FABULOUSLY EASY COCONUT BROWNIES

Super easy, these brownies draw raves as if I were baking all day. I like to make these, regular brownies and cream cheese brownies at the same time and serve a variety plate. (I found this recipe online somewhere in the last few years, not sure of the original source.)

Number Of Ingredients 8

1 (18 -24 ounce) package brownie mix (your favorite)
3 eggs (to prepare brownie mix under "cake" instructions)
1/4 cup water (for brownie mix)
1/3 cup vegetable oil (for brownie mix)
3 3/4 cups sweetened flaked coconut
1 (11 1/2 ounce) package semisweet chocolate chunks
1 (14 ounce) can sweetened condensed milk
1 cup pecans (or any kind of nuts)

Steps:

  • Preheat oven to 350. Spray 9X13X2 pan with nonstick cooking spray.
  • Prepare your favorite brownie mix according to package directions for cakelike brownies. The amount of eggs, oil and water in the ingredients above are common to most prepared brownie mix instructions (for cakelike brownies), but follow your box exactly.
  • Spread the brownie mix evenly in pan. Bake 16-18 min or until brownie is set. Do not overbake! You are just trying to set the batter, not finish it.
  • Layer coconut and chocolate chunks over brownie base.
  • Pour sweetened condensed milk evenly over coconut and chocolate chunks.
  • Sprinkle with nuts.
  • Bake 20-30 minutes or until edges of coconut are deep golden brown and nuts are lightly toasted.
  • Cool completely. Cut into bars. Step back and hear the applause.

Soft butter, for greasing the pan
Flour, for dusting the buttered pan
4 large eggs
1 cup sugar, sifted
1 cup brown sugar, sifted
8 ounces melted butter
1 1/4 cups cocoa, sifted
2 teaspoons vanilla extract
1/2 cup flour, sifted
1/2 teaspoon kosher salt

Steps:

  • Preheat the oven to 300 degrees F. Butter and flour an 8-inch square pan.
  • In a mixer fitted with a whisk attachment, beat the eggs at medium speed until fluffy and light yellow. Add both sugars. Add remaining ingredients, and mix to combine.
  • Pour the batter into a greased and floured 8-inch square pan and bake for 45 minutes. Check for doneness with the tried-and-true toothpick method: a toothpick inserted into the center of the pan should come out clean. When it's done, remove to a rack to cool. Resist the temptation to cut into it until it's mostly cool.

3 cups graham cracker crumbs
2/3 cup sugar
2/3 cup melted butter
18 ounces brownie mix, box
16 ounces large marshmallows, bag

Steps:

  • Mix graham cracker crumbs, sugar, and melted butter.
  • Press into 9x13 baking dish lined with parchment paper.
  • Bake at 300 for 10 minutes; Set aside to cool.
  • Prepare brownie mix as directed on package.
  • Pour over graham cracker base.
  • Bake at 350 for 45 minutes; Allow to cool.
  • Top with layer of marshmallows.
  • Broil until marshmallows are toasted.
  • *Can sprinkle any left over graham cracker crumbs on warm marshmallow topping.

This is a blackberry cobbler made with a brownie topping instead of the usual 'white/beige' crusts. Blackberries and brownies are a great combination! I have had a bumper crop of blackberries this summer and wanted to try something new. I played with a few brownie recipes and this one works as a pourable topping for the berries.

4 cups blackberries, thickened and sweetened
1 cup semi-sweet chocolate chips
1/2 cup butter, cut into several pieces
1 cup granulated sugar
3 large eggs
1/2 teaspoon vanilla extract
2/3 cup flour
1/2 cup pecans, chopped

Steps:

  • Preheat oven to 350ยบ F.
  • Melt chocolate and butter together, I used the microwave.
  • Spray 13 x 9-inch baking dish with cooking spray.
  • Pour sweetened thickened berries in bottom of dish.
  • Whisk together sugar, eggs and vanilla extract in bowl.
  • Whisk in melted chocolate.
  • Stir in flour and nuts.
  • Pour batter over berries, smooth with spatula.
  • Bake until a wooden pick inserted into center of brownie comes out clean, about 45 minutes.
  • Let stand 15 minutes.
  • Serve warm with whipped cream or ice cream.
