1/4 cup cranberry sauce
1/2 orange, zested and juiced

1/2 cup chopped pecans

1 tablespoon sugar

I find any excuse possible to serve this. Great around the holidays but worthy of being made all year round. It is the dish I am most often asked to bring to a gathering requiring finger foods or appetizers. Really good on Townhouse Wheat Crackers. If I don't have any orange juice concentrate, I use just enough fresh squeezed juice to make it the right consistency and the zest from the orange for more flavor. *PLEASE NOTE!!* You REALLY need to make this ahead of time! The flavors must blend for it to taste good!

8 ounces cream cheese, softened
1/2 cup chopped pecans
1/2 cup dried cranberries
1/4 cup orange juice concentrate

Steps:

  • Using an electric mixer, beat at medium speed and cream the cream cheese until soft and fluffy.
  • Add remaining ingredients and stir to combine.
  • Cover with plastic wrap and refrigerate until flavors blend, at the very least 60 minutes.

2 packages (12 ounces each) fresh or frozen cranberries, thawed
1-1/2 cups sugar
1 cup orange juice
1/4 cup bourbon
3 teaspoons vanilla extract
1 teaspoon grated orange zest

Steps:

  • In a large saucepan, combine cranberries, sugar, orange juice and bourbon. Bring to a boil. Reduce heat; simmer, uncovered, until berries pop and mixture has thickened, 18-22 minutes., Remove from heat. Stir in vanilla and orange zest. Ladle hot mixture into 4 hot half-pint jars, leaving 1/4-in. headspace. Remove air bubbles and adjust headspace, if necessary, by adding hot mixture. Wipe rims. Center lids on jars; screw on bands until fingertip tight., Place jars into canner with simmering water, ensuring that they are completely covered with water. Bring to a boil; process for 15 minutes. Remove jars and cool.

2 cups sugar
3/4 cup butter, softened
1 teaspoon almond extract
2 cups all-purpose flour
2-1/2 cups fresh or frozen cranberries, thawed
2/3 cup chopped pecans
Whipped cream, optional

Steps:

  • In a large bowl, beat eggs and sugar until slightly thickened and lemon-colored, about 5 minutes. Add butter and extract; beat 2 minutes. Gradually stir in flour just until combined.
