1 cup white sugar
½ cup butter, softened
4 eggs
1 ½ cups chocolate syrup
1 cup all-purpose flour
2 cups confectioners' sugar
½ cup butter, softened
2 tablespoons creme de menthe liqueur
6 tablespoons butter
1 cup semisweet chocolate chips

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking dish.
  • In a large bowl, cream together 1 cup sugar and 1/2 cup of softened butter until smooth. Beat in eggs one at a time, then stir in the chocolate syrup. Stir in the flour until just blended. Spread the batter evenly into the prepared pan.
  • Bake for 25 to 30 minutes in the preheated oven, or until top springs back when lightly touched. Cool completely in the pan.
  • In a small bowl, beat the confectioners' sugar, 1/2 cup butter or margarine and creme de menthe until smooth. Spread evenly over the cooled brownies, then chill until set.
  • In a small bowl over simmering water, or in the microwave, melt the remaining 6 tablespoons of butter and the chocolate chips, stirring occasionally until smooth. Allow to cool slightly, then spread over the top of the mint layer. Cover, and chill for at least 1 hour before cutting into squares.

23 whole chocolate graham crackers
3 cups cold fat-free milk
2 packages (3.3 to 3.4 ounces each) instant white chocolate or vanilla pudding mix
1/2 teaspoon mint or peppermint extract
3 to 4 drops green food coloring, optional
1 carton (8 ounces) frozen reduced-fat whipped topping, thawed
CHOCOLATE FROSTING:
1 tablespoon butter
2 tablespoons baking cocoa
2 tablespoons plus 1 teaspoon fat-free milk
1 teaspoon vanilla extract
1 cup confectioners' sugar

Steps:

  • Coat a 13-in. x 9-in. dish with cooking spray. Break five whole graham crackers in half; line the bottom of pan with three half crackers and six whole crackers., In a large bowl, whisk milk, pudding mix, extract and food coloring if desired for 2 minutes (mixture will be thick). Fold in whipped topping. , Spread half over graham crackers. Top with a another layer of three half and six whole crackers. Top with remaining pudding mixture and graham crackers (save remaining half cracker for another use). Cover and refrigerate for 2 hours., For frosting, melt butter in a saucepan. Stir in cocoa and milk until blended. Remove from the heat; stir in vanilla and confectioners' sugar until smooth. Spread over dessert. Cover and refrigerate overnight.

1 package fudge brownie mix (13x9-inch pan size)
2 large egg whites
1/4 cup unsweetened applesauce
2 teaspoons vanilla extract
1/2 cup baking cocoa
1-1/2 cups fat-free milk
2 packages (16 ounces each) large marshmallows
1/2 teaspoon mint extract
1 carton (16 ounces) frozen reduced-fat whipped topping, thawed
2/3 cup Oreo cookie crumbs

Steps:

  • In a large bowl, combine the brownie mix, egg whites, applesauce and vanilla. Spread into a 13x9-in. baking dish coated with cooking spray. Bake at 350° for 18-22 minutes or until a toothpick inserted in the center comes out clean. Cool on a wire rack., In a Dutch oven, combine cocoa and milk. Cook and stir over medium heat until cocoa is dissolved. Stir in marshmallows until melted. Remove from the heat; stir in extract. Cool completely., Fold in whipped topping. Spread over brownies. 2 starlight mints, finely crushed
2 cups milk, divided
1-1/2 pkg. (4 oz. each) BAKER'S White Chocolate (6 oz.), broken into small pieces
1 cup thawed COOL WHIP Whipped Topping

Steps:

  • Combine first 3 ingredients in medium saucepan. Stir in 3/4 cup milk; let stand 1 min. Cook on low heat 5 min. or until gelatine and mints are completely dissolved, stirring occasionally. Remove from heat. Add chocolate; stir until melted. Gradually stir in remaining milk.
  • Refrigerate 30 min. or until slightly thickened, stirring occasionally.

1 tsp. mint extract
1 tub (12 oz.) COOL WHIP Whipped Topping, thawed, divided

3-1/4 cups cold milk
1 pkg. (4 oz.) BAKER'S Semi-Sweet Chocolate, broken into pieces

Steps:

  • Combine cookie crumbs, 2 Tbsp. sugar and butter; press onto bottom of 13x9-inch dish. Refrigerate until ready to use.
  • Mix cream cheese, remaining sugar, 2 Tbsp. milk and mint extract in medium bowl until blended. Stir in 1 cup COOL WHIP; spread over crust.
  • Beat pudding mixes and 3-1/4 cups milk with whisk 2 min.; pour over cream cheese layer. Refrigerate 3-1/2 hours.

3-1/2 cups sweetened shredded coconut (about 10 ounces)
1/4 cup packed brown sugar
1/4 cup chopped pecans
4 ounces unsweetened chocolate
1-1/2 cups sugar
1 can (12 ounces) evaporated milk
1 teaspoon vanilla extract
2 quarts mint chocolate chip ice cream, softened

Steps:

  • In a skillet, melt 1/2 cup butter. Add coconut; cook and stir until golden brown. Remove from the heat. Stir in brown sugar and pecans; mix well. Set aside 1 cup. , Press remaining coconut mixture onto the bottom and up the sides of a greased 13-in. x 9-in. dish. , In a saucepan over medium heat, melt the chocolate and remaining butter. MINT CREAM CENTER(recipe follows)

Steps:

  • 1. Heat oven to 350° F. Grease 13x9x2-inch baking pan. 2. Combine flour, sugar, butter, eggs and syrup in large bowl; beat until smooth. Pour batter into prepared pan. 3. Bake 25 to 30 minutes or until top springs back when touched lightly in center. Cool completely in pan on wire rack. Spread MINT CREAM CENTER on cake. Cover; refrigerate. Pour CHOCOLATE GLAZE over chilled dessert. Cover; refrigerate at least 1 hour before serving. Cover; refrigerate leftover dessert. About 12 servings. MINT CREAM CENTER: Combine 2 cups powdered sugar, 1/2 cup (1 stick) softened butter or margarine and 2 tablespoons green creme de menthe (OR 1 tablespoon water plus 1/2 to 3/4 teaspoon mint extract and 3 drops green food color may be substituted for creme de menthe) in medium bowl; beat until smooth.
