1 teaspoon black peppercorns
8 cardamom pods
8 whole cloves
2 cinnamon sticks, plus more for garnish
2-inch piece fresh ginger, thinly sliced, optional
6 black tea bags
1 cup whole or 2-percent milk
1 cup unsweetened regular or low fat coconut milk
2 tablespoons to 1/4 cup loosely packed light brown muscovado sugar

Steps:

  • Lightly crush the peppercorns, cardamom, cloves and cinnamon, and put in a medium saucepan. Add the ginger, if using. Add 6 cups cold water to the saucepan and bring to a boil over high heat. Remove from the heat and add the tea bags. Let them steep for 5 minutes. Remove the tea bags, and let steep another 10 minutes.
  • Put the milks and sugar in a medium saucepan and bring to simmer. Strain the tea mixture into the milk mixture and heat through for 1 minute. Whisk the mixture until frothy. Pour the tea into 4 mugs and garnish with cinnamon sticks.

THAI COCONUT CRUMBED CHICKEN TRAYBAKE

Contrast breaded chicken with squash, tomatoes and aubergine flavoured with spicy Thai red curry paste

1 butternut squash , peeled, deseeded and cubed
1 large aubergine , cubed
1 tbsp rapeseed oil
3 tbsp desiccated coconut
4 tbsp fresh breadcrumb
4 skinless chicken breasts
1 egg , beaten
300g cherry tomato
2 tbsp Thai red curry paste
handful coriander leaves, roughly chopped
lime wedges, to serve

Steps:

  • Heat oven to 200C/180C fan/gas 6. In a large, shallow roasting tin, toss the squash and aubergine in the oil, then season and spread out in a single layer. Roast for 30 mins, turning once.
  • On a plate, mix the coconut and breadcrumbs with some seasoning. Dip the chicken breasts in the egg, then press in the crumbs to coat, shaking off any excess.
  • Toss the tomatoes and curry paste in with the roasted veg and give everything a good stir. Nestle the chicken breasts in the veg and pop back in the oven for a further 25-30 mins until the chicken is cooked through, shaking the pan once or twice. Sprinkle over the coriander and serve with lime wedges to squeeze over.

13.5 fl oz coconut milk, 1 tin
1 ⅔ cups water
2 tablespoons sugar
2 bags chai tea
1 cinnamon stick
2 shots dark rum

Steps:

  • Add the coconut milk, water, and sugar to a pot. Stir, and bring to boil.
  • Turn down the heat and add the chai tea bags and cinnamon stick. Steep for 5 minutes at a low heat.
  • Add two shots of rum and simmer for a further 2-3 minutes.
  • Enjoy!

3 tea bags black tea
2 tablespoons coconut chips
2 tablespoons ginger flakes
8 cloves
5 green cardamom pods
1 cinnamon stick, roughly chopped
1/2 leftover, empty vanilla bean, finely chopped

Steps:

  • Open the tea bags and pour the tea into a small bowl. Add the coconut chips, ginger flakes, cloves, cardamom, cinnamon and vanilla and toss together.
  • To use, steep 1 tablespoon of the mixture in boiling water and enjoy.

Number Of Ingredients 12

200g unsalted butter , softened
100g golden caster sugar
100g light brown soft sugar
3 large eggs
60g desiccated coconut
200g self-raising flour
100g Greek yogurt
½ tsp coconut flavouring (optional, see tip below)
200g milk or dark chocolate , chopped into small pieces
200ml double cream
40g white chocolate , melted
handful of coconut flakes, toasted, or desiccated coconut or sprinkles

Steps:

  • Line a 22 x 28cm rectangular cake tin with baking parchment. Heat the oven to 180C/160C fan/gas 4.
  • First, prepare the topping. Put the milk or dark chocolate pieces in a large heatproof bowl. Heat the double cream in a medium pan until just steaming, then slowly pour over the chocolate, whisking until the chocolate has melted and the mix is smooth. Leave to cool slightly, then chill for 1 hr 30 mins until soft, but still spoonable.
  • Beat the butter, sugars and ¼ tsp salt together in a stand mixer or using an electric whisk for 5 mins, or until light and fluffy. Add the eggs one at a time, beating well after each addition. Add the desiccated coconut, flour, yogurt and coconut flavouring, if using, and briefly beat until just combined. Spoon the mix into the tin, smooth the surface using the back of a spoon, then bake for 30 mins until golden and firm to the touch. Leave in the tin to cool completely.
  • When fully cool, spread over the chocolate topping, then drizzle with the white chocolate and scatter over the toasted coconut flakes. Chill for around 15 mins until the topping is set. Cut into 12 squares, then serve.
