1 tablespoon unsalted butter
1 medium yellow onion, cut into 1/4-inch dice
1/4 teaspoon ground cloves
1 teaspoon ground cinnamon
1 cup uncooked basmati rice
1 whole bay leaf
1 cinnamon stick
2/3 cup golden raisins
2 cups water
Salt and freshly ground pepper

Steps:

  • Melt butter in a medium high-sided saucepan set over medium heat. Add onion, cloves, and cinnamon; cook until onion becomes translucent and mixture is very fragrant.
  • Place rice in sieve, and rinse under cold running water. Add rice to saucepan, and stir so grains are coated in butter mixture.
  • Add bay leaf, cinnamon stick, raisins, salt, and pepper to saucepan. Stir in 2 cups water. Raise heat, and bring to a boil. Cover, and reduce heat to a simmer. Cook until all water has been absorbed and rice has cooked, 10 to 15 minutes.
  • Remove pan from heat, and let stand, covered, 5 minutes more. Season with salt and pepper, and serve.

CINNAMON-RAISIN RICE PUDDING

1/2 cup medium-grain rice
1 cinnamon stick, broken in half, plus more, for serving
Kosher salt
4 cups milk
3/4 cup sugar
1 teaspoon pure vanilla extract
3 large egg yolks
1/2 cup raisins

Steps:

  • Bring the rice, cinnamon, a pinch of salt and 3 1/2 cups of the milk to a simmer in a medium saucepot set over medium heat, stirring occasionally. Cook, stirring occasionally, until the rice is just tender, about 12 minutes.
  • Meanwhile, whisk together the sugar, vanilla, egg yolks and the remaining 1/2 cup milk in a medium bowl until smooth. While whisking constantly, slowly add about 1 cup of the hot milk mixture to the yolk mixture until smooth and then whisk back into the pot. Stir in the raisins.
  • Simmer the pudding, stirring constantly, until slightly thickened, about 5 minutes. It will continue to thicken as it cools. Remove and discard the pieces of cinnamon stick.
  • Pour the pudding into a bowl and press a piece of plastic wrap directly on the surface. Cool to room temperature and then refrigerate, if desired. Serve at room temperature or cold, sprinkled with freshly ground cinnamon.

HORCHATA (CINNAMON RICE MILK)

Recently had homemade rice milk in a Mexican restaurant in San Francisco. I talked to a few friends and they told me a few different ways to make it. Here is a simple version (I like to add vanilla, but it is optional). Seriously, it is the best ever - and, it costs just pennies to make!

1 cup long grain rice, rinsed
2 quarts water
1 cinnamon stick, broken into pieces
1 teaspoon vanilla
½ cup white sugar

Steps:

  • In a large saucepan, combine rice, water and cinnamon stick. Set aside for 3 hours.
  • After 3 hours, bring to a boil, reduce heat, and simmer for 30 minutes. Allow to cool.
  • Puree rice mixture in a blender until smooth. Strain through cheesecloth or a fine sieve. Flavor with vanilla and sugar to taste. Chill, and serve over ice.

2 teaspoons olive oil
1 cup basmati rice
2 cups chicken stock or 2 cups broth
1 teaspoon ground turmeric
1/2 teaspoon ground cinnamon
1/2 teaspoon salt
1/4 cup fresh parsley, chopped
1/3 cup golden raisin

Steps:

  • In a heavy saucepan, warm the olive oil.
  • When warm add the onion and rice; cook stirring constantly until onion is transparent and rice begins to brown.
  • Stir in the broth, turmeric, cinnamon and salt.
  • Bring to a boil, reduce heat, cover and simmer until most of the liquid is absorbed, about 20 minutes.
  • The last 5 minutes, stir in the raisins.
  • Remove from heat, stir in parsley, cover and let stand, covered for 5 minutes.

2 tablespoons ground cinnamon
¼ cup butter
2 cups white sugar
1 cup heavy cream
4 eggs
1 cup uncooked white rice

Steps:

  • Combine the milk, cinnamon, butter, and rice in a large pot. Bring to a boil, then reduce heat to low, and simmer for 30 minutes, or until rice is tender. Gradually stir in the sugar.
  • In a medium bowl, whisk together the heavy cream and eggs until smooth. Gradually whisk in about a cup of the hot milk mixture, or enough to raise the temperature to just above body temperature. Gradually stir the warmed egg mixture into the pot. This will keep you from having scrambled egg in your pudding!
  • Simmer the pudding over low heat for about 10 minutes, stirring constantly until thickened. Pour into a baking dish or bowl, and allow to cool for 10 to 15 minutes before refrigerating. Refrigerate for at least 2 hours before serving.

2 cups cooked rice (use short grain Jasmine rice)
2 eggs, well beaten
7 tablespoons sugar
1/8 teaspoon salt
1 teaspoon vanilla
1 1/2 cups whole milk
1/2 cup seedless raisins or 1/2 cup chopped dates
3/4 teaspoon cinnamon
1 (1/2 pint) container whole cream

Steps:

  • PREHEAT OVEN: 350F Degrees.
  • Place in saucepan 2 1/2 cups water.
  • Bring water to a boil and add 1 cup of the Jasmine Rice.
  • Reduce heat and simmer for about 20 minutes.
  • Rice should be almost dry.
  • Combine cooked rice with rest of the ingredients except for the cinnamon and whole cream.
  • Pour into a greased 1 quart casserole.
  • Sprinkle cinnamon over top of rice.
  • Bake in oven for about 40 minutes.
  • (Check pudding in 35 minutes).
  • Pudding should not be dry (moisture should show in the middle of pudding).
  • Take out of oven and allow to sit about 15 minutes.
  • Serve warm with a little of the whole cream.

1/2 c sweetened condensed milk - if you want it sweeter, just add a little more
1 tsp cinnamon or to taste
1 c white rice - not instant

  • 1. Place all ingredients in a medium - large sauce pan, stir to combine and bring to a boil then reduce heat to low and simmer for 40 - 45 minutes or until rice is cooked and is nice and liquid is nice and creamy. Stirring occasionally.

  • Boil water and a pinch of salt.
  • add rice, stir, reduce heat, cover and simmer for 18 minutes (dont peak).
  • in a separate pot add 1 1/2 cups milk, sugar and a pinch of salt and cinnamon sticks.
  • on low heat dissolve sugar in to milk stirring constantly, be careful not to burn the milk.
  • add cooked rice to milk mixture and cook over medium heat for 15-20 minutes or until thick and creamy in consistency.
  • in measuring cup combine 1/2 cup of milk, vanilla, egg (beaten) cinnamon and nutmeg.
  • remove pot from heat and remove cinnamon sticks.
  • add a small amount of the rice mixture to the measuring cup mixture (as to not scramble the egg) then pour the measuring cup mixture into the remaining rice mixture.
  • Fold in raisins (if desired) and butter.
  • pour in to dessert cups and cover with plastic wrap tightly so a film does not form and refrigerate.
  • you can serve chilled or warm what ever your desire.

BASMATI RICE WITH CINNAMON SAFFRON



Basmati Rice with Cinnamon Saffron image

This is a wonderful rice for a formal dinner or party; the quantities can easily be increased.

1 teaspoon saffron threads
3 tablespoons hot milk
1/4 teaspoon ground cardamom
1/4 teaspoon sugar
2 cups basmati rice
2 tablespoons corn, peanut, or olive oil, or ghee
2 medium cinnamon sticks
2 2/3 cups water
1 teaspoon salt

Steps:

  • Place the saffron on a piece of foil. Fold some of the foil over the saffron and crush it with a rolling pin or wooden potato masher. Put the crushed saffron in a small cup. Add the hot milk, cardamom, and sugar. Mix with a toothpick or the handle of a small spoon and set aside for 3 hours.
  • Put the rice in a bowl and wash in several changes of water. Drain, add fresh water to cover generously, and leave to soak for 30 minutes. Drain.
  • Pour the oil in a heavy, lidded pan that will just hold the cooked rice comfortably and set over medium heat. When the oil is hot, put in the cinnamon sticks. Stir for 10 seconds, then add the rice. Reduce the heat to medium-low and stir the rice around until the grain looks translucent, about 2 minutes. Add 2 2/3 cups of water and the salt. Bring to a boil. Cover. Reduce the heat to very, very low and cook for 25 minutes. Turn off the heat. Lift the lid and quickly dribble the saffron milk in any haphazard pattern. Quickly cover again and leave for 10 minutes. Mix the rice very delicately with a slotted spoon before serving.

RICE PUDDING WITH RAISIN & CINNAMON SYRUP

200g pudding rice
zest 1 lemon
zest 1 orange
1l whole milk
100g caster sugar
85g raisins or sultanas
1 cinnamon stick
100g light brown muscovado sugar
3 tbsp double cream

Steps:

  • Put the rice in a large pan with 500ml water and the lemon and orange zest. Bring to the boil, cover, lower the heat, then cook for about 15 mins until all the water has been absorbed. Uncover, stir in the milk and sugar, then simmer for 20-25 mins, stirring often, until the rice is tender and sauce thickened. Cool, then leave at room temperature.
  • Put the raisins into a small pan with the cinnamon, muscovado and 100ml water. Gently heat until the sugar has melted, then bubble for a min until syrupy. Stir in the cream, then cool in the pan.
  • Dish up at the last minute - stir a little milk through the rice mixture if it has become 'solid' after sitting for a while. To serve, divide the rice pudding between 8 glasses or small bowls and top with a spoonful of the syrupy raisins.

4 large egg yolks
3 ounces bittersweet (not unsweetened) or semisweet chocolate, finely chopped
2 teaspoons vanilla extract

Steps:

  • Mix 4 cups milk, rice, sugar and cinnamon sticks in heavy large saucepan. Cook over medium-low heat until rice is tender and mixture is very thick, stirring often, about 45 minutes. Remove from heat. Discard cinnamon sticks.
  • Whisk egg yolks and remaining 1/2 cup milk in medium bowl. Whisk in some of hot rice mixture. Return egg mixture to remaining rice mixture. Stir over medium-low heat until the thermometer registers 160°F., about 3 minutes (do not boil). Remove from heat. Add chocolate and stir until melted and smooth. Stir in vanilla. Transfer pudding to large bowl. Cover and refrigerate until well chilled, at least 4 hours or overnight. (Can be prepared 1 day ahead. Keep refrigerated.) Serve cold.

PERSIAN RICE WITH CINNAMON, PISTACHIOS AND GOLDEN RAISINS

A very easy Persian rice recipe. I am suspecting that the curry powder called for is really advieh/baharat or a similar Persian spice mix. From the cookbook Vegetarian Planet by Didi Emmons. Only a few alterations were made with this recipe.

1 cup white basmati rice, rinsed under cold water in a fine mesh sieve
1/2 teaspoon salt
1/4 teaspoon cracked black pepper
1 garlic clove, minced
orange peel
1/2 teaspoon ground cinnamon
1/4 teaspoon curry powder
2 cups water (not broth)
3 tablespoons roasted pistachios
3 tablespoons golden raisins (sultanas)

Steps:

  • In a saute pan heat the butter over medium heat. Add the rice and saute for about 3-4 minutes, stirring constantly, until the grains begin to turn golden.
  • Stir in the salt, pepper, garlic, orange peel, cinnamon and curry powder. Saute another minute, stirring until the mixture starts to smell fragrant. Now add the water, cover the pan, turn down the heat to a simmer.
  • Cook the rice for 25 minutes. Remove the pan from the heat and stir in the pistachios and golden raisins/sultanas. Remove the orange peels before serving or warn everyone not to eat them.

  • Remove from heat.
  • Add rice; let stand 15 minutes.

  • Bring 4 cups water to boil in large saucepan.
  • Add rice, lemon peel strips, and salt and return to boil.
  • Reduce heat to low cover and simmer until rice is almost tender, about 10 minutes.
  • Drain and discard lemon peel.
  • Combine 5 cups milk, sweetened condensed milk, evaporated milk, and 2 cinnamon sticks in large saucepan.
  • Scrape in seeds from vanilla beans; add beans.
  • Bring to a boil.
  • Reduce heat to medium and boil gently until mixture thickens and is reduced to 2 3/4 cups (45-50 minutes).
  • Remove vanilla beans and cinnamon sticks.
  • Stir in rice, raisins and sugar.
  • Continue to cook on low; stirring until raisins are plump and flavors blend, about 5 minutes.
  • Spoon pudding to bowls,.
  • Sprinkle with ground cinnamon and grated lemon peel.
  • Garnish with cinnamon sticks, if desired.

The first time I tried to make rice pudding when I was a teen it came out looking like a form of cement - needless to say I've improved and this recipe is now a favorite.

1/2 cup arborio rice, uncooked
1 cup nonfat milk
1 cinnamon stick, about 3 inches long

  • In a large, heavy bottomed saucepan, stir together the 2 1/2 cups milk and the rice. Bring to a boil over high heat, stirring occasionally.

1 medium onion, chopped
3 garlic cloves, chopped
3/4 teaspoon cumin seeds
1 (2 1/2- to 3-inch) cinnamon stick
2 tablespoons olive oil
1 1/2 cups long-grain white rice
2 1/4 cups reduced-sodium chicken broth
3/4 teaspoon sugar
3/4 teaspoon black pepper
1 teaspoon salt

Steps:

  • Cook onion, garlic, cumin seeds, and cinnamon stick in oil in a 2- to 3-quart heavy saucepan over moderate heat, stirring, until onion is beginning to soften, about 3 minutes. Add rice and cook, stirring, until grains become slightly translucent, about 2 minutes.
  • Stir in broth, sugar, pepper, and salt and bring to a boil. Reduce heat and simmer, covered, until rice is tender and liquid is absorbed, about 15 minutes. Remove from heat and let stand, covered, 10 minutes. Fluff rice with a fork and discard cinnamon stick if desired.

1 1/3 cups rice
2 2/3 cups water
1/2 teaspoon salt
1/4 cup butter
1/4 cup powdered sugar
ground cinnamon (to taste)

Steps:

  • Heat rice, water, and salt to boiling, stirring once or twice.
  • Reduce heat. Cover and simmer 14 minutes. Remove from heat.
  • Fluff rice lightly with fork, then cover and let steam 5-10 minutes.
  • Stir in butter and powdered sugar.
  • Sprinkle with cinnamon and serve warm.

4 tablespoons butter
1/4 teaspoon curry powder
1 medium onion, chopped
1/2 cup raisins
1/2 teaspoon cinnamon
1 pinch ground cloves
1 cup short-grain rice
2 cups chicken broth
1/4 cup slivered almonds, toasted

Steps:

  • Preheat oven to 350 degrees F.
  • Melt butter in a saucepan that is oven-proof or a 1 1/2 casserole pan add onions and raisins; cook stirring constantly until onion is softened and lightly colored.
  • Add broth and bring to a boil. Add rice and spices and cover.
  • Transfer to oven and bake for 50-60 minutes or until liquid is absorbed and rice is tender.
  • Remove from oven; stir in nuts and serve.
