Chocolate Peanut Butter Truffles image

1 cup heavy cream (preferably not ultra pasteurized)
3/4 cup smooth peanut butter (commercially prepared)
24 ounces semisweet chocolate, melted
1 teaspoon pure vanilla extract
1/2 cup powdered sugar
'Goobers' for truffle center, optional
1/2 cup Dutch processed unsweetened cocoa powder
1/2 to 1 cup finely ground cocktail peanuts (optional)

Steps:

  • To prepare chocolate peanut butter mixture and chill: Heat cream with peanut butter in a 1quart heavy bottomed saucepan. Use a whisk to break up peanut butter so it melts evenly. Meanwhile, melt chocolate in the top of a double boiler over barely simmering water. When chocolate and peanut butter is smooth, combine with melted chocolate, using a whisk. Force through a mediummesh sieve into another bowl, using a rubber spatula. Stir in vanilla. Let cool, then cover and chill 2 to 4 hours (or overnight). To up to shape truffles: Whisk powdered sugar and cocoa together, then sift into another bowl to combine thoroughly. Grind peanuts, if using, in the bowl of a food processor fitted with the steel blade. Line a large baking sheet or tray with waxed paper or 30 to 50 1inch paper candy cups (yield will depend on the size of your scoop used to shape truffle). To shape truffles: If very chilled, let mixture sit out at room temperature for 20 minutes to soften slightly. Scoop out or spoon small portions of chilled filling and roll into a ball. If desired, push a "Goober" through the side, into center of round and roll to correct shape. Roll truffle in cocoa mixture or ground nuts and place in candy cups. Place in a decorative tin or gift box, separated by sheets of waxed paper or decorative foil. Keep chilled to maintain best flavor and texture.

1 banana, mashed
⅓ cup heavy whipping cream
2 tablespoons peanut butter
¼ cup sifted confectioners' sugar, or as needed

Steps:

  • Mix chocolate, banana, cream, and peanut butter together in a saucepan over medium heat; cook and stir mixture until melted (it may be partially lumpy due to peanut butter), 5 to 10 minutes. Pour mixture into a bowl and refrigerate until firm, 2 1/2 to 3 hours.
  • Scoop chocolate mixture with a melon baller and roll into 1-inch balls. Place confectioners' sugar in a shallow bowl; coat truffles with confectioners' sugar and refrigerate until firm, 1 to 2 more hours.

These healthy truffles will blow you away! The soft, nutty, peanut butter oatmeal center combined with the salted dark chocolate outer layer make them a delicious dessert. They are fairly easy to make with just a handful of ingredients, so I like to whip them up in small batches for the week and keep the in the fridge. If you'd like to make more, you can definitely double or triple the recipe!

1 cup pecans
1 cup rolled oats
¼ cup peanut butter
2 tablespoons coconut oil
¼ cup cocoa powder
3 tablespoons maple syrup
coarse sea salt

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Spread pecans in a single layer on a baking sheet.
  • Bake pecans in the preheated oven until toasted and fragrant, about 10 minutes. Transfer to a bowl and refrigerate until cool, about 10 minutes.
  • Combine toasted pecans, rolled oats, and peanut butter in a food processor or blender; blend, stopping to scrape down sides, until a thick "dough" forms.
  • Microwave coconut oil in a microwave-safe bowl until melted, 10 to 15 seconds. Stir in cocoa powder and maple syrup until smooth. Line a baking sheet with aluminum foil.
  • Roll dough into 1-inch balls with your hands. Dip balls one at a time in the chocolate mixture using a spoon or fork, covering all sides. Transfer to the baking sheet. Let truffles sit, 3 to 5 minutes. Sprinkle sea salt on top.

1 (8 ounce) package semisweet baking chocolate
1/2 cup peanut butter
1 (8 ounce) container whipped topping, thawed
powdered sugar
finely chopped nuts
coconut flakes
multi-colored candy sprinkles
chocolate sprinkles or vanilla candy sprinkles
cookie crumbs

Steps:

  • In a large, microwave-safe bowl, microwave the chocolate squares on high power for 1 minute.
  • Stir chocolate and microwave for another minute or until chocolate is melted.
  • Remove bowl from the microwave and mix in peanut butter until smooth.
  • Let the mixture sit until it has cooled to room temperature.
  • Mix in whipped topping and refrigerate for about an hour.
  • Shape the mixture into one inch balls.
  • Using a melon baller or teaspoon may make this easier.
  • Roll the balls in your choice of coatings.

1/2 cup heavy cream
2 tablespoons butter, cut into bits
3/4 cup chunky peanut butter

Steps:

  • In a large saucepan combine the chocolate, cream, butter and peanut butter and heat over moderate heat, stirring, until chocolate is completely melted.
  • Remove from heat and stir in vanilla and a pinch of salt.
  • Transfer to a bowl and chill for 4 hours, or until firm.
  • Form mixture by heaping teaspoons into balls and roll lightly in peanuts.
  • Chill on a baking sheet lined with wax paper for 1 hour, or until firm.
  • Keep in an airtight container, chilled, for up to 2 weeks.

Steps:

  • Place sugar in a large bowl; set aside. Combine butter, cream, peanut butter, and vanilla in a saucepan over medium heat. Cook, stirring, until butter and peanut butter are just melted. Pour over sugar in bowl and whisk until smooth. Transfer to an 8-inch-square baking dish and smooth surface. Place parchment or plastic wrap directly on surface of mixture and refrigerate until set, about 2 hours.
  • Roll heaping teaspoonfuls of peanut-butter mixture into 1-inch balls. Melt chocolate, stirring until smooth, in a bowl set over a saucepan of simmering water; remove from heat. Gluten-Free Chocolate-Peanut Butter Cookie Truffles image

Chocolate chip cookies and peanut butter mixed together makes an irresistible treat -- and it's gluten free!

1 box (1 lb 3 oz) Betty Crocker™ Gluten Free chocolate chip cookie mix
Butter, vanilla and egg called for on cookie mix box
4 oz cream cheese, softened
1/2 cup creamy peanut butter
2 cups semisweet chocolate chips
2 tablespoons shortening

Steps:

  • Heat oven to 350°F. Make cookies as directed on box. Cool completely, at least 15 minutes. Set aside 2 cookies for garnish.
  • In food processor, process half of the remaining cookies to fine crumbs. Remove and set aside; continue to process second half of remaining cookies to fine crumbs. Mix all of cookie crumb mixture in food processor. Add cream cheese and peanut butter. Process until well combined and mixture can be pressed into a ball, 1 to 2 minutes. Shape cookie mixture into 50 (1 1/4-inch) balls; place on cookie sheet lined with waxed paper. Refrigerate 15 minutes.
  • In medium bowl, microwave chocolate chips and shortening uncovered on High 60 to 90 seconds or until mixture can be stirred smooth. Place 2 reserved cookies into quart-size resealable food-storage plastic bag. Seal bag; finely crush cookies with rolling pin. Set aside crushed cookie crumbs for garnish of truffles.
  • Remove half of the cookie balls from refrigerator. Using 2 forks, dip and roll chilled cookie balls, one at a time, in melted chocolate. Return to lined cookie sheet; immediately sprinkle top with crushed cookie crumbs. If chocolate has cooled too much, reheat. Refrigerate truffles about 10 minutes or until coating is set. Repeat with second half of cookie balls. Store covered in refrigerator.

6 tablespoons organic sunflower seeds (ground)
6 tablespoons organic sesame seeds (ground)
10 tablespoons organic cocoa nibs (ground and divided)
2 tablespoons organic vanilla extract
1/4 teaspoon sea salt
3 tablespoons agave nectar
1 tablespoon sugar substitute (I used Z-Sweet natural sweetener)
3 tablespoons crunchy organic peanut butter
2 teaspoons ground ginger

Steps:

  • Grind the sunflower seeds, sesame seeds separately. Add to your food processor. Grind the cocoa nibs up and take out 5 tablespoons These are for coating the truffles.
  • Add the rest of the ingredients and process until the dough holds together well.
  • Transfer the dough to a bowl and roll into little balls. I found that I had to squeeze the dough a few times to get it to stick together.
  • Roll the truffles in the reserved ground cocoa powder you made and put into the fridge for at least an hour to set up.
  • Bon Appetit.

DARK CHOCOLATE PEANUT BUTTER BACON TRUFFLES



DARK CHOCOLATE PEANUT BUTTER BACON TRUFFLES image

3 pieces crispy pork bacon, pan fried and chopped finely
12 oz dark chocolate chips, divided
1/8 c. peanut butter
1 1/2 tbsp bacon fat, cooled, but in liquid state
1/2 c heavy cream
red sugar sprinkles (optional)

Steps:

  • First, in a small bowl, stir the bacon fat into the peanut butter until mixed through. The result will look like runny peanut butter. Set aside. Place 6 oz of chocolate chips in a large heatproof bowl. Place the cream in small saucepan over medium heat. Heat just until the cream begins to boil (watch for bubbles at the edge of the pan). Quickly pour cream over chocolate and beat quickly with whisk. The cream will melt the chocolate to form a ganache, which will be smooth, shiny and thick. Stir the peanut butter mixture and the bacon pieces into the ganache, using a spatula. Line a cookie sheet with parchment paper and spread ganache out into a thin layer using the spatula. Allow ganache to sit for 3-4 hours, until it is the consistency of toothpaste. Using a spatula, scoop ganache into a gallon ziptop bag and cut the tip. Re-line the cookie sheet and squirt about 1 tbsp of ganache out of the bag onto the cookie sheet. Repeat forming lines. Refrigerate for about 30 minutes. Remove ganache from refrigerator and use clean hands to shape into balls. Once all the ganache has been smoothed into balls, place back in the refrigerator for another 15-20 minutes. After 15-20 minutes, use a double-boiler to melt the remaining 6 oz of chocolate, stirring frequently with a spatula. Once chocolate is melted, immediately remove from heat. Bring the chocolate back to room temperature by stirring it around. (It is essential you cool the chocolate back down or you will melt your ganache.) Dip the ganache balls in the tempered chocolate one at a time, using a fork to roll the around, then drip off excess chocolate. Place coated truffles back on parchment. Decorate with sprinkles. Refrigerate again until hardened (about 20 minutes).

  • 1. In a double boiler, melt chocolate and cream until smooth. Whisk in the peanut butter. Spread mixture into a 9" pan or pie plate. Refrigerate until hard, at least 1 hour to overnight. 2. Place the ground peanuts in a shallow dish. Line a baking sheet with parchment paper. Scoop out 30 heaping spoonfuls of truffle mixture. Place them in a single layer on the prepared sheet. When all scoops have been made, lightly roll them between your palms to give them a nice round shape. If at any point the chocolate gets too warm, making the truffles too difficult to roll, refrigerate for 30 minutes until it firms up. 3. Roll the truffles, a few at a time, in the ground peanuts. Press peanuts gently into truffles to get them to stick. Store in wax-paper lined container, separating layers with wax paper. Cover tightly and freeze.

  • Beat the peanut butter into the cream cheese with of the 4 tablespoons Splenda and 1/2 teaspoon of the cocoa powder. Cover and refrigerate until firm, about 20 minutes.
  • Roll mixture into marble sized balls and place in the freezer for 30 minute to firm.

1/2 lb bittersweet chocolate (Bakers Chocolate)
1/2 lb semisweet chocolate (Bakers Chocolate)
1 cup heavy cream
1 tablespoon brewed coffee
1/2 teaspoon vanilla extract
powdered sugar
brown sugar
peanut butter

Steps:

  • Semi melt Chocolate In Microwave Safe Bowl.
  • Heat Heavy Cream To Low Boil Remove From Heat.
  • Let Heavy Cream Stand For 20 Seconds.
  • With a wire whisk, slowly stir the cream and chocolates together until the chocolate is completely melted.
  • Stir In Coffee.
  • Add Peanut Butter & Brown Sugar To Taste.
  • Let Stand At Room temperature For 30 minutes.
  • Roll By Hand Into Balls.
  • Coat In Powdered Sugar.
  • Place in Freezer For 10 minutes.
  • Serve At Room temperature.
  • ENJOY!
