Steps:

- Quarter and thinly slice the cabbage; put in a large bowl. Mix sour cream, onion, cilantro, lime juice, cumin, garlic, and salt in a separate bowl. Pour sour cream mixture over the cabbage and toss to combine. Cover and set aside in the refrigerator for 30 minutes.

- Bake fish fillets according to package directions.
- Wrap the tortillas in aluminum foil and place them in the oven to heat.
- Or heat them at the last minute in a microwave in plastic wrap.

- Cut each hot fish fillet into 6-8 pieces, then pile into a hot tortilla with lots of slaw.

- Make the slaw:
- Cut the cabbage into the thinnest strips you can and make sure those pieces are no longer than 2 inches. This is a great time to get good with your knife if you are looking for a silver f**king lining in all that chopping. Chop the carrot into thin matchsticks of the same length. Got that s**t down now, right? In a small bowl, mix together the lime juice, vinegar, oil, and salt. Add the dressing right before you are going to eat and toss that s**t well. Fold in the cilantro just before serving.
- Make the tacos:
- Crank your oven to 400°F. Chop the cauliflower into small florets no bigger than a quarter. In a saucepan over medium heat, warm the beer, broth, lime juice, tamari, hot sauce, and garlic. Add the cauliflower and simmer for about 90 seconds. Drain.
- In a large bowl. toss the spices, salt, and olive oil together. Add the cauliflower and onion and stir 'til those f**kers are coated. Dump it on a rimmed baking sheet and bake until browned, stirring halfway, about 20 minutes.
- To assemble the tacos, warm the tortillas in the oven or microwave for a hot minute and then pile them high with the cauliflower filling, slices of avocado, some of the slaw, and top with plenty of salsa.
CONFETTI COLESLAW WITH CILANTRO
This recipe is traditionally called "California Cole Slaw", but I made some changes by reworking the recipe. The pretty contrast of colors reminded me of confetti, hence the name. I found the original version "California Cole Slaw" recipe while going through my deceased mother-in-laws recipes. Thought I'd make a couple ingredient changes and wala. Here's the finished product. - To marinate the pork:.
- Blend cilantro, brown sugar, soy sauce, shallots, garlic, lime peel and juice, and hot sauce in a food processor until nearly smooth. With the machine running, gradually blend in the oil. (Makes 3 1/2 cups; use half for marinade and reserve other half for prepared sandwiches).
- Cut the pork loin crosswise into 1/3-inch-thick slices (about 20 slices total). Place the sliced pork loin in a large resealable plastic bag. Add 1 1/2 cups of the marinade and turn the pork slices to coat it all over with the marinade. Twist bag to remove air then seal the bag and refrigerate for 4 hours. Cover the remaining marinade separately and refrigerate.
- To prepare the sandwiches:.
- Prepare the barbecue for medium-high heat. Working in batches, grill the pork slices until just cooked through and still moist and juicy, about 1 1/2 minutes per side. Discard the used marinade. Transfer the pork slices to a large clean platter (do not pile up the slices too much or they will overcook).
- Spread the butter over the cut sides of the buns and grill the buns, buttered side down, until they are toasted, about 1 minute.
- Pile the pork slices (about 5 slices per bun) on the bun bottoms. Drizzle a spoonful of the remaining unused marinade over the pork. Top with the coleslaw then the bun tops and serve immediately.

- To make coleslaw: Quarter, core and thinly slice the cabbage (you should have about 6 cups). Stir the sour cream, lime juice, cumin, garlic and salt together ina large bowl. Add the cabbage, onion and cilantro, and stir together. refrigerate. (Can be prepared to this point up to 1 day ahead). To make fish: Mix the olive oil, chipotles,lime juice and cumin in a 13x9 inch baking dish. Add the fish and turn to coat, and allow to marinate for at least 30 minutes or up to 8 hours covered and refrigerated. Preheat the grill to medium heat . Place the fish fillets on the grill and season with salt and pepper. Grill the fish until just cooked through, about 3 minutes per side. Transfer the fish to a platter. Meanwhile, heat the tortillas over an open gas flame or on a griddle. Wrap them in foil to keep warm. Serve fish, breaking it into large pieces with a serving spoon, with warm tortillas, acvacados, coleslaw and picante sauce, allowing your guests to assemnble their own tacos.
