2 cups packed brown sugar
1 cup shortening
1/2 cup buttermilk
2 eggs
3 1/2 cups Gold Medal™ all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
2 cups candied cherries, cut in half
2 cups chopped dates
1 1/2 cups chopped pecans
Pecan halves, if desired

Steps:

  • In large bowl, beat brown sugar, shortening, buttermilk and eggs with electric mixer on medium speed until blended, or mix with spoon. Gradually stir in flour, baking soda and salt. Stir in cherries, dates and chopped pecans. Cover and refrigerate 1 hour.
  • Heat oven to 375°F. Grease cookie sheet. Drop dough by rounded teaspoonfuls about 2 inches apart onto cookie sheet. Place a pecan half on each cookie.
  • Bake 8 to 10 minutes or until almost no indentation remains when touched lightly. Immediately remove from cookie sheet to wire rack.

¾ cup packed brown sugar
1 cup dark corn syrup
1 egg, beaten
1 tablespoon lemon juice
1 teaspoon lemon zest
2 ¾ cups all-purpose flour
½ teaspoon baking soda
1 teaspoon ground cinnamon
½ teaspoon ground cloves
½ teaspoon ground nutmeg
¾ teaspoon ground cardamom
½ cup diced mixed candied fruit
½ cup chopped walnuts

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Line a cookie sheet with parchment paper and lightly grease. These cookies are really sticky.
  • In a large bowl, mix together the corn syrup, brown sugar, egg, lemon juice, and lemon zest, with an electric mixer. Sift together the flour, baking soda, cinnamon, cloves, nutmeg, and cardamom, and stir into the sugar mixture. Add candied fruits and chopped nuts; mix well.
  • Drop dough by tablespoons onto prepared cookie sheet, about 4 inches apart. Spread dough into a 3 inch circle. Bake in the preheated oven for 12 to 14 minutes, cookies should be browned and firm.

A delicious candied fruit and nut Christmas cookie recipe

1/2 cup butter
1/2 cup light brown sugar
2 eggs, beaten
2 cups all-purpose flour
1/2 teaspoon baking soda
1/2 cup chopped pecsns or walnuts
1 cup candied cherries, chopped
4 slices candied pineapple, red and green, chopped

Steps:

  • 1. Cream butter, and sugar until fluffy. Stir in beaten eggs. Mix well.
  • 2. Sift flour and soda together - add to butter and sugar mixture.
  • 3. Mix candied fruit and nuts with 1/4 cup of flour and add to the mixture. Mix well.
  • 4. Drop by teaspoons full on a greased cooking sheet. Bake at 350 degrees for about 10 minutes. Do not overcook or fruit will become hard.
