SPICE-CRUSTED ROAST RACK OF LAMB WITH CILANTRO-MINT SAUCE



Spice-Crusted Roast Rack of Lamb with Cilantro-Mint Sauce image

A gorgeously spiced rack of lamb is seared and then finished in the oven, served with a quick and easy coriander mint sauce.

Number Of Ingredients 15

1 ½ tablespoons coriander seeds
1 ½ tablespoons caraway seeds
1 ½ tablespoons cumin seeds
1 teaspoon cayenne pepper
1 (8 bone) rack lamb ribs
salt and ground black pepper to taste
1 tablespoon olive oil
2 small bunches fresh mint
1 bunch fresh cilantro
1 lime, juiced
1 tablespoon agave nectar
1 tablespoon rice wine vinegar
2 cloves garlic
salt and ground black pepper to taste
½ cup extra-virgin olive oil

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Heat a dry saucepan over medium-high heat. Add coriander, caraway, and cumin seeds; toast until smoky, about 2 minutes. Transfer to a mortar and pestle and roughly grind the spices together.
  • Rub spices over both sides of the lamb; pat down to make a crust. Season with salt and pepper.
  • Heat 1 tablespoon olive oil in an oven-proof skillet over medium-high heat. Add lamb, fat-side down. Cook, flipping halfway, until both sides are browned, about 5 minutes. Immediately transfer the skillet to the oven.
  • Roast lamb in the preheated oven until no longer red in the center, about 8 minutes. An instant-read thermometer inserted into the center should read at least 130 degrees F (54 degrees C). Remove from oven and let rest, about 5 minutes.
  • Combine mint, cilantro, lime juice, agave nectar, vinegar, and garlic in a food processor. Season with salt and pepper. Process until finely chopped. Slowly drizzle in 1/2 cup olive oil while blending to make the sauce.
  • Slice the rack of lamb. Spoon the mint and coriander sauce over each serving.

Seared Sea Scallops with Lemongrass Sauce and Basil, Mint and Cilantro Salad image

2 teaspoons canola oil
1 onion, chopped
6 stalks lemongrass, dry leaves removed, stems pounded; cut into 3-inch lengths
4 cloves garlic, finely chopped
3 red Thai bird chiles, finely chopped (found in grocery stores' Asian section)
2 cups dry white wine
1 can (28 ounce) whole tomatoes, plus juice
Salad:
1/2 cup Thai basil
1/2 cup fresh mint
1/2 cup cilantro sprigs
Juice from 1/2 lime
2 teaspoon canola oil
Scallops:
24 jumbo sea scallops
1 tablespoon canola oil

Steps:

  • Heat oil in a large, nonstick pan over low heat. Cook onion with a pinch of salt until translucent, about 12 minutes. Stir in lemon grass, garlic and chiles. Add wine. Raise heat to high, then simmer 5 minutes. Add tomatoes and juice; break apart tomatoes. Simmer until sauce thickens, about 20 minutes. Force sauce through a colander and discard solids. Season with salt and pepper.
  • For Salad:
  • Toss all ingredients in a bowl; season with salt and pepper.
  • For Scallops:
  • Season with salt and pepper. Heat a large nonstick pan over high heat 1 minute; add oil. Cook 8 scallops 1 minute; reduce heat to medium-high; cook undisturbed until golden, about 4 minutes. Turn scallops over; cook 3 minutes more. Remove from heat. Repeat. Divide scallops and sauce among 8 bowls and top with salad.

TANDOORI-STYLE CHICKEN WITH CILANTRO-MINT SAUCE



Tandoori-Style Chicken with Cilantro-Mint Sauce image

Grilled chicken cutlets are the perfect blank canvas for a flavorful marinade. This one uses yogurt, ginger, garlic and spices. The bright green sauce made from cilantro and mint is creamy and cooling from coconut milk and has a nice kick from fresh jalapeño.

3/4 cup plain whole-milk Greek yogurt
3 tablespoons fresh lime juice
2 tablespoons vegetable oil
1 1-inch piece ginger, chopped
1 shallot, chopped
2 cloves garlic, crushed
1 tablespoon garam masala
1 tablespoon sweet paprika
1 teaspoon ground turmeric
1/2 teaspoon kosher salt
1 1/4 pounds chicken cutlets (4 to 6)
Kosher salt and freshly ground pepper
2 cups fresh cilantro
1 cup fresh mint
1/3 cup coconut milk
1 small jalapeño pepper
2 tablespoons fresh lime juice
1 tablespoon vegetable oil
Kosher salt

Steps:

  • Make the chicken: Preheat a grill to medium high and oil the grates. Combine the yogurt, lime juice, vegetable oil, ginger, shallot and garlic in a food processor. Add the garam masala, sweet paprika, turmeric and kosher salt; puree.
  • Place the chicken between 2 sheets of plastic wrap and pound with a heavy skillet or the flat side of a meat mallet until an even 1/2-inch thickness. Marinate the chicken in the yogurt mixture while you make the cilantro-mint sauce.
  • Make the cilantro-mint sauce: Combine the cilantro, mint, coconut milk, jalapeño, lime juice, vegetable oil and 1/2 teaspoon kosher salt in the food processor. Puree until smooth.
  • Season the chicken with salt and pepper and grill until browned and well marked, 2 to 3 minutes. Flip and grill until the chicken is cooked through, about 2 more minutes.
  • Top the chicken with the cilantro-mint sauce.

1 large onion, finely sliced
1/4 cup red wine vinegar
1 tablespoon honey
2 tablespoons olive oil
1 tablespoon finely chopped cilantro
Salt and pepper
Cilantro-Mint Yogurt Sauce:
1 tablespoon coarsely chopped fresh ginger
1 clove garlic
1 tablespoon jalapeno chile, seeded and chopped
4 green onions, coarsely chopped
1/4 cup cilantro
1/4 cup fresh mint
1 tablespoon fresh lime juice
Pinch of cumin
1 cup plain yogurt
Lamb Kebobs:
1 large onion coarsely chopped
3 cloves garlic, coarsely chopped
1 tablespoon coarsely chopped ginger
1 teaspoon cumin
1 teaspoon ground coriander
1/2 teaspoon ground allspice
1/2 teaspoon turmeric
1/2 teaspoon cayenne pepper
Salt and freshly ground pepper
2 cups yogurt
2 pounds lamb shoulder, cut into 1 inch cubes
Wooden skewers, soaked in water
8 Pita breads, 1-inch of top cut off to open pocket

Steps:

  • Pickled Red Onions: Place all ingredients in a small bowl and season with salt and pepper to taste. Let sit at room temperature for 1 hour.;
  • Cilantro-Mint Yogurt Sauce: Place ginger, garlic and chile in a food processor and process until smooth. Add the onions, cilantro, mint, lime juice and cumin and process until coarsely chopped. Add the yogurt and process until smooth. Season with salt and pepper.
  • Lamb Kebobs: Preheat grill. Heat olive oil in a medium skillet on the grill or sideburner. Add the onions and garlic and cook until soft. Add the spices and continue to cook for 2 minutes, let cool for 5 minutes. Place yogurt in a medium bowl and add the onion/spice mixture. Add the lamb cubes, cover and let marinate in the refrigerator for at least 8 hours.
  • Remove the lamb from the marinade, and season with salt and pepper to taste. Thread 4 to 5 lamb cubes on each skewer and grill for 2 to 3 minutes on each side for medium doneness.
  • Place 4 to 5 pieces of lamb in each pita, add some of the red onions and drizzle with the yogurt sauce.

3 tablespoons vegetable oil, plus more for grill or grill pan
4 skinless, boneless chicken breasts, cut in half and each half cut into thirds
Course salt and freshly ground pepper

Steps:

  • In a medium bowl, combine the cilantro-mint sauce and the oil. Arrange the chicken in a nonreactive dish. Spread the green paste all over each piece of chicken.
  • Heat a well-oiled grill set over medium-high heat until very hot. Season chicken with salt and pepper. Cook until meat is cooked throughout, about 4 minutes per side. Serve.

2 cups packed fresh flat-leaf parsley
2 cups packed fresh cilantro leaves
1 cup fresh mint leaves
3 small cloves garlic, minced
1 small jalapeno, seeds and ribs removed, roughly chopped
1/4 cup plus 2 tablespoons freshly squeezed lemon juice
1 1/2 teaspoons coarse salt
1/2 teaspoon ground cumin

Steps:

  • Combine ingredients in the bowl of a food processor with 3 to 4 tablespoons water. Blend until well combined; the mixture should still have some texture.

CHICKEN AND CORN WITH FIERY CILANTRO-MINT SAUCE



Chicken and Corn with Fiery Cilantro-Mint Sauce image

Fiery Cilantro-Mint Sauce
2 tablespoons unsalted butter
1/4 medium white onion, finely chopped
4 cups corn kernels (about 4 medium ears)
1/2 teaspoon salt, or to taste
1/4 teaspoon ground cumin
1 tablespoon olive oil or vegetable oil
4 boneless skinless chicken breast halves

Steps:

  • 1. Prepare the cilantro-mint sauce. Cover and refrigerate. Melt the butter in a large nonstick skillet, over medium heat, until it foams. Cook the onion, stirring, until softened, about 3 minutes. Add the corn and cook until tender, about 5 minutes. Season with 1/4 teaspoon of the salt and cumin. Set aside off heat. 2. In another large skillet, heat the oil over medium heat until it shimmers and cook the chicken 4 to 5 minutes per side, or until browned on the outside, firm to the touch, and no longer pink inside in the thickest part. To serve, place 1 chicken breast in the center of each of 4 plates. Top each breast with some of the sauce. Spoon the corn equally around the chicken on each plate. CORNISH HENS WITH FIERY CILANTRO-MINT SAUCE



Cornish Hens with Fiery Cilantro-Mint Sauce image

2 Cornish hens (game hens) (about 1 1/4 pounds each) cut in half, rinsed, excess fat removed from cavities and patted dry
2 cloves garlic (medium), pressed
1 teaspoon salt
1/2 teaspoon dried oregano (Mexican variety preferred), crumbled
1/4 teaspoon freshly ground pepper, or to taste
1 tablespoon olive oil
Fiery Cilantro-Mint Sauce

Steps:

  • 1. Rinse the hens and pat dry with paper towels. Place skin side up on a work surface. In a small bowl, mix the garlic, salt, oregano, pepper, and olive oil to make a paste. Rub the mixture all over the hens. Let stand about 20 minutes. 2. Preheat the oven to 400°. Line a baking sheet with foil. Place the hens, skin side up, on the baking sheet. Roast in the middle of the oven 35 minutes, or until the skin is lightly browned and juices run clear when thigh is pierced at the thickest point. Prepare the sauce while the hens are roasting.
