Easy fish tacos, grilled with an awesome marinade and great cilantro lime dressing. Use Asian slaw (from Wegmans), fresh salsa, and avocado to dress.

¼ cup extra-virgin olive oil
2 tablespoons distilled white vinegar
2 tablespoons fresh lime juice
2 teaspoons grated lime zest
1 ½ teaspoons honey
2 cloves garlic, minced
1 teaspoon seafood seasoning (such as Old Bay®)
½ teaspoon ground cumin
½ teaspoon chili powder
½ teaspoon ground black pepper
1 pound mahi mahi fillets, diced
½ cup plain fat-free yogurt
2 tablespoons lime juice
1 ½ tablespoons chopped fresh cilantro
1 (8 ounce) package flour tortillas, warmed

Steps:

  • Combine oil, vinegar, lime juice, lime zest, honey, garlic, seafood seasoning, cumin, chili powder, and black pepper in a nonreactive bowl or large resealable zip-top bag. Add mahi mahi and marinate for 8 hours, or overnight.
  • At the same time, combine yogurt, lime juice, and cilantro for dressing in a bowl. Chill overnight while fish marinates.
  • Preheat an outdoor grill for medium heat and lightly oil the grate. Remove mahi mahi from marinade and place on a grill pan; discard excess marinade. Cook until fish flakes easily with a fork, turning as needed, about 5 minutes.
  • Serve fish on warmed tortillas with dressing.

This is my own recipe that I developed after trying several other recipes. These tilapia fish tacos are quick, easy, and delicious. My family loves them! Garnish with diced tomato, corn, avocado, red onion, and Mexican cheese.

¼ cup Greek yogurt
¼ cup reduced-fat mayonnaise
4 tablespoons lime juice
3 tablespoons diced red onion
1 tablespoon rice vinegar
1 tablespoon dried cilantro
¼ teaspoon hot sauce
½ teaspoon salt
¼ teaspoon ground ancho chile powder
3 cups shredded cabbage
1 ½ pounds tilapia fillets
2 tablespoons lime juice
1 teaspoon ground cumin
½ teaspoon paprika
⅛ teaspoon salt
⅛ teaspoon garlic powder
8 (8 inch) flour tortillas

Steps:

  • Set an oven rack about 6 inches from the heat source and preheat the oven's broiler. Line a baking pan with aluminum foil. Spray generously with cooking spray.
  • Combine Greek yogurt, mayonnaise, lime juice, onion, vinegar, cilantro, hot sauce, salt, and ancho chile powder in a bowl. Stir in shredded cabbage to make the slaw.
  • Place tilapia fillets on the prepared baking pan. Squeeze lime juice over fish. Combine cumin, paprika, salt, and garlic powder in another bowl. Sprinkle spice mixture over the fish.

2 limes, 1 zested, both cut in half
1/4 cup olive oil
1/2 cup rice vinegar
1 tablespoon honey
1 tablespoon grated fresh ginger, plus one 2-inch piece
1 tablespoon soy sauce
1 teaspoon fish sauce
Kosher salt and freshly ground black pepper
6 cups vegetable oil or neutral oil, for frying
1 jalapeno
Two 1 1/2- to 2-pound whole fish such as red snapper or striped bass
4 cups rice flour
1 tablespoon coriander seeds, toasted and ground
1 cup fresh cilantro leaves and small stems (plooms)
4 scallions, sliced on a bias and soaked in ice water

Steps:

  • Preheat a grill pan over medium-high heat. Add the limes cut-side down and cook until deeply charred, 5 to 8 minutes.
  • In a mixing bowl, whisk together the olive oil, rice vinegar, honey, grated ginger, soy sauce and fish sauce. Season with salt and pepper, then set aside.
  • Add the frying oil to a cast-iron skillet large enough so the oil comes no more than halfway up the skillet sides. Heat the oil over medium-high heat. Add the jalapeno and 2-inch piece ginger to the oil.
  • Place the fish on a cutting board and pat dry with paper towels. Make slashes crosswise on a diagonal along the body of the fish every 2 inches on both sides, cutting all the way down to the bone. Season the fish generously inside and out with salt. Mix together the rice flour, coriander, lime zest and 1 tablespoon salt in a shallow bowl. Dredge the fish in the seasoned rice flour.
  • When the oil is 350 degrees F, grip a fish firmly by the tail and carefully lower head-first into the skillet, making sure to lay it down away from you. Repeat with the other fish. Fry until the flesh on the bottom side is cooked through and the skin is deeply browned and crisp, about 4 minutes. While the fish are frying, baste the inside of the heads with hot oil periodically.
  • Use tongs and a fish spatula to carefully turn both fish over. Fry until the flesh on the second side is cooked through and the skin is deeply browned and crisp, about 4 minutes. Transfer to a wire rack and season both sides with more salt.
  • To serve: Place both fish on a platter. Spoon the ginger vinaigrette over the top and around the fish. Garnish with cilantro and scallions and place the grilled limes around the edges.

I used Tilapia, and in place of the dried onion I used fresh. I served it with Recipe #120719. From Taste of Home's Quick Cooking (September/October 1999).

2 lbs cod fish fillets (4 fillets) or 2 lbs flounder fillets (4 fillets)
1/4 teaspoon pepper
1 tablespoon dried onion flakes
1 garlic clove, minced

1/4 cup fresh cilantro or 1/4 cup fresh parsley, minced
2 limes, thinly sliced

Steps:

  • Preheat oven to 375°F.

  • Grind first 4 ingredients in processor to coarse paste, stopping occasionally to scrape sides.

  • To make coleslaw: Quarter, core and thinly slice the cabbage (you should have about 6 cups). Stir the sour cream, lime juice, cumin, garlic and salt together ina large bowl. To make fish: Mix the olive oil, chipotles,lime juice and cumin in a 13x9 inch baking dish. 2 teaspoons fresh lime juice
2 teaspoons fajita seasoning mix
1/4 teaspoon pepper
12 ounces grouper fillets (or mahi mahi)
1 tablespoon margarine, cut in slices
1 tablespoon chopped fresh cilantro
5 flour tortillas (8-inch)
shredded monterey jack cheese
chopped tomato
guacamole
salsa
1/4 cup fresh cilantro leaves
1/4 cup lime juice

Steps:

Add diced pepper and a healthy handful of cilantro and ½ tsp of adobo sauce into a small mixer (or blender), mix until finely chopped. A fresh tomatillo salsa doubles as the poaching liquid for firm-fleshed white fish, such as halibut or cod, served with zesty cilantro rice. This dish is light, but the crispy fried jalapeño slices add just the salty crunch needed on top!

1 1/2 cups long-grain white rice
1 tablespoon vegetable oil, plus more for frying
Kosher salt
3/4 pound tomatillos (about 6 large), husked and quartered
1/4 medium white onion, cut into 4 pieces
3 large jalapeños, stemmed and seeded if desired
2 cloves garlic
1 small bunch cilantro, stems and leaves separated
2 limes, zested and juiced
Four 6-ounce skinless firm, white-fleshed fish fillets, such as halibut or cod, pin bones removed and patted dry
2 tablespoons all-purpose flour

Steps:

  • Stir together the rice, 3 cups water, 1 tablespoon oil and a pinch of salt in a medium pot and bring to a boil over high heat. Cover, reduce the heat to low and cook until fluffy and tender, about 20 minutes.
  • Bring a large straight-sided skillet or saute pan filled with water to a boil over high heat. Add the tomatillos and cook until softened and slightly pale, about 4 minutes. Drain the tomatillos and put in a blender along with the onion, 1 jalapeno, garlic, cilantro stems and 1/2 teaspoon salt. Put the lid on the blender, leaving one corner open. Cover the lid with a kitchen towel to catch splatters, and pulse until smooth, about 1 minute. Pour the tomatillo salsa back into the same skillet or saute pan and set over medium heat.
  • Season the fish fillets on all sides with 2 teaspoons salt. Nestle the fish in the tomatillo salsa, cover and cook until the fish is opaque and there is no resistance when a paring knife is inserted, 6 to 8 minutes.
  • Reserve 1/4 cup loosely packed cilantro leaves for garnish and chop the remaining cilantro leaves to yield 1/4 cup.
  • When the rice is done, use a fork to fluff it, then stir in the lime zest, lime juice and the 1/4 cup chopped cilantro leaves. Season with 1/2 teaspoon salt. Keep warm.
  • Generously coat a small saute pan with oil and heat over medium high until shimmering. Add a pinch of flour to the oil. If it sizzles, the oil is ready for frying. Line a small plate with paper towels.
  • Thinly slice the 2 remaining jalapeños crosswise. Put the flour in a small bowl. Working in batches, coat the jalapeño slices in the flour, then fry on each side until the seeds are golden brown, 2 to 3 minutes total. Transfer to the prepared plate and season with a pinch of salt.
  • To serve, put a quarter of the rice on left side of a wide shallow bowl, spoon a quarter of the tomatillo salsa on the right side and use a spatula to carefully place 1 fish fillet on top. Repeat with the remaining rice, salsa and fish. Garnish with the reserved cilantro leaves and a fried jalapeño slices.

4 TBSP vegetable oil
1 garlic clove, minced

1 tsp minced jalapeno pepper
Juice of 1 lime
1 TBSP Thai fish sauce
Pinch of sugar
1/2 cup fresh cilantro leaves, chopped

  • To prepare the fish, mix together the peppercorns and flour with a sprinkling of salt on a plate. Remove any skiin and bones from the fish. Dredge the fish in the peppercorn mixture. Heat 2 TBSP of the oil over medium-high heat in a nonstick pan large enough to hold the fish. Place the fish in the pan and cook until the edges of the fish have an opaque rim of about an inch. Turn the fish and cook on the other side until the fish is firm to the touch. Remove the fish and keep warm. Into the pan, put the garlic, ginger, and jalapeno and cook for a minute, stirring. Add the lime juice and the remaining 2 TBSP oil, and the fish sauce with the sugar. Add enough water to make a sauce for the fish. Stir in the cilantro and serve over the fish.
