A tasty summery salad made with fresh oranges, red onions, glazed walnuts, and Gorgonzola cheese, then topped with a homemade citrus vinaigrette! Easy and delicious!

¾ cup walnut halves
10 ounces mixed salad greens with arugula
2 large navel oranges, peeled and sectioned
½ cup sliced red onion
¼ cup olive oil
¼ cup vegetable oil
⅔ cup orange juice
¼ cup white sugar
2 tablespoons balsamic vinegar
2 teaspoons Dijon mustard
¼ teaspoon dried oregano
¼ teaspoon ground black pepper
¼ cup crumbled Gorgonzola cheese

Steps:

  • Place the walnuts in a skillet over medium heat. Cook 5 minutes, stirring constantly, until lightly browned.
  • In a large bowl, toss the toasted walnuts, salad greens, oranges, and red onion.
  • In a large jar with a lid, mix the olive oil, vegetable oil, orange juice, sugar, vinegar, mustard, oregano, and pepper. Seal jar, and shake to mix.
  • Divide the salad greens mixture into individual servings. To serve, sprinkle with Gorgonzola cheese, and drizzle with the dressing mixture.

I created this salad as a nice fresh side to a light summer meal. Easy to change or customize for different tastes. You can plate the salad individually for a nice presentation.

½ cup chopped walnuts
2 large oranges, zested
1 pink grapefruit
1 (5 ounce) bag mixed salad greens
½ cup crumbled feta cheese
2 tablespoons pomegranate juice, or more as needed
2 tablespoons white sugar
1 teaspoon dried parsley
½ teaspoon salt
½ cup vegetable oil

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Spread walnuts on a baking sheet.
  • Toast walnuts in the preheated oven until golden brown and fragrant, about 5 minutes.
  • Slice top and bottom off 1 orange and set on a flat work surface. Cut downwards from the top, following the curve of the fruit, to remove all of the skin and pith. Repeat with remaining orange and grapefruit.
  • Holding 1 orange over a bowl to catch juice, cut both sides of each segment away from the connective membrane and transfer to a separate bowl. Squeeze extra juice from the membranes into the bowl. Repeat with remaining orange and grapefruit.
  • Mix toasted walnuts, salad greens, and feta cheese into the bowl of orange and grapefruit segments.
  • Pour orange and grapefruit juice into a glass measuring cup. Add enough pomegranate juice to reach 1/3 cup. Whisk in 1 teaspoon orange zest, sugar, parsley, and salt. Whisk in oil until dressing is thick.
  • Drizzle dressing over salad.

Blue Cheese, Candied Walnut and Citrus Orzo Salad image

I have been experimenting with orzo this past year, and every dish I make with it, is better than the last. This little salad is perfect for a pot luck or buffet. And wait until you taste the candied walnuts with the citrus and the blue cheese. Great combo!

1 Tbsp unsalted butter
1 Tbsp olive oil
1 large onion diced
1/2 tsp kosher salt
1/4 tsp freshly ground pepper
1 c uncooked orzo
pinch salt and pepper to season orzo and water
1-3/4 c water
4 scallions chopped
4 navel oranges supremed (save the liquid for the dressing)
2 stalk(s) celery chopped
4 oz crumbled blue cheese
1/4 c cilantro chopped (optional)
1 c walnuts
3 Tbsp sugar
1 Tbsp unsalted butter
SALAD DRESSING
1 clove garlic finely chopped
2 lemons juiced
1 Tbsp rice wine vinegar
liquid from supremed oranges
extra virgin olive oil
1 tsp dijon mustard

Steps:

  • 1. To make the orzo: In medium size sauce pan on medium low heat, melt butter and olive oil. Add the chopped onions and salt and pepper. Cook uncovered to soften the onions, not brown them. After about 5 minutes they will be translucent and ready to accept the orzo. Add the cup of orzo and coat with the buttery onion mixture. Add a bit more salt and pepper as orzo has absolutely no taste. Let the orzo toast a bit (2-3 minutes) and add water and bring to a boil. Cover, reduce heat to the lowest simmer and cook 12-13 minutes. The orzo will still be a bit watery, but keep covered off the heat and all the liquid will evaporate.
  • 2. While orzo is cooling, candy the walnuts. In large saucepan on medium heat add the sugar and butter. Mix to combine. Now add the nuts and coat them in the sugary liquid. Toast the mixture for about 3 minutes. Just keep an eye on the nuts as they can burn before 3 minutes. Transfer candied nuts to a piece of parchment and separate the the best you can and set them aside to cool.
  • 3. To make the dressing, combine all ingredients in a medium size jar and shake, or just whisk everything together until it emulsifies.
  • 4. To assemble the dish, combine scallions, orange segments, celery and cilantro. Now add your blue cheese and cooled orzo. If I'm making this ahead, I dress the salad with only half the dressing, cover with plastic wrap and refrigerate. Then I dress it again right before serving time. I like the salad served at room temp, but it's still delish served cold. And don't forget to liberally sprinkle those sweet toasted walnuts on top of your salad right before serving. By the way you can make individual lettuce cups with this recipe. they get grabbed up fast tho!

3 blood oranges
4 tangerines
1/2 cup roughly chopped walnuts
5 tablespoons extra-virgin olive oil
1 3/4 teaspoons cracked pink peppercorns
Kosher salt
2 tablespoons white wine vinegar
2 tablespoons country Dijon mustard
1 head frisée, torn into bite-size pieces
3 endives, halved and thinly sliced
1/2 small head radicchio, thinly sliced
1/2 cup fresh parsley

Steps:

  • Using a small sharp knife, cut the ends off the blood oranges and 3 tangerines, then cut away the peel and white pith. Working over a medium bowl, cut along both sides of each membrane to remove the segments, letting them drop into the bowl; discard any seeds. Squeeze the juice from the remaining tangerine into a small bowl to get about 2 tablespoons.
  • Preheat the oven to 400 degrees F. Toss the walnuts with 1 tablespoon olive oil, 1/2 teaspoon pink peppercorns and a pinch of salt on a rimmed baking sheet. Bake until golden brown, 10 to 12 minutes. Let cool.
  • Meanwhile, make the dressing: Add the vinegar, mustard, 1/4 teaspoon pink peppercorns and a pinch of salt to the bowl with the tangerine juice and whisk to combine. Slowly drizzle in the remaining 1/4 cup olive oil, whisking to combine; season with salt.
  • Combine the frisée, endives, radicchio, parsley and blood orange and tangerine segments in a large bowl. Pour in the dressing and toss; season with salt. Top with the toasted walnuts and remaining 1 teaspoon pink peppercorns.

- 3/4 cup coarsely chopped walnuts.
- 3 cups bowtie pasta, about 8 ounces.
- 2 cups shredded cooked chicken, use rotisserie chicken from the costco deli
- 1 cup smoked cheese such as gouda, cut in 1/4 inch cubes.
- 1 cup celery, cut in thin diagonal slices.
- 1/3 cup finely chopped red onion.
- 3 tablespoons chopped fresh chives.
- 2 tablespoons chopped fresh parsley
- dressing:
- 1/3 cup fresh orange juice.
- 1/4 cup fresh lemon juice.
- 4 tablespoons extra virgin olive oil
- 1 tablespoon stoneground mustard
- 2 teaspoon sugar.
- 1 1/4 teaspoons salt
- 1/2 teaspoon freshly ground black pepper
- 2 teaspoons rice vinegar

Steps:

  • Preheat oven to 350°. Place walnuts on cookie sheet in a single layer in bake for 8 to 10 minutes checking frequently. Let cool.
  • Cook pasta as the package directs, drain and let cool completely. to make the dressing mix all ingredients in a large bowl, stirring with a whisk to blend.
  • Add pasta, chicken, cheese, celery, red onion, walnuts chives and parsley to the dressing. Toss gently to mix. Makes six servings.
  • If you buy walnuts in sealed packaging they can be stored in their original packaging . Or, open the bag transfer the walnuts to an airtight container to maintain freshness .keep walnuts in an airtight container for up to six months in the refrigerator and up to one year in the freezer

1/2 cup walnut pieces
1/2 cup extra-virgin olive oil
3 tablespoons white wine vinegar
2 tablespoons Dijon mustard

8 heads Belgian endive (about 2 1/4 lb)
1/2 cup firmly packed fresh Italian (flat-leaf) parsley leaves
2 red grapefruit, peeled, sectioned

Steps:

  • Sprinkle walnuts in ungreased heavy skillet. Cook over medium heat 5 to 7 minutes, stirring frequently until nuts begin to brown, then stirring constantly until nuts are golden brown.
  • In small bowl, stir together oil, vinegar, mustard, salt, sugar and cumin.
  • Remove and discard outer leaves of endive. Rinse endive with cold water; pat dry. Cut each endive head diagonally into 1/4-inch-thick slices; place in serving bowl. Add walnuts and parsley. Drizzle with dressing; gently toss to coat. Top with grapefruit. Serve immediately.
