1/4 teaspoon salt
1/2 teaspoon pepper, divided
1 tablespoon olive oil
3/4 cup apple cider or juice
1/4 cup maple syrup
2 tablespoons cider vinegar

Steps:

  • Preheat oven to 425°. Cut tenderloin in half to fit skillet; sprinkle with salt and 1/4 teaspoon pepper. In a large skillet, heat oil over medium-high heat; brown pork on all sides. Transfer to a 15x10x1-in. pan. Roast until a thermometer reads 145°, 12-15 minutes., Meanwhile, in same skillet, bring cider, syrup, vinegar and remaining pepper to a boil, stirring to loosen browned bits from pan. Cook, uncovered, until mixture is reduced to a glaze consistency, about 5 minutes., Remove pork from oven; let stand 5 minutes before slicing. Serve with glaze.

2 cups apple cider
½ cup honey
¼ cup apple cider vinegar
2 tablespoons brown sugar
⅓ cup whiskey (such as Jack Daniel's®)
3 tablespoons whiskey (such as Jack Daniel's®)
4 thick center-cut pork chops

Steps:

  • Stir apple cider, honey, cider vinegar, and brown sugar in a saucepan over medium heat. Bring to a simmer and reduce heat to low, stirring often, until the mixture reduces to 2/3 cup, about 20 minutes.
  • Simmer 1/3 cup whiskey in a separate small saucepan over medium-low heat until steam no longer smells of alcohol, about 10 minutes; stir into the apple cider mixture. Reduce this mixture to 1/2 cup, forming an apple cider glaze and cool.
  • Stir 3 tablespoons whiskey into apple cider glaze.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Place pork chops into a baking dish; brush with the apple cider glaze.

For the brine:
1 cup kosher salt
1/2 cup (packed) light brown sugar
2 tablespoons black peppercorns
2 tablespoons coriander seeds, lightly crushed
2 tablespoons mustard seeds
12 thyme sprigs
2 bay leaves
4 cups apple cider, divided
1 (5-pound) boneless pork loin (tied if desired)
For the pork:
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
2 tablespoons vegetable oil
1/2 cup country Dijon mustard
1/3 cup (packed) light brown sugar
2 tablespoons maple syrup
2 tablespoons thyme leaves
2 cups apple cider

Steps:

  • Make the brine:
  • Bring salt, brown sugar, peppercorns, coriander seeds, mustard seeds, thyme, bay leaves, 2 cups apple cider, and 2 cups water to a low boil in a medium saucepan over medium heat. Cook, whisking, until sugar and salt dissolve, about 4 minutes. Transfer brine to a large bowl and add remaining 2 cups apple cider and 2 cups ice. Let cool to room temperature.
  • Place pork and brine in a large resealable plastic bag; turn to coat. Seal and chill at least 8 hours.
  • Roast the pork:
  • Remove pork from brine and pat dry with paper towels. Let sit at room temperature 1 hour.
  • Place rack in lower third of oven; preheat to 400°F.
  • Season pork all over with salt and pepper. Heat oil in a large skillet over medium-high. Sear pork, turning occasionally, until browned on all sides (including ends), 10-12 minutes.
  • Meanwhile, combine mustard, brown sugar, syrup, and thyme in a medium bowl.
  • Pour apple cider into a large roasting pan or glass baking dish. Transfer pork, fat side up, to pan. Brush all over with mustard mixture. Roast pork, basting every 15 minutes, until an instant-read thermometer inserted into the center registers 140°F, 50-70 minutes.
  • Transfer to a cutting board and let rest at least 15 minutes before slicing.

  • Pork can be brined up to 24 hours ahead. Keep chilled in plastic bag.

4 sirloin pork chops, trimmed of visible fat and the thickness can range from 1/2-inch thick to 3/4-inch (about 1 1/2 pounds)
fresh ground pepper
salt (optional)
2 teaspoons olive oil (canola oil can be used)
1 cup apple cider (sparkling cider can be used)
1 tablespoon packed brown sugar
2 tablespoons cider vinegar (I have used plain white vinegar as well with no taste difference)
1/4 teaspoon ground mustard (add a pinch or two more to taste if desired)

Steps:

  • Pat pork chops dry with paper towels. Season each side with a sprinkling of pepper, and salt if desired. Heat oil in a large nonstick frying pan or skillet over medium-high heat until just hot then add pork chops and brown both sides (around 5 minutes if your pork chops are around 1/2-inch thick).
  • Stir cider and brown sugar together and add to the frying pan. Reduce heat to low and simmer the pork chops, uncovered, turning the chops after a minute, until the meat is almost cooked through but not quite (about 2 minutes). Remove pork chops to a plate with a fork.
  • Add the vinegar and ground mustard to the frying pan juices and bring to a boil, scraping up any brown bits on the bottom of the pan with a spatula. Continue to cook until the glaze mixture is reduced to about 1/3 cup. It will take 5 to 10 minutes. The cider mixture will get bubbly when it is just about at the syrup/glaze stage.
  • Turn off heat. Place the pork chops back in the frying pan along with any juices that formed on the bottom of the plate.
  • Flip chops over to coat both sides with the cider glaze, cover frying pan and let sit for a minute or two to blend flavors. Check thickest part of the pork chop for desired doneness and serve.

1 tablespoon vegetable oil
2 cox orange pippin apples, each cut into 8 wedges
800 g pork chops
2 sprigs fresh sage
200 ml dry cider
1 tablespoon red currant jelly
200 ml creme fraiche
salt & freshly ground black pepper

Steps:

  • Heat the oil in a large non stick frying pan and cook and apples for 3-4 minutes on each side until golden brown but still firm. Transfer to a plate and set aside.
  • Season the chops with salt and pepper and add to the pan. Cook for 5 minutes until golden brown, turning once. Add the sage and cider and simmer for 15 minutes until the chops are cooked through. Use a slotted spoon to transfer the pork to a large plate. Cover with foil and leave to rest for a few minutes.
  • Stir the redcurrant jelly into the pan and simmer for 2-3 minutes, stirring until the jelly dissolves. Stir in the creme fraiche and apples, heat through gently and season to taste.
  • Pour any juices from the pork into the pan, then divide the chops between 4 plates, spoon overthe apples and sauce and serve with some green vegetables.

3 lbs boneless center cut pork loin roast, tied
salt and pepper
2 tablespoons vegetable oil
6 small shallots, peeled (and halved if large)
2 cups apple cider
1/2 cup apple butter
1 bay leaf
1 sprig fresh thyme
1 teaspoon cider vinegar

Steps:

  • Adjust oven rack to middle position and heat oven to 375°F Pat pork loin dry with paper towels and season with salt and pepper.
  • Heat 1 tablespoon oil in large skillet over medium high heat until just smoking. Place pork loin, fat side down, in skillet and cook, turning it several times until browned on all sides. 8 to 10 minutes. Transfer pork, fat side down to 13 x 9-inch baking dish and roast until thermometer inserted registers 85 degrees. About 25 minutes.
  • While pork roasts, cook remaining tablespoon oil and shallots in empty skillet over medium heat until golden brown, 3 to 5 minutes. Increase heat to high, add cider, apple butter, bay leaf and thyme and bring to boil. Cook until thickened, about 8 minutes.
  • After pork has roasted for 25 minutes, pour glaze over pork and roll pork to coat with glaze. Cook until internal temperature registers 145 degrees. 20 to 30 minutes more, turning over halfway through to recoat with glaze. Transfer pork to cutting board, tent with foil and let rest 20 minutes. Transfer glaze to small saucepan and whisk in vinegar.
  • Before slicing pork, pour accumulated juices from roast into glaze and warm glaze over low heat. Cut roast into 1/4-inch slices, transfer to platter and spoon 1/2 cup glaze over top.

1 1/2 cups plus 1 teaspoon coarse salt
1 1/3 cups sugar
1 (4- to 5-pound) 5-bone rack of pork, frenched
1 teaspoon freshly ground pepper
3 cups apple cider
2 teaspoons apple cider vinegar
1/2 teaspoon paprika
1/2 teaspoon ground cumin
1 teaspoon chile powder

Steps:

  • Fill a large pot with 2 quarts water; add 1 1/2 cups salt and sugar. Bring to a boil over high heat and cook until salt and sugar are dissolved. Remove from heat and let brine cool completely.
  • Place pork in a large container and cover with brine. Transfer to refrigerator and let marinate for 45 minutes. Remove pork from brine and pat dry with paper towels.
  • Preheat oven to 425 degrees with rack in the center. Fit a roasting pan with a rack and set aside.
  • Season pork with remaining 1 teaspoon salt and 3/4 teaspoon freshly ground pepper. Place pork on rack and transfer to oven; cook until an instant-read thermometer reaches 130 degrees when inserted into the thickest part of the pork, about 45 minutes.
  • Meanwhile, place cider in a medium saucepan over medium-high heat until reduced and turns into a dark golden-brown loose syrup, about 20 minutes. Remove from heat and add vinegar; stir to combine. Pour glaze into a small bowl and transfer to refrigerator; let cool.
  • In a small bowl, mix together paprika, cumin, remaining 1/2 teaspoon black pepper, and chile powder; set spice mixture aside.
  • Brush half of the glaze over pork and return to oven for 2 minutes more. Remove from oven and let stand for 15 minutes; brush with remaining glaze and sprinkle with spice mixture.
  • Cut the pork rack into chops by cutting between each set of bones; transfer chops to a large platter. If any glaze remains, add juices from pork to glaze and stir to combine; pour over chops and serve immediately.

1/2 cup distilled white vinegar or cider vinegar
1/3 cup light brown sugar

4 boneless, center-cut pork loin chops, 5 to 7 ounces each, 1/2 to 3/4 inch thick
Note: I used 2-inch thick chops and increased the cooking time by about 10 additional minutes

Steps:

  • Combine all glaze ingredients in medium bowl; mix thoroughly and set aside. Trim the chops by slashing through the fat and silver skin with sharp knife, making 2 cuts about 2 inches apart in each chop (do not cut into meat of chops). Pat chops dry with paper towels; season with salt and pepper. Heat oil in heavy-bottomed 12-inch skillet over medium-high heat until smoking. Add pork to skillet and cook until well browned, 4 to 6 minutes. Turn chops and cook 1 minute longer; pour off any oil in skillet. Add the glaze mixture to the skillet and let the chops poach about 5 to 8 minutes, or until the internal temperature reaches 140°F with a meat thermometer. Remove the chops to a plate and let rest while you finish the glaze. Note: If your chops are on the thinner side, check their internal temperature after the initial sear. If they are already at the 140°F mark, remove them from the skillet and allow them to rest, tented with foil, for 5 minutes, then add the platter juices and glaze ingredients to the skillet and proceed with step. 1 1/2 lbs boneless pork chops, sliced thin
1 teaspoon salt
1 teaspoon pepper
1 lb granny smith apple (about 3)
1 small onion, cut into 16 thin wedges
2 tablespoons butter
3/4 cup beef broth
1/3 cup apple cider
1/4 cup pure maple syrup
1 1/2 teaspoons Dijon mustard
1/2 teaspoon cornstarch

Steps:

  • With a mallet or rolling pin pound pork chops in-between two sheets of plastic wrap until 1/4 inch thin.
  • Salt and pepper both sides of chops.
  • Peel and core apples, cutting into 12-16 wedges each (up to you how thin you want the slices).
  • Melt 1 T.
  • butter in a 12 inch fry pan over mediun heat.
  • Cook apples and onions until lightly browned, about 8 minutes total.
  • Remove to a plate and cover to keep warm.
  • Add the remaining 1 T.
  • butter inccreasing heat to medium high.
  • Add chops and cook for 3 minutes on one side, turn and cook for another three minutes.
  • Cut one to check if no longer pink and if not, remove to the plate with the apples and onions, covering again to keep warm.
  • Mix together broth, cider, syrup, mustard and cornstarch.
  • Add to fry pan and bring to a boil.
  • Cook until reduced to about 1/2 cup, around 5 minutes.
  • Gently toss chops with apple mixture.

Pour off oil. DO AHEAD Can be made 2 hours ahead. Let stand at room temperature. * Preheat oven to 350°F. Drain pork. Pat dry with paper towels. Sprinkle pork with pepper. Heat 2 tablespoons oil in heavy large ovenproof skillet over medium-high heat. Add pork; cook until brown, about 3 minutes per side. Add 1 tablespoon butter and sage to skillet; baste pork with butter. Transfer skillet to oven. Roast until thermometer inserted into center of chops registers 140°F, 10 to 15 minutes. Remove pork from oven; let rest 10 minutes. * Meanwhile, add maple syrup and 1/2 tablespoon butter to turnips and cook over medium-high heat until turnips are thickly coated, stirring frequently, about 5 minutes. Apple Cider Glazed

Four 14-ounce pork chops
Marinade, recipe follows
1 cup Apple Cider Glaze, recipe follows
3 cups Sweet Potato Hash, recipe follows
Salt and pepper, to taste
4 rosemary sprigs
2 ounces bourbon
2 ounces Worcestershire
1 handful juniper berries, crushed
Freshly crushed black pepper
Pinch of rosemary, thyme, sage, chopped
1/4 cup olive oil
2 tablespoons honey
1 cup brown sugar
3 cups apple cider
1/2 cup cider vinegar
1 clove garlic, minced
1 sprig fresh thyme
1 sprig fresh sage
1 teaspoon ground black pepper
1/2 cup yellow onion, diced
1 clove garlic, minced fine
2 tablespoons olive oil
1 cup andouille sausage, diced
2 whole sweet potatoes, peeled and diced 1/4 by 1/4-inch
1 cup chicken stock
3 tablespoons heavy cream
1 teaspoon salt
1/2 teaspoon black pepper, finely ground

Steps:

  • Marinate the pork chops for 2 to 3 hours. In the meantime make the hash and glaze.
  • Preheat grill to medium. Remove the chops from the marinade and wipe off any excess marinade. Grill chops, basting with Cider Glaze until desired temperature. Medium temperature is 15 to 18 minutes. Present chops with a base of Sweet Potato Hash with pork chop placed on top and garnish with a rosemary sprig.
  • Mix ingredients together.
  • Caramelize the honey and brown sugar in a pan over medium heat, stirring constantly. Combine the apple cider, vinegar and garlic and add to sugar, bring to boil over high heat. Lower the heat to medium and simmer for 30 minutes. Strain into a small saucepan and add thyme, sage, and pepper and cook over medium heat for 15 minutes. Remove herbs and reserve for pork chops.
  • Saute onions and garlic in the olive oil over medium heat in saucepan until translucent. Add andouille sausage and stir well to combine. Once some of the fat begins to render from the sausage and the diced sweet potato and cook for stirring frequently for 10 minutes. Add chicken stock until evaporated then add cream and reduce until liquid is absorbed. Season with salt and pepper and keep warm.

APPLES:
8 TBLS UNSALTED BUTTER
8 LARGE GOLDEN DELICIOUS APPLES, CORED, EACH CUT INTO 8 WEDGES
1/2 CUP PACKED GOLDEN BROWN SUGAR
2 1/4 LBS PORK TENDERLOIN, CUT INTO 1" THICK ROUNDS
2 TBLS BUTTER
1/2 CUP CALVADOS OR APPLEJACK

Steps:

  • FOR SAUCE: Melt butter in heavy large saucepan over medium heat. Add garlic and mustard and saute 30 seconds. Add flour and stir 2 minutes. Gradually whisk in stocks and cider. Boil until reduced to sucess consistency, stirring occasionally, about 45 minutes. FOR APPLES: Melt 4 tbls butter in large skillet over medium high heat. Add half of apples and half of sugar,. Saute until apples soften about 5 minutes. Place in a bowl. Repeat with 4 tbls butter, apples and sugar. Combine all apples in skillet. Can be made 4 hours ahead. Keep at room temperature. FOR PORK: Pound pork between sheets of waxed paper to 1/2" thickness. Coat with flour. Melt butter in another large skillet over high heat. Add pork in batches; saute until cooked, about 2 mintues per side. Transfer to plate. Return all pork to skillet. Remove from heat. Add Calvados; ignite with match. When flmaes subside, return skillet to heat; boil until most liquid evaporates. Bring sauce to simmer, stirring occassionally. Rewarm apples. Serve pork apples and cider sauce.

2 pounds boneless skinless pork belly
1 tablespoon evoo
2 medium carrots, coarsely chopped
2 celery ribs, coarsely chopped
1 medium red onion, coarsely chopped
1/2 fennel, coarsely chopped
1 bottle hard cider
2 cups chicken broth
2 cups apple cider
1 bottle of hard cider
5 tablespoons evoo
1 pound brussels sprouts, sliced lengthwise 1/" thick
1 shallot, minced
1/4 cup sherry vinegar
1 1 head frisee, cut into bite size pieces
1 red apple, unpeeled cut into 1/2" dice
1 kosher salt and pepper
1/4 cup gorgonzola crumbled

Steps:

  • Braise the pork belly Position a rack in the center of the oven and heat the oven to 350°F. Pat the pork belly dry with paper towels. With a paring knife, cut a 3/4-inch crosshatch pattern through the fat, but not through to the meat. Season with 2 tsp. salt and 1 tsp. pepper. Heat the oil in a heavy-duty 7- to 8-quart pot over medium heat. Put the belly, fat side down, in the pot (cut to fit, if necessary) and cook until golden brown, about 7 minutes. Flip the belly, then add the carrots, celery, onion, fennel, hard cider, and broth. Cover, transfer to the oven, and braise until the pork is fork-tender, 2 to 3 hours. Remove from the oven and cool. Cut into 12 pieces, about 1 inch wide and 3 inches long. Discard the braising mixture.
  • Make the glaze Put the apple cider and hard cider in a 2-quart saucepan. Bring to a boil over medium heat, then reduce the heat to low and cook, stirring occasionally, until syrupy, about 1 hour.
  • Make the Brussels sprouts and serve Heat 2 Tbs. of the oil in a 12-inch skillet over medium-high heat. Add the pork belly and cook, fat side down, until the meat is warm and the fat softens, about 2 minutes. Transfer to a plate. Add the Brussels sprouts and cook undisturbed until browned on one side, about 3 minutes. Add 1/4 cup water, stir, and cook until tender, about 3 minutes more. Add the shallot and cook, stirring, until fragrant, about 1 minute. Add the vinegar and toss. Add the frisée, apple, nuts, and the remaining 3 Tbs. oil, and toss. Season to taste with salt and pepper. Brush the pork belly with the glaze, then drizzle the remaining glaze evenly over the Brussels sprout mixture. Top the Brussels sprout mixture with the pork belly pieces. Sprinkle with the Gorgonzola, and serve.
  • Make Ahead Tips The belly pork belly can be braised up to two days ahead and refrigerated in an airtight container. Bring to room temperature before searing and glazing.

1/3 cup light brown sugar

4 boneless, center-cut pork loin chops, 5 to 7 ounces each, 1/2 to 3/4 inch thick
Salt and ground black pepper
1 tablespoon vegetable oil

Steps:

  • 1. Combine all glaze ingredients in medium bowl; mix thoroughly and set aside. Following illustrations below, trim chops and slash through fat and silver skin with sharp knife, making 2 cuts about 2 inches apart in each chop (do not cut into meat of chops). Pat chops dry with paper towels; season with salt and pepper. 2. Heat oil in heavy-bottomed 12-inch skillet over medium-high heat until smoking. Add pork to skillet and cook until well browned, 4 to 6 minutes. Turn chops and cook 1 minute longer; transfer chops to plate and pour off any oil in skillet. (Check internal temperature of thinner chops; see note above.) Return chops to skillet, browned side up, and add glaze mixture; cook over medium heat until center of chops registers 140 degrees on instant-read thermometer, 5 to 8 minutes. Remove skillet from heat; transfer chops to clean platter, tent with foil, and let rest 5 minutes. 3. When chops have rested, add any accumulated juices to skillet and set over medium heat. 5 boneless pork chops
2 medium/large onions " sliced "
5 tablespoons butter unsalted " divided into 3 + 2 "
3 cups sliced napa cabbage
6 carrots cut into chunks
6 stalks of celery
8 yukon gold potatoes
2 cans vernor's ginger ale " reduced to a wee bit over 1 cup "
2 & ½ cups apple cider " reduced to ¾ cup "
1 tablespoon turbinado sugar
salt
pepper
caraway seeds

Steps:

  • 1. Cook the ginger ale on a simmer till you have a little more than a cup and it is all syrupy and a dark amber color.
  • 2. Cook the cider down till it has reduced to ¾ cup.
  • 3. Caramelize the onions in the butter & sugar, remove from the pan and set aside.
  • 4. Peel the carrots, and cut into large pieces.
  • 5. In the same pan that you cooked the onions in brown the carrots adding the other 2 tablespoons of butter, when they are browned remove them.
  • 6. Wash the potatoes, peel them and cut them into quarters; brown them in the pan from the onions and carrots. When they are slightly browned remove them.
  • 7. Sauté the celery for about 5 minutes on low.
  • 8. Chop the cabbage.
  • 9. In the pan that you sautéed the vegetables in "DO NOT CLEAN THE PAN" all those beautiful browned bits on the bottom of the pan add more flavor to this dish! Arrange the potatoes, and sprinkle with a bit of salt and pepper.
  • 10. Add the celery, carrots & cabbage on top of the potatoes. Sprinkle the caraway seeds over the vegetables and cabbage.
  • 11. Pour the reduced ginger ale over the vegetables.
  • 12. Salt and pepper the chops on both sides and place on top of the vegetables.
  • 13. Pour the reduced apple cider over the chops and vegetables.
  • 14. Top with the caramelized onions.
  • 15. Cover and cook on 325 for 30 to 45 minutes or until the vegetables are soft and the chops are done. The time will depend on your oven.
  • 16. If you cannot find Vernor's you can use Seagram's ginger ale. And you can use apple juice in place of the cider.

Maple-Cider Glaze:
2 tablespoons unsalted butter
1/2 medium-size onion, chopped
1 cup maple syrup
1/2 cup cider vinegar
1 tablespoon Dijon mustard
1/4 teaspoon salt
Pork and Squash:
1 tablespoon chopped fresh sage
1/2 teaspoon salt
1/4 teaspoon black pepper
2 pork tenderloins ( 2 pounds total)
4 small acorn squash (about 4 pounds total), trimmed

Steps:

  • Glaze: 1. In saucepan, melt butter over medium heat. Add onion; saute 2 minutes. Stir in syrup, vinegar. Boil until reduced to 1 cup, 8 minutes. Scrape into bowl; whisk in mustard and salt. Chill 30 minutes to thicken. Pork and Squash: 2. In cup, mix sage, salt and pepper. Rub over tenderloins. Cut squash crosswise into 1/2-inch-thick rings. Discard seeds, leaving rings in one piece. 3. Prepare outdoor grill with hot coals, or heat oven broiler, or heat grill pan. (If glaze is too thick, microwave at 100 percent power to loosen, 30 seconds.) 4. Grill pork and squash 5 minutes; turn over; brush with glaze. Continue to grill, turning and brushing every 5 minutes for the first 15 minutes of grilling, until pork registers 160 degrees F and squash is tender, 20 minutes total. Discard any remaining glaze.
