Bourbon-Soaked Cherry-Chocolate Mousse Pie image

2 cups glazed or maraschino cherries, drained and sliced in half
1/2 cup bourbon
1 rolled pie crust, store-bought or homemade
16 ounces cream cheese, at room temperature
2 cups powdered sugar
2/3 cup unsweetened Dutch-process cocoa powder
2 cups heavy whipping cream
1 teaspoon vanilla bean paste, vanilla extract or vanilla powder
Pinch of fine salt
1 cup heavy whipping cream
1/2 cup powdered sugar
1/2 teaspoon vanilla bean paste, vanilla extract or vanilla powder

Steps:

  • For the pie: The day before making the pie, put the cherries and bourbon in an airtight container and let set overnight.
  • Preheat the oven to 350 degrees F.
  • Line an 8-inch pie dish with the pie crust. Trim the excess off, crimp the edges and poke the bottom and sides with a fork. Place a piece of parchment or wax paper on the crust in the pie dish and fill three-quarters full with dried beans.
  • Bake for 15 to 20 minutes. Remove the beans and paper, return to the oven and finish baking until medium brown, another 15 to 20 minutes. Let cool completely.
  • In a medium mixing bowl, add the cream cheese, sugar and cocoa powder and whip until light and fluffy. Add the cream, vanilla and salt and whip on low to combine. Turn to high and whip until light and fluffy and stiff peaks form.
  • Drain the bourbon off the cherries (save the bourbon and make a nice cocktail for later). Reserve 5 to 6 cherries for decorating the top of the pie.
  • Spoon half of the chocolate mousse into the cooled pie shell and spread evenly. Sprinkle half of the remaining cherries over the filling. Spoon the rest of the mousse over the cherries and smooth out. Top with the remaining cherries.
  • For the topping: In the same mixing bowl, add the cream, sugar and vanilla and whip until stiff peaks form. Pipe or spoon on the topping and decorate with the saved cherries. Put in the fridge for at least an hour and up to overnight.

60 maraschino cherries with stems
3 tablespoons butter, softened
3 tablespoons corn syrup
2 cups sifted confectioners' sugar
1 pound chocolate confectioners' coating

Steps:

  • Drain cherries and set on paper towels to dry.
  • In a medium bowl, combine butter and corn syrup until smooth. Stir in confectioners' sugar and knead to form a dough. Chill to stiffen if necessary. Wrap each cherry in about 1 teaspoon of dough. Chill until firm.
  • Melt confectioners' coating in a heavy saucepan over low heat. Dip each cherry in by its stem, and place on waxed paper lined sheets. Chill until completely set. Store in an airtight container in a cool place. Best after 1 or 2 weeks.

4 dozen maraschino cherries, drained
3/4 cup Bourbon
3 tablespoons unsalted butter
3 tablespoons white corn syrup
1/4 teaspoon salt
2 cups confectioners' sugar
1 1/2 lbs dipping chocolate

Steps:

  • Pour bourbon over drained cherries. Cover, refrigerate and allow to set for 2 days.
  • Combine butter, corn syrup and salt. Blend until smooth. Add confectioners' sugar and mix well. Knead until smooth and shiny. Chill for 30 minutes wrapped in waxed paper.
  • While chilling, drain cherries well on paper towels. Pat dry. Reserve bourbon marinade for a cake or other dish (will keep if it is covered and refrigerated).
  • Shape a marble-sized piece of fondant around each cherry. Place on waxed paper and chill at least 2 hours until firm.
  • Melt chocolate in top of a double boiler over simmering water. Dip cherries in chocolate and set back on waxed papers. Allow trays to cool in refrigerator. Store in airtight containers.
  • Candy will ripen well in about 2 days.

CHERRIES:
3 (10-ounce) jars maraschino cherries with stems, drained
Jim Beam Borbon
FONDANT:
1 ⁄3 cup butter, softened
2 1⁄4 cups sifted powdered sugar
3 teaspoons heavy whipping cream
DIPPING CHOCOLATE:
4 cups of semisweet chocolate chips
3 tablespoons shortening

Steps:

  • If you are using the bourbon, pour the liquid out of the cherries and replace it with bourbon. Let marinate for at least 48 hours. Beat butter at medium speed with an electric mixer until creamy; gradually add powdered sugar, and whipping cream beating well until a "dough" ball forms. Set aside. Drain cherries and reserve the bourbon for sipping later. If there are any stemless cherries in the jar add them to the "cherry infused bourbon" for added flavor. The fondant will be sticky, place a couple of Tablespoons of powdered sugar on a plate to frequently dip hands into while handling the fondant. Shape the fondant around the cherries, by pinching some fondant (about the size of a cherry roll into a ball with sugar powder coated hands. Press the ball into a flat round disc and using your thumbs continue to press into a thin circle. Wrap the circle of fondant around a cherry covering completely. Gently roll the covered cherry between your hands to smooth. Place fondant covered cherry on wax paper. Repeat until all cherries are covered.  Dipping: Microwave chocolate chips and shortening in a small microwavable bowl on HIGH for 90 seconds or until melted, stirring twice. Coat cherries by holding stems and dipping them into the chocolate mixture, allowing excess to drip; place on wax paper. Let stand until firm. If chocolate becomes hard to work with, return chocolate to microwave for 30 seconds. Store loosely covered in a cool place 1 week or until centers soften. Cherries can be eaten immediately, but they seem to get better after "resting" a while.

Steps:

  • Bring bourbon and sugar to a gentle simmer in a small saucepan over low heat. (Watch carefully, since bourbon may ignite.) Simmer, stirring, until sugar dissolves.
  • Pour bourbon syrup over cherries in a 12-ounce glass jar. Let stand overnight to macerate.

1/3 cup maraschino cherry juice

1/2 cup miniature semisweet chocolate chips
TOPPING:
3/4 cup vanilla frosting
48 maraschino cherries with stems, drained and patted dry
1 cup miniature semisweet chocolate chips
1 teaspoon shortening

Steps:

  • Preheat oven to 375°. In a large bowl, beat butter and sugar until blended. Gradually beat in cherry juice and vanilla. In another bowl, whisk flour and cocoa; gradually beat into creamed mixture. Stir in coconut, cherries and chocolate chips., Shape dough into 48 balls (about 1-1/4 in.); place 2 in. apart on ungreased baking sheets. Press a deep indentation in center of each with the end of a wooden spoon handle. Bake 9-11 minutes or until set and bottoms are lightly browned. Remove from pans to wire racks to cool completely., Fill each cookie with 3/4 teaspoon frosting. Top with cherries. In a microwave, melt chocolate chips and shortening; stir until smooth. Spoon over cherries. Let stand until set.

1 (10 ounce) jar maraschino cherries
½ cup rum (such as Bacardi 151®)
3 ¾ cups confectioners' sugar
½ cup butter, softened
¼ cup milk
1 teaspoon maple syrup
1 (6 ounce) bag chocolate chips
2 (1 ounce) squares semisweet chocolate
2 tablespoons butter, softened
2-inch square food-grade paraffin wax

Steps:

  • Pour cherries, with their juice, into a glass bowl. Cover cherries with rum. Cover with plastic wrap and store in the refrigerate for 1 week.
  • Drain and dry rum-infused cherries.
  • Line a baking sheet with waxed paper.
  • Mix confectioners' sugar, 1/2 cup butter, milk, and maple syrup together in a bowl until smooth and pliable. Wrap each cherry with sugar mixture. Arrange on baking sheet. Cover loosely with plastic wrap and chill until firm, about 30 minutes.
  • Combine chocolate chips, semisweet chocolate, 2 tablespoons butter, and paraffin wax in a saucepan. Heat over medium-low heat, stirring, until melted, about 5 minutes.
  • Dip each wrapped cherry into the melted chocolate mixture using a toothpick. Return to baking sheet. Repeat with remaining cherries. Cover loosely with plastic wrap and chill until set, about 1 hour.
