Swap the typical hard boiled egg for a soft-poached one in this Cobb Salad with Poached Eggs, that puts a delicious spin on the classic. The runny yolk becomes part of the dressing in this salad that's high in protein and flavor.

2 tablespoons extra-virgin olive oil
2 tablespoons red-wine vinegar
1 teaspoon Dijon mustard
Coarse salt and ground pepper
1 head Bibb lettuce, leaves separated and torn
1/2 cup shredded cooked chicken
2 strips crisp cooked bacon, crumbled
2 tablespoons crumbled blue cheese
2 warm Easy Poached Eggs

Steps:

  • In a small bowl, whisk together oil, vinegar, and mustard; season dressing with salt and pepper. Divide lettuce between 2 plates and add chicken, bacon, and cheese. Top each salad with a poached egg. Serve with dressing on the side.

We used chicken breast and turkey bacon for a leaner version of this popular salad. If you prefer, you can use roasted turkey breast instead of poached chicken in this cobb salad.

1 boneless and skinless chicken breast half
2 large eggs
3 slices turkey bacon
1 head romaine lettuce, stalk and tough outer leaves removed, sliced crosswise into 3/4-inch-wide strips (about 6 cups)
1 cup chopped fresh watercress
3 tomatoes, chopped into 1/2-inch pieces (about 1 1/2 cups)
1/2 small ripe Hass avocado, peeled, pitted, and cut into 1/2-inch pieces (about 1/2 cup)
1/4 cup chopped fresh flat-leaf parsley
1/4 cup chopped fresh chives
1 ounce blue cheese, crumbled
3 tablespoons red-wine vinegar
1 teaspoon Dijon mustard
1 tablespoon extra-virgin olive oil
1/2 teaspoon freshly ground pepper

Steps:

  • Bring a medium saucepan of water to a boil. Add chicken; cook at a bare simmer until it is cooked through, about 15 minutes. Transfer to a plate, and cut into 1/2-inch cubes; set aside.
  • Place eggs in a small saucepan; fill with enough cold water to cover by 1 inch. Bring to a boil over medium-high heat; turn off heat. Cover; let stand 11 to 12 minutes. Transfer to a small bowl, and cover with cold water; let cool, and peel. Slice eggs in half lengthwise. Discard one yolk, and pass the other through a fine sieve into a small bowl; set aside. Slice each egg white into six wedges; set aside.
  • Cook bacon in a medium saute pan over medium-low heat until browned and fat is rendered, turning once, about 3 minutes per side. Transfer to drain on paper towels. Let cool; roughly chop.
  • Spread lettuce on a serving platter. Arrange chicken, eggs, bacon, watercress, tomatoes, avocado, parsley, and chives in separate rows.
  • Make the vinaigrette: In a small bowl, whisk together cheese, vinegar, and mustard. Slowly whisk in the oil. Season with pepper. Drizzle vinaigrette over salad, and serve immediately.

SALAD WITH POACHED EGGS AND BACON DRESSING



Salad with Poached Eggs and Bacon Dressing image

2 teaspoons extra-virgin olive oil
1 piece bacon, cut crosswise into 1/2 inch thick strips
1 teaspoon aged sherry or red wine vinegar
Kosher salt plus and freshly ground black pepper
1 tablespoon distilled vinegar
1 to 2 large eggs
1-1/2 cups mixed greens, washed and spun dried
1 or 2 (1/2-inch) thick slices of a baguette or sourdough bread, lightly toasted

Steps:

  • Heat the oil in a small saute pan over medium heat. Saute the bacon strips until golden and crispy. Remove the bacon with a slotted spoon to a paper towel to drain and reserve. Pour off the oil and bacon fat, and reserve. Return the pan to the heat and add the vinegar and stir with a wooden spoon, scraping up any browned bits from the bottom of the pan. Whisk in about 4 teaspoons of the reserved pan drippings to make a dressing. Season with salt and pepper to taste and set aside.
  • Fill a small sauce pan with 3 inches of water. Add the distilled vinegar. Bring to a gentle simmer over medium heat, adjust heat to so the water is just under a simmer. Break the egg(s) into the water and poach to desired doneness, about 3 to 5 minutes.
  • Meanwhile toss the salad with the reserved bacon and the dressing. Season with salt and pepper.
  • Put the salad on a plate and place the toasts on the salad. Remove eggs from the water with a slotted spoon and pat the back of the spoon with paper towels. Place egg on toast and serve immediately.

BISTRO SALAD WITH POACHED EGGS

8 ounces haricots verts or green beans, trimmed
4 slices thick-cut bacon, cut into 1/2-inch pieces
3 tablespoons white wine vinegar
2 teaspoons dijon mustard
2 heads frisee, torn (about 8 cups)
1 head Belgian endive, halved lengthwise and thinly sliced
3 tablespoons chopped fresh herbs (such as parsley, tarragon or a combination)
1 small shallot, minced
Freshly ground pepper
4 large eggs
1/2 baguette, sliced and lightly toasted

Steps:

  • Bring a medium saucepan of salted water to a boil. Add the haricots verts and cook until crisp-tender, about 3 minutes. Drain and rinse under cold water; transfer to a paper towel-lined plate. Refill the pot with water and bring to a simmer.
  • Meanwhile, cook the bacon in a large nonstick skillet over medium-high heat, stirring occasionally, until browned, about 5 minutes. Remove with a slotted spoon and drain on paper towels. Pour the drippings into a large bowl; whisk in 2 tablespoons vinegar and the mustard until smooth. Add the frisee, endive, haricots verts, herbs, shallot, bacon, 1/2 teaspoon salt and a few grinds of pepper; toss.
  • Add the remaining 1 tablespoon vinegar to the simmering water. Reduce the heat to low. Crack each egg into a ramekin or teacup, then gently slip into the water. Cook until the whites are set but the yolks are still runny, about 3 minutes. Remove from the heat.
  • Divide the salad among plates. Remove the eggs with a slotted spoon, blot dry on a paper towel, then transfer to the salads. Season with salt and pepper and serve with the baguette.

Poached egg salad with garlic croutons image

Classic combination of eggs, garlic and cheese make for a rich, yet fresh lunch dish

1 crushed garlic clove
2 tbsp olive oil
1 small ciabatta loaf, torn in bite-sized pieces
2 eggs
1 head torn Cos lettuce
4 tbsp fresh Caesar salad dressing
slices of avocado

Steps:

  • Heat oven to 200C/fan 180C/gas 6.
  • Infuse garlic with olive oil for as long as possible. Tear ciabatta into bite-sized pieces and toss with the oil, then toast the bread in the oven for 10-15 mins until golden brown.
  • Meanwhile poach the eggs. Dress the lettuce in fresh Caesar salad dressing (we like Florette). Toss the salad, croutons and lettuce in the dressing along with slices of avocado and divide between two plates.
  • Top each plate of salad with a poached egg and drizzle a little extra dressing over the egg to serve.
