 minutes.
  • Add wine and let it boil away, stirring once or twice, until mixture is just about dry. Add a cup of hot water and repeat, stirring frequently. Add half the coconut milk and cook, stirring frequently, until it is just about gone. Add remaining coconut milk and repeat.
  • At this point rice should be nearly tender; if it is not, repeat process with another 1/2 cup water. Stir in tomato if desired, shrimp, salt and cayenne and cook until mixture is creamy and rice is tender but not mushy. If rice is still too crunchy for your taste, stir in 1/2 cup water and cook, stirring, until mixture is creamy again. Garnish with cilantro, basil or scallions and serve.
